GRILLED POLYNESIAN SHRIMP

I love shrimp of every description! In this recipe, I've marinated jumbo shrimp in a Polynesian sauce that is just perfect with pineapple juice, soy sauce, ginger, garlic and brown sugar for several hours, then skewered it with green pepper and fresh pineapple chunks. The skewers only cook for 2 minutes on each side and the shrimp are succulent and full of incredible flavor! The green pepper and pineapple and charred and smokey! Very quick and easy, just make time to marinate. Delicious served over brown rice!

Number Of Ingredients 10

1½ lbs of large shrimp, deveined and shelled
½ cup of soy sauce
½ cup of pineapple juice
½ cup of brown sugar
3 cloves of garlic, minced
2 tsp of freshly grated ginger
1 Tbs of white vinegar or rice wine vinegar
dash of cayenne pepper or to taste
2 green or red peppers cut into chunks
1 fresh pineapple, cored, skinned and cut into chunks

Steps:

  • Start by marinating the shrimp, add the soy sauce, pineapple juice, brown sugar, garlic, ginger, vinegar, and cayenne pepper to a small saucepan over medium-high heat and cook until it comes to a boil, turn the heat off and let cool. Place the shrimp in a large shallow bowl and pour in the cooled marinade, cover and refrigerate for 2-5 hours. Remove the shrimp and return the marinade to a saucepan and boil again, this time for a few minutes. This is for basting and serving
  • Prepare your grill and skewer the shrimp, green pepper and pineapple. Stick the shrimp twice, through the head and the tail.
  • Grill for 2 minutes on each side, basting with the reserved marinade.
  • All done! Delicious over brown rice, drizzle on some of the reserved marinade, enjoy!

1 medium green pepper (cut into 1 in strips)
2 tablespoons butter
1 can beef broth
1/4 cup water
2 teaspoons lemons
1 1/2 cups cooked shrimp
1/2 cup pineapple juice
2 tablespoons cornstarch
1 teaspoon soy sauce
1/2 cup pineapple tidbits

Steps:

  • In skillet, cook green pepper in butter until tender.
  • Remove from heat.
  • Add the rest of the ingredients.
  • Cook until thickened; stirring constantly.
  • Serve over rice.

20 ounces pineapple chunks (reserve juice)
2 teaspoons cornstarch
1/2-1 teaspoon curry powder
1/8 teaspoon salt
1/8 teaspoon pepper
1/3 cup mayonnaise
1/3 cup sour cream
1 lb medium shrimp (cooked, peeled, and deveined)
2 cups pasta shells, cooked
8 ounces sliced water chestnuts, drained
1/4 cup sweet red pepper, chopped

Steps:

  • Drain the pineapple, reserving 3/4 cup juice and set pineapple aside.
  • In a small saucepan, combine the cornstarch, curry powder, salt, pepper, and reserved pineapple juice until smooth.
  • Bring to a boil and cook and stir 1 minute or until thickened.
  • Remove from the heat and cool to room temperature.
  • Stir in mayonnaise and sour cream.
  • In a large bowl, combine the shrimp, pasta, water chestnuts, and reserved pineapple.
  • Add dressing and toss to coat.
  • Cover and refrigerate for at least 2 hours before serving.

I've received a bunch of requests to make this, and after tasting it, I understand why. If you're a garlic lover, you're going to want to pull out your bucket list and add this recipe to it. I absolutely love this, and I think you will too. Serve over white rice with fresh lemon wedges.

1 head garlic
4 tablespoons unsalted butter
1 pound frozen large deveined, shell-on shrimp, thawed
2 tablespoons rice flour
1 tablespoon paprika
1 teaspoon cayenne pepper
1 ½ teaspoons kosher salt
2 tablespoons olive oil

Steps:

  • Separate garlic cloves into a bowl and place another bowl on top. Shake until all of the peels are knocked off the cloves, about 30 seconds, being careful not to shake too hard. Chop peeled cloves into relatively small pieces.
  • Melt butter in a saute pan over medium heat and add chopped garlic. Cook, stirring occasionally, until golden brown, 2 to 3 minutes. Transfer the garlic and butter into a small bowl and reserve.
  • Pat thawed shrimp dry with paper towels and add to a large mixing bowl.
  • Combine rice flour, paprika, cayenne, and salt in a small bowl. Sprinkle over the shrimp and use a large spoon or spatula to toss until completely coated.
  • Heat olive oil in a nonstick skillet over medium-high heat. Add some shrimp in a single layer and cook until browned and just barely cooked through, 2 to 3 minutes per side. Add some garlic butter and cook for another 30 seconds. Repeat with remaining shrimp and garlic butter. Serve immediately.

This recipe is great for hibachi on the beach or in your backyard. You can also broil it in your oven if you're not in Hawaii or near a beach. It's a easy way to prepare a shrimp dish that's 'ono' (delicious) and moist! You can serve this either as an appetizer (pupu) or entree. I prepare it either with or without the shells on - depending on how fast I want people to eat 'um up! Aloha from Hawaii!!! Enjoy!

2 tablespoons white sugar
2 tablespoons lemon pepper seasoning
1 tablespoon minced fresh parsley
2 tablespoons finely minced garlic
1 tablespoon oyster sauce
1 cup mayonnaise
2 pounds extra large shrimp (16-20), peeled and deveined, tail left on
12 (10 inch) wooden skewers

Steps:

  • In a large bowl, or large zip-top bag, mix together the sugar, lemon pepper, parsley, garlic, oyster sauce, and mayonnaise. Add the shrimp, and toss well to coat. Marinate in the refrigerator for 1 hour to overnight.
  • Preheat a grill for medium-high heat. Soak skewers in water.
  • Thread shrimp onto skewers, and grill until they are pink and firm, 2 to 3 minutes per side.

1/2 pound shrimp, peeled and deveined
1 tablespoon finely chopped peeled ginger
1 tablespoon Asian sesame oil
1 tablespoon medium-dry Sherry
1 tablespoon soy sauce
1 large egg white
2 tablespoons finely chopped cilantro
2 scallions, finely chopped
6 slices firm white sandwich bread, cut into 1 1/2-inch rounds (24 total)
About 6 cups vegetable oil for frying
For bacon-wrapped pineapple:
12 slices bacon (about 3/4 pound), halved crosswise
1 (1 1/2-pounds) pineapple, peeled, cored, and cut into 24 (1-inch) chunks
1 bunch scallions, greens cut into 5-inch-long pieces and halved lengthwise
For beef teriyaki:
3 tablespoons soy sauce
2 tablespoons seasoned rice vinegar
2 garlic cloves, minced
2 teaspoons grated peeled ginger
1 medium zucchini
1/2 pound flatiron steak, cut across grain into 1/8-inch-thick slices
24 wooden picks; 24 (6-inch) bamboo skewers, soaked in water for 30 minutes; Equipment: an adjustable-blade slicer; a deep-fat thermometer
Accompaniment: hoisin and Sriracha sauce

Steps:

  • Assemble shrimp toasts:
  • Pulse shrimp, ginger, oil, Sherry, soy sauce, and egg white in a food processor to a coarse purée. Stir together with cilantro, scallions, and 1/4 teaspoon salt. Spread on bread (a scant tablespoon each).
  • Make bacon-wrapped pineapple:
  • Preheat oven to 450°F with rack in middle.
  • Wrap 1 piece of bacon around each pineapple chunk, then wrap scallion around outside, securing with a wooden pick. Arrange in a parchment-paper-lined 4-sided sheet pan. Bake, turning once, until bacon is crisp, 15 to 20 minutes.
  • Meanwhile make beef teriyaki:
  • Stir together soy sauce, vinegar, garlic, and ginger.
  • Thinly slice zucchini lengthwise with slicer. Put each slice of steak on a slice of zucchini, then thread lengthwise onto a skewer. Brush with soy mixture. Arrange skewers, meat side up, on an oiled broiler pan.
  • When pineapple has finished cooking, preheat broiler. Broil skewers 5 to 7 inches from heat until browned, 2 to 3 minutes.
  • Meanwhile, fry shrimp toasts:
  • Heat 2 inches vegetable oil to 360° in a 4-quart saucepan over medium-high heat.
  • Fry 8 bread rounds, shrimp sides down, until browned, about 1 minute. Turn and fry until golden, about 30 seconds. Transfer to paper towels to drain. Fry remaining rounds.
  • To serve:
  • Arrange skewers, bacon-wrapped pineapple, and shrimp toasts on a platter.
