Steps:
- Heat canola or corn oil in a skillet over medium-high heat. When oil starts to shimmer, fry the wonton skins in batches of 5-7 strips for 30 seconds each side or until lightly browned, working quickly so they don't burn. Remove from the oil and drain on paper towels until cooled.
- In a large bowl, combine lettuce, chicken breast, green onion, almonds, and pasta.
- Add the dressing ingredients to a jar with a tight fitting lid and shake until until well mixed or whisk in a small bowl until the sugar dissolves.
- Dress the lettuce mixture with 2-3 tablespoons of sesame dressing and top with more sesame seeds, wonton strips, and serve.

Inspired by the desire to make use of some leftover wasabi paste, this is the kind of chicken salad that's sure to become a go-to recipe. The best advice here is to make a large batch, and save it for multiple meals. Equally delicious cold or at room temperature, this salad is especially good in a sandwich, tucked into soft potato rolls. Embrace the wasabi and think of it as a hot mustard; you can even dial it back, starting with less, then adding more to taste. Lime juice lends a mellow acidity that rounds out the dressing.

- In a medium pot, cover chicken breasts with about 2 inches of water, and season with 2 tablespoons kosher salt. Bring to a boil over high heat, then simmer on low until the chicken is cooked through, about 20 minutes. Once the chicken is cooked, remove it from the pot and let cool.
- While the chicken cools, make the dressing: In a medium bowl, whisk together lime juice, tahini, wasabi paste, garlic, sugar and 1/4 cup water until smooth. Season to taste with salt.
- Cut celery into 2-inch segments, then cut segments lengthwise into matchsticks and place in a large bowl.
- Using two forks or hands, shred the chicken into bite-size pieces and transfer to the bowl with the celery.
- Pour dressing over the chicken and celery and toss to coat. Top with celery leaves and sesame seeds, and serve with lime wedges.

- Combine syrup, soy and sweet hot mustard in a bowl. Season chicken tenders with salt and pepper on both sides. Add chicken tenders to 1/2 of the marinade and coat. Set aside. Reserve the remaining 1/2 for dressing.
- Preheat a large nonstick skillet over medium high heat. Spread sesame seeds on a sheet of waxed paper or into a shallow dish. Waxed paper will speed your clean up. Dip the tenders into the sesame seeds. Coat the pan with a thin layer of oil. Cook chicken in small batches 3 minutes on each side and remove to plate.
- Whisk ginger, vinegar and the reserved marinade together then stream in the oil while you are continuing to whisk dressing.
- Combine all of the salad ingredients in a bowl. Toss with dressing and serve, topping with sesame chicken tenders. Toss some crunch into your salad with fried noodles, if you have any leftover packets from ordering Chinese take out, for the last time!

- Toast sesame seeds on shallow baking tray at 350F for 5 minutes. Alternatively, you may buy toasted sesame seeds from supermarkets.
- Place water and chicken in pan. Make sure chicken is well covered with water.
- Add spice powder and soy sauce before bringing slowly to boil. Simmer over low fire, covered until chicken is just cooked.
- When chicken has cooled, cut into slices.
- Chop celery diagonally and boil in chicken broth for a minute. Towel dry celery to remove excess moisture from celery.

- Sesame Chicken: Dice chicken to small bite-sizes (small cube shape) and season with salt, pepper, ginger, arrowroot powder, and olive oil. Mix well and set aside.
- Sesame Chicken Sauce: Pulse dates, garlic clove, and ginger in a small food processor a few times until finely chopped. Add the rest of ingredients under “sauce”. Toss/blend a few more times until the sauce is smooth and no fruit chunks.
- Pan-fry: Pre-heat a large stainless steel skillet (without oil) over low heat until it’s well heated (about 4-5 mins), add avocado oil and pan fry the chicken in separate batches (not to overcrowd the skillet). Don’t touch or move the chicken pieces until you see the bottom layer is in golden brown then cook the flip side until they are about 90-95% cooked through. Set aside with chicken juice in the skillet.
- Combine: Add a bit more cooking oil to the skillet, saute ‘aromatics’ with a sprinkle of salt until fragrant. Add 3-4 heaping tbsps of sesame chicken sauce*, quickly stir-fry the sauce with aromatics for 8-10 seconds then add the chicken back to the skillet. Coat the sauce over chicken pieces and stri-fry for a few additional minutes until they are cooked through. Garnish with sesame seeds and chopped scallions. Serve hot and immediately with steamed broccoli florets or any simple mixed green salad of your choice.
