This version of delicious Korean beef short ribs dish for your Instant Pot® or other multi-cooker pressure cooker will have the ribs falling off the bone! Soaking the ribs first is the traditional method. I recommend soaking for at least an hour, though traditionally you would soak them for longer than that, changing the water after the first hour. If you don't have an Asian pear, an apple will do as a substitute. Serve over white rice.

3 pounds beef short ribs
1 Asian pear - peeled, cored, and coarsely chopped
1 small onion, chopped
4 cloves garlic, chopped
½ tablespoon peeled and coarsely chopped fresh ginger
1 cup low-sodium soy sauce, divided
¼ cup rice wine
¼ cup water
¼ cup brown sugar
2 tablespoons sesame oil, divided

Steps:

  • Soak ribs in a large bowl of water for 1 hour.
  • Meanwhile, combine Asian pear, onion, garlic, and ginger in a blender or food processor; puree until smooth. Transfer mixture to a mixing bowl. Add 3/4 cup soy sauce, rice wine, water, brown sugar, 1 tablespoon sesame oil, and pepper and mix to create the sauce.
  • Drain ribs and dry them well. Trim off excess fat. Place ribs in a multi-functional pressure cooker (such as Instant Pot®) and add carrots and radishes. Pour Asian pear sauce on top. Close and lock the lid. Select Meat function according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Transfer meat and vegetables to a plate and set aside.
  • Select the Saute function on your Instant Pot®. Stir in remaining soy sauce, remaining sesame oil, and white sugar. Cook, stirring occasionally, until sugar has melted and sauce has thickened, about 10 minutes. Return ribs and vegetables to the pot to get nice and saucy.
  • Garnish ribs and vegetables with green onions and sesame seeds.

3 tablespoons gochujang (Korean red chile paste)
2 tablespoons peeled and grated ginger
2 tablespoons dark brown sugar

3 tablespoons toasted sesame oil
2 pounds 1/4- to 1/2-inch-thick crosscut bone-in beef short ribs (flanken style)
2 scallions, green part only, sliced thinly on the diagonal, plus additional for serving
1 hothouse cucumber, halved lengthwise and thinly sliced
2 tablespoons seasoned rice vinegar
1 to 2 teaspoons gochugaru (Korean red chile flakes) or 1 teaspoon crushed red pepper flakes
1 teaspoon toasted sesame seeds, plus additional for serving
1 teaspoon granulated sugar

Steps:

  • Whisk together the soy sauce, gochujang, ginger, brown sugar, pear, garlic, 2 tablespoons sesame oil and 1/4 cup water in a 6-quart Instant Pot®. Place the short ribs on top and follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 25 minutes (see Cook's Note). After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Be careful of any remaining steam and unlock and remove the lid. Using a slotted spoon, transfer the meat to a large bowl, then cover and set aside.
  • Set the pot to saute on high for 30 minutes and let reduce until the liquid is thick and glazy, about 15 minutes (about 1/2 cup of sauce will remain). Set the pot to off and transfer the reduced sauce to the meat, then toss to coat.
  • Meanwhile, toss the scallions, cucumber, rice vinegar, gochugaru, sesame seeds, granulated sugar, 1/4 teaspoon salt and remaining tablespoon sesame oil in a medium bowl and cover and chill until ready to serve.
  • For charred short ribs (optional): Position an oven rack as high as it can go in the oven and preheat the broiler to high. Transfer the glazed ribs to a rack set inside a rimmed baking sheet and broil until lightly charred on both sides, about 1 minute per side.
  • Serve the ribs over steamed rice topped with the pickled cucumbers, additional scallions and sesame seeds.

Steps:

  • Preparation: Sprinkle brown sugar over beef and mix well to evenly coat. Let sit at room temperature for 10 minutes while preparing marinade. In a bowl, whisk together remaining ingredients. Transfer beef into a large sealable freezer bag (you may need 2). Add marinade, press out excess air from bags, and seal. Turn bag over several times to ensure beef is evenly coated. Refrigerate for at least 4 hours but preferably overnight.
  • Heat gas or charcoal grill to medium-hot. Drain excess marinade off beef. Grill short ribs, turning once, to desired doneness, about 3 to 4 minutes per side. Garnish with thinly sliced green onions, if desired. Serve whole pieces as a main course or cut into smaller pieces, using kitchen shears, for a starter or party nibble.

1/2 cup packed light brown sugar
2 tablespoons sesame oil
2 tablespoons rice vinegar

  • Transfer ribs to a platter. Skim and discard excess fat from liquid. Combine cornstarch and 3 tablespoons water; blend with liquid in a saucepan. Bring to a boil over high heat and cook for 2 minutes, stirring, until thickened. Stir in carrots. Top ribs with sauce, scallions and sesame seeds.

2 pounds Short Ribs (or Korean style flanken ribs)
1 tablespoon Gochujang
3 tablespoons Soy Sauce
1 tablespoon agave nectar
3-4 cloves Garlic (crushed)
2 teaspoons Minced Ginger (crushed)
1 tablespoon Sesame Oil
1 tablespoon mirin
1 packet Splenda
Kosher Salt (to taste)
Ground Black Pepper (to taste)
1 tablespoon Cornstarch
2 tablespoons Water

Steps:

  • Mix or blend together all the sauce ingredients except the cornstarch and water.
  • Put the ribs into a gallon ziplock bag and pour the sauce on top.
  • Marinate the ribs for at least an hour, no more than 24 hours, although I've cooked these without marinating and they worked out as well. You do get a deeper flavor with marinating.
  • Pou in half a cup of water into your pressure cooker. Pour the marinade into the Instant Pot and use it as the liquid to help with the cooking.
  • Arrange the ribs in a circle along the sides of the pot.
  • Cook on High Pressure for 12 minutes, letting pressure release on it's own.
  • Once done, you can either broil them for a bit or just eat as is.
  • If you don't have a Instant Pot, you can just cook them on a grill or on the stovetop, or broil them in your oven at about 375F until done, but then you will have made Galbi, not Galbijjin. Equally delicious!
  • Thicken with the cornstarch slurry (Corn starch and 2 tablespoon water mixed) with the Instant Pot on Sauté. Poor sauce over ribs and eat!

8 ounces Korean radish, mu (무) (cut into large chunks )
1 medium carrot (cut into large chunks)
3 to 4 dried shiitake mushrooms (briefly soaked and quartered)
1/2 medium Korean/Asian pear
1/2 medium onion
8 plump garlic cloves
1 inch long ginger piece
1/2 cup soy sauce
4 tablespoons rice wine ((or mirin or dry white wine))
3 to 4 tablespoons gochugaru (고추가루)
2 tablespoons gochujang (고추장)
2 tablespoons sugar
2 tablespoons honey (or sugar) (Use 1 TB more if you like it sweeter)
pepper to taste
1 tablespoon sesame oil
2 scallions (roughly chopped (and some finely sliced for optional garnish))
sesame seeds - optional

Steps:

  • Trim off any thick layer of surface fat. Place the ribs in a large bowl with enough water to cover all the ribs. Add a couple of tablespoons of sugar and stir until dissolved. Let the ribs soak for about 30 minutes. Drain and rinse the ribs. Drain well while preparing the other ingredients.
  • In a small blender, blend the pear, onion, garlic, and ginger well. You can separately grate them if you want. Transfer to a bowl. Mix it with the remaining braising liquid ingredients.
  • Place the short ribs in the pot, and add the vegetables.
  • Pour the braising liquid over. Toss everything well to coat the ribs evenly. Close the lid tightly. Press the "Meat" function, and using the "+" button, set the time to 35 minutes (or 40 minutes for fall off the bone tender meat). Make sure the pressure switch is turned to "sealing". When finished, the Instant Pot will automatically turn to the "Keep Warm" mode. Leave the pressure cooker alone for 10 to 15 minutes before releasing the remaining pressure and opening the lid. You can leave it longer if you want.
  • Stir in the scallion and the sesame oil. Remove the meat and vegetables from the pressure cooker. Spoon off the fat. Pour the sauce over the ribs to serve. You can also cool it in the fridge or freezer until the fat solidifies to spoon off, and then reheat the sauce. Garnish with the optional scallions and sesame seeds.

GALBI (KOREAN-STYLE SHORT RIBS)

This dish, known as galbi, is a fine thing to eat in a restaurant, but it also makes for a wonderful and easy meal at home. If you buy English-style short ribs, which are cut along the bone, you must butterfly the meat into a thin, long strip. If the ribs you buy are flanken-style, in which a band saw is used to cut across the ribs, creating half-inch slices of beef dotted with three little bones, rinse them under cold water before seasoning to remove any bone fragments. It's a good idea to let the ribs marinate for at least two hours to allow the seasoning to penetrate; marinating overnight is even better.

  • Put onion, garlic, pear and ginger in the work bowl of a food processor. Grind ingredients to a smooth purée, then add to soy sauce mixture. Add sesame seeds. Thin with ¼ cup water. Pour marinade over short ribs and mix well. Cover and refrigerate for at least 2 hours, or overnight. Bring to room temperature, drain and discard marinade.
  • Cook short ribs on a hot grill or under the broiler for 2 to 3 minutes per side, until nicely browned but juicy. Pile grilled meat on a platter and serve immediately with lettuce leaves on the side. Accompany with sliced hot peppers, ssamjang and steamed rice, if desired.

  • Pat the short ribs dry with a paper towel and sprinkle with salt and pepper. Use your hands to rub the salt and pepper all over the ribs.
  • Transfer the seasoned ribs to a 6-quart (or larger) pressure cooker, making sure all the ribs fit in the pot.

  • Cover the short ribs with cold water and allow them to soak, 20 minutes to a few hours. Bring a pot of water, enough to cover the short ribs, to a boil. Once the water begins to boil, rinse the soaked meat off and add it into the pot. Bring the pot back to a boil and then boil the meat for 5 minutes.
  • Strain the short ribs off (reserving some of the resulting stock for later just in case) and rinse them to remove any residue and to cool them down. If any piece has a large amount of excess fat on it, you can trim that off now. Add them to the Instant Pot.
  • Combine all the sauce ingredients in a blender and blend on high until the sauce is as smooth as possible. Pour the sauce over the short ribs and seal the Instant Pot.   • Optional - Broil LA Galbi: You can use an oven or Instant Pot Duo Crisp’s "Air Fry" function for this optional step. Place the air fryer basket in a clean inner pot, layer the short ribs on top, then sprinkle with sesame seeds. You can also layer enoki mushrooms in the basket. Place the air fryer lid on Instant Pot. Press "Air Fry" button, set the temperature to 400°F and cooking time to 8 minutes. *Pro Tip: You can open the lid to check the progress. (Top Rack: takes ~4 - 5 mins + preheat time; Middle Rack: takes ~6 - 7 mins + preheat time). *Oven Option: Layer the LA Galbi on a baking sheet, then put them under the broil function for a few minutes.

  • Brush the grill or cast iron grill pan with the sesame oil and preheat over high heat. Lower the flame to medium-high once the grill or grill pan is hot. Cook the short ribs 3 to 4 minutes on each side, until caramelized and cooked to desired internal temperature.
  • Remove the short ribs from the grill or grill pan, and add the sliced onion and the scallions. Cook the vegetables until charred and cooked through. If using a pan, add a splash of water to deglaze. Serve the short ribs with the vegetables and deglazed pan drippings.

  • MAKE MARINADE: Use a food processor, immersion blender or nothing. Place all ingredients in a food processor (or bowl). Process (or blend with immersion blender) until smooth. If you don't have a processor or blender, grate the pear and onion, then mix with the remaining ingredients.
  • MARINATE SHORT RIBS: Pour marinade into large zipper lock bag along with boneless beef short ribs. Remove air and seal bag. Squish meat around to ensure meat is well covered with marinade. Place in fridge for 24 -48 hours (or 6 hours if taking a shortcut).
  • SOUS VIDE SHORT RIBS (see Note 3 for non-sous vide option). Heat water with sous vide equipment to 135F/57C. Lower bag of short ribs into water. Bag should float under water. If it doesn't, unseal bag, lower it until top of bag is just above water line, then reseal it once all air is pressed out by water. If using a circulator sous vide, cover pot with lid or towel to reduce evaporation. Sous vide ribs for 12-30 hours. I find 24 hours perfect or, if ribs are very thin, 12 hours. (For a shortcut, sous vide for 6 hours - but not as tender). Remove shorts rib from bag. Pat dry with paper towel.
  • MAKE GLAZE/SAUCE (optional but recommended): Pour marinade juices into small pot (I like to pour it through a sieve to remove small bits but it's fine if you don't). Bring to boil, then reduce to medium high. Boil for about 10 minutes until reduce by half and slightly thickened.
