POLYNESIAN SAUSAGE KABOBS
Here's a meal on a skewer with a unique twist. The pineapple, cantaloupe and peppers complement the sausage perfectly. I frequently fire up the grill for these simple kabobs in summer. That way, I'm free to work longer in my garden.

Steps:
- In a large bowl, combine the first five ingredients. Set aside half of the marinade for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add sausage. Seal bag and turn to coat. Refrigerate for 3 hours., Drain and discard the marinade from sausage. On metal or soaked wooded skewers, alternately thread the sausage, pineapple, cantaloupe and green peppers. Grill, uncovered, over medium heat for 10 minutes or until sausage is browned, turning and basting frequently with reserved marinade.

Steps:
- Put chicken in large shallow dish.
- Drain pineapple, keep 1/2 cup juice.
- Set pineapple aside.
- Mix juice with the next 7 ingredients in small pan.
- Bring to a boil.
- Reduce heat and simmer for 5 minutes.
- Pour over chicken.
- Cover and chill for 1 hour.
- Remove chicken from marinade, reserve marinade.
- Alternate chicken, pineapple, green pepper, mushrooms, and tomatoes on skewers.
- Grill kabobs over hot coals 20 minutes or until chicken is done.
- Turn and baste frequently with marinade.
- Serve over hot rice.
POLYNESIAN KABOBS
This is a quick and simple grill recipe. The flavor is slightly sweet, but can be kicked up with a spicy sausage choice. It is important to use fresh, not pre-cooked, sausage for this recipe.

- Soak twelve 6 to 8 inch wooden skewers in water 30 minutes.
- Preheat grill to medium heat.
- Alternate sausage, water chestnuts and pineapple on skewers.
- Coat kabobs with glaze.
- Cover and grill kabobs about 4 inches from heat for about 10 to 12 minutes, turning and brushing with glaze once, and until sausage is firm and light brown.

HAWAIIAN FRUIT KABOBS
Pineapple chunks, yams, bananas and small white onions are marinated in red wine, lemon juice, oil, garlic and honey and grilled. Quick and easy dish.

- Drain pineapple; combine pineapple juice with wine, lemon juice, oil, honey, and garlic.
- Cut the yams into 2-inch chunks and the bananas in 1-inch thick slices. Add yams, bananas, and onions to marinade. Let stand in refrigerator overnight, or for at least 2 hours at room temperature. Turn several times; drain, reserving marinade.
- Alternately thread pineapple, yam, banana, and an onion, then repeat, ending with a cube of pineapple, on 12 skewers. Grill 5 inches above heat 8 to 10 minutes, turning skewers to brown all sides, brushing with marinade as you turn. Serves 12.

- In a shallow glass dish, mix the soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder. Stir the chicken pieces and pineapple into the marinade until well coated. Cover, and marinate in the refrigerator at least 2 hours.
- Preheat grill to medium-high heat.
- Lightly oil the grill grate. Thread chicken and pineapple alternately onto skewers. Grill 15 to 20 minutes, turning occasionally, or until chicken juices run clear.

The delicious combination of flavors & the grilled pineapple really makes this come together. I have posted the original recipe, which is meatless, but have added chicken with great results (just be sure to marinade separately from veggies and discard chicken marinade). This is great for summer BBQs and camping! Prep time includes bare-minimum marinating time.

- STEP 1: PREPARE MARINADE
- Drain pineapple, reserving 1/2 cup juice.
- Place pineapple chunks & veggies in large bowl (or large zipper-sealed plastic bag and set aside.
- In saucepan, combine reserved pineapple juice with soy sauce, olive oil, brown sugar, and seasonings. Bring to a boil.
- Reduce heat & simmer, uncovered, for 5 minutes.
- Pour over vegetable mixture--cover & refrigerate at least 1 hour (but 6 hours is ideal), stirring occasionally.
- STEP 2: KABOB PREP.
- Remove pineapple & vegetables from marinade & reserve marinade.
- Alternate pineapple, green pepper, onion, mushrooms, and tomatoes on skewers.
- Grill kabobs for 20 minutes or until soft, turning and basting with marinade often.

These always turn out on the grill. I did them under the broiled and they were good but the favor is better on the grill. We liked it with a spicy sausage the combination of the pineapple and the hot sausage go very nice together.
