MEXICAN BROWN RICE SALAD

2 ears corn, husked
Olive oil, for brushing
1 cup cooked brown rice
2 (15-ounce) cans pinto beans, drained and rinsed
1 red bell pepper, seeded and finely chopped
1 bunch green onions, sliced
1 small jalapeno, seeds and rib removed, diced
3 tablespoons olive oil
Juice of 1 lime
1 teaspoon cumin
1 clove garlic, finely chopped
3 tablespoons chopped fresh cilantro
Kosher salt and freshly ground black pepper
1 cup crumbled queso fresco or feta cheese

Steps:

  • Preheat the grill to medium-high heat.
  • Brush corn with olive oil, and season with salt and pepper. Grill for 5 to 6 minutes, rotating on all sides, until the corn has some nice charred spots. Let cool and remove corn kernels from the cob.
  • Add corn, brown rice, beans, red bell pepper, jalapeno, and green onions to a large bowl.
  • In a smaller bowl, whisk together the olive oil, lime juice, cumin, garlic, cilantro, and salt and pepper. Fold dressing into the veggies and top with the crumbled cheese and toss.

1 1/2 cups cooked rice
1 (4 1/2 ounce) can shrimp, well drained
1 1/2 cups chopped celery
1/4 cup fresh green onion, chopped
150 -250 g chow mein noodles
1/2 cup salad oil
2 teaspoons curry powder
1 tablespoon soy sauce
1 teaspoon celery seed
1 teaspoon salt
3 tablespoons vinegar
1/2 teaspoon sugar

Steps:

  • In a large bowl, mix peas, rice, shrimp, celery and green onion.
  • Mix all the dressing ingredients together and mix well.
  • When ready to serve pour over salad and add chow mein noodles.
  • toss lightly.
  • Both can be prepared day before.

  • Put rice and veggies in a large bowl and place in fridge.

Steps:

  • To make dressing, whisk together oil, vinegar, salt, pepper, minced garlic, basil, oregano and 1/4 cup of the chopped parsley. Set aside.
  • Chop bell peppers and onion. Mince dill weed; cook and quarter artichoke hearts.
  • In a large bowl combine rice, shrimp, bell peppers, onion, artichoke hearts, 1/2 cup minced parsley, dill, cranberries, pineapple and peas.
  • Stir dressing into salad and chill for several hours to marinate.

1/2 teaspoon turmeric powder
3/4 cup pineapple chunk
1/2 cup mango, chunks

4 tablespoons lemon juice
3 tablespoons honey

2 cups uncooked elbow macaroni
1 tablespoon canola oil
1 can (12 ounces) regular or teriyaki SPAM, cubed
1 cup mayonnaise
2 teaspoons sugar
3/4 teaspoon ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (8 ounces) unsweetened pineapple tidbits, drained
1 medium sweet red pepper, chopped
1 can (8 ounces) sliced water chestnuts, drained and chopped
4 green onions, chopped

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. Meanwhile, in a large skillet, heat oil over medium-high heat. Cook Spam until golden brown, about 8 minutes. Cool completely., For dressing, in a small bowl, combine mayonnaise, sugar, mustard, salt and pepper. I make this in a rice cooker and it's super simple! When I have frozen diced onion, red, and green bell pepper mix on hand, I use 2 T of that in place of the fresh onion and peppers, and it's every bit as good. I really prefer the mix of red and green peppers in this dish to just plain ol' green sweet peppers. I frequently use the reduced sodium version of both the soy sauce and the chicken broth and it turns out just fine.
