6 cups fettuccine noodles
0.25 cups parsley
0.5 cups red onion
0.5 cups green pepper
1 tablespoons garlic
1 pounds ground beef
0.5 cups flour
1 cans evaporated milk
3 cups milk
1 units salt and pepper
1 dashes hot sauce

Steps:

  • Boil fettuccine noodles and drain. Brown parsley, red onion, green pepper and garlic in a pan. When translucent, add beef or chicken and cook until meat is cooked thoroughly.
  • Remove from heat and stir in flour until well coated. Return to heat; add evaporated milk, milk, salt and pepper, and hot sauce. Bring to a boil stirring often, lower heat and cook for 5 minutes to thicken. Serve over pasta.

5 -6 packets ketchup
2 -3 packets hot sauce
1 packet soy sauce
1 packet sugar
1 packet mustard
1 packet salt
1 packet pepper

  • Mix all ingredients together.
  • let stand for approximately 15 minutes or longer.

I don't normally purchase Heavy Cream due to cost and limited usage. This subs very well and is quick and fail safe. This is just one of my many adaptations to "White Sauce" or "White Gravy".

1 1/2 cup(s) milk
2 tablespoon(s) heaping corn starch mixed in 1/2 cup cold water
4 to 6 ounce(s) sour cream
4 ounce(s) cream cheese (optional)
1/4 stick(s) butter or more
3 clove(s) garlic crushed and minced or more
2/3 cup(s) parmesan cheese dry or grated
1/3 teaspoon(s) salt
pinch(es) pepper -- white preferred it hides

Steps:

  • Warm 1 1/2 cup Milk in skillet just to low simmer. Mix Corn Starch in 1/2 cup Cold Water to make slurry, add to pan and stir. increase heat and stir until thickened, Corn Starch needs to come to rolling simmer or low boil to thicken. Then reduce heat to low simmer.
  • Add the Sour Cream and Cream Cheese if using. Add Butter. and remaining ingredients except salt and pepper. Stir to incorporate. Note: 2 tablespoons Olive Oil could be added in lieu of some of the butter.
  • Simmer for ten or fifteen minutes. Stir occasionally then taste. Parmesan is salty so should require very little additional salt. After sampling add salt and pepper to your taste.
  • This freezes well. If re-heating a little Milk may be used for the consistency of your liking.
  • The Topper -- I like cooked Shrimp or Scallops heaped on my Alfredo. Sauteed Chicken works also.

This tastes rich and looks like an expensive gourmet entree, but is actually ready in about 30 minutes and is super easy on the wallet. You probably have all the ingredients on hand.

6 chicken thighs, boneless and skinless (or 4 boneless, skinless breasts)
1 teaspoon seasoning salt
1/2 teaspoon garlic powder
1 -2 tablespoon olive oil
1/2-2/3 cup water (for sauteing chicken)
6 ounces cream cheese, cubed (if you like a thicker, richer sauce use 8 ounces cream cheese)
3/4 cup milk (adjust depending on how thin or thick a sauce you like)
1/2 teaspoon seasoning salt
1/2 teaspoon garlic powder
1/2 teaspoon ground pepper (red, white or black pepper)
1/2 teaspoon dried parsley flakes (to garnish) or 2 dashes chives (to garnish)

Steps:

  • Sprinkle chicken with seasoning salt and garlic powder, and set aside.
  • In a microwaveable bowl, mix cream cheese, milk, garlic powder and pepper.
  • Microwave for 30 seconds at a time, checking and stirring until cream cheese is melted.
  • Heat olive oil in a saute pan.
  • Add chicken to pan and saute at medium heat adding small amounts of water to pan, as needed, so that chicken doesn't get too dry or stick to pan. The chicken will release juices that blend with the water.
  • When chicken is cooked through, but there is still some of this "juicy water" in the pan, add the sauce to the pan and cook until heated through.
  • Remove chicken with a slotted spoon and arrange on a bed of white rice.
  • Spoon or pour sauce over the chicken and then sprinkle with parsley or chives.
  • NOTE: I usually serve this dish with a side of steamed broccoli drizzled in heated olive oil (I season the heated olive oil with lime juice and garlic powder). YUMMY!
