2 pounds fully cooked ham, finely chopped
1 can (20 ounces) crushed pineapple, undrained
3/4 cup packed brown sugar
1/3 cup chopped green pepper
1/4 cup Dijon mustard
1 green onion, chopped
1 tablespoon dried minced onion
12 hamburger buns or kaiser rolls, split

Steps:

  • In a 3-qt. slow cooker, combine the first seven ingredients. Cover and cook on low for 3-4 hours or until heated through. Using a slotted spoon, place 1/2 cup on each bun.

3 Tablespoons soy sauce
2 Tablespoons toasted sesame oil
1 Tablespoon Sriracha sauce
1 Tablespoon vegetable oil
1 ½ cups chopped ham
1 large red bell pepper (stemmed, seeded, and cut into 1/2-inch pieces)
4 green onions (white parts minced, green parts cut into 1/2-inch pieces)
1 medium yellow onion (diced)
3 large garlic cloves (minced)
1 Tablespoon minced fresh ginger
2 large eggs (lightly beaten)
4 cups cooked long-grain white rice (cooled to room temperature)
1 cup fresh pineapple (cut into ½-inch dice)

Steps:

  • Whisk together soy sauce, sesame oil, and Sriracha in a small bowl and set aside.
  • In a large 12-inch skillet, heat vegetable oil over medium-high heat until just smoking.
  • Add ham, bell pepper, green onion whites, and yellow onion and cook, occasionally stirring until lightly browned, 7-9 minutes.
  • Add garlic and ginger, stir and cook until fragrant, about 30 seconds.
  • Add eggs to the skillet and stir them into the other ingredients.
  • Stir constantly until eggs are cooked, about 3 minutes.
  • Add rice and soy sauce mixture to skillet, stir until combined, and rice is heated through.
  • Turn off heat and stir in pineapple and remaining green onions.
  • Serve immediately.

honey-roasted ham or smoked ham, with bone in
1 whole clove
2 tablespoons butter
2 tablespoons prepared horseradish
2 tablespoons mustard
1 cup brown sugar
1/2 cup maple syrup
1/4 teaspoon sugar
1/4 teaspoon cinnamon
1/4 teaspoon allspice
1 tablespoon vinegar
2 tablespoons lemon juice
1/4 cup orange juice

Steps:

  • I swore I'd never share this recipe, but here goes.
  • Make slices on the whole ham 1/4" deep.
  • Insert whole cloves 1 inch apart on whole ham.
  • Mix all above ingredients (except for cloves) in a pot and heat on stove on low till sauce is warm.
  • Preheat oven to 325 degrees.
  • Place ham in a large roasting pan.
  • Pour most of sauce on ham (save about 1/4 cup).
  • Place ham in oven with foil loosely on top.
  • Baste with the sauce in roasting pan every 45 minutes (5-7 lb. Ham takes about 2 hours to cook).
  • Slice ham.
  • When ham is sliced brush on the saved 1/4 cup sauce (don't use the roasing pan sauce. It's too greasy).
  • Serve immediately.
  • The only problem with this recipe is that you will be asked to make it for every family function.
  • Enjoy!

1 can (10 ounce size) pineapple chunks, drained, juice reserved
2 cups cooked ham, cut in matchsticks
2 tablespoons butter or margarine
3 tablespoons flour
2 tablespoons brown sugar
2 teaspoons prepared mustard
1/2 teaspoon salt
3/4 cup water
1 tablespoon vinegar
1/2 cup coarsely chopped celery
1/2 green bell pepper, sliced
1 can (15 ounce size) bean sprouts (or use fresh) or sliced mushrooms drained
rice

Steps:

  • In a saucepan, melt butter or margarine. Blend in a mixture of flour, brown sugar, mustard, and salt. Gradually stir in reserved pineapple juice,water, and vinegar. Cook stirring constantly until thickened. Add drained pineapple and ham together with chopped celery and green pepper. Bring to a boil, cover, reduce heat and simmer for 10 minutes or until vegetables are tender. Add sprouts or mushrooms. Serve with rice.

This is truly a wonderful accompaniment to ham that was served at a very nice local restaurant. It is served warm at the table--delicious. By changing the pineapple to chunks, it can be make for chicken.

2 (6 ounce) cans pineapple juice
1 (20 ounce) can crushed pineapple
1/4 cup brown sugar
1/4 cup granulated sugar
3 tablespoons cornstarch
1/3 cup water
8 maraschino cherries, cut up
1/8 cup cherry juice

Steps:

  • If doing this for chicken use pineapple chunks.
  • Strain the pineapple.
  • Place the juice of the can of pineapple and the two 6 ounce cans of pineapple juice in a saucepan.
  • Add the two sugars and heat.
  • Mix the cornstarch and water and stir into the pineapple mixture--stir till thick.
  • Add the crushed pineapple and the cut up cherries along with the cherry juice.
  • Put in gravy boat at serve warm at the table to be ladled over the ham on the plate.

1 (15 ounce) can peach slices, drained and chopped
1 cup crushed pineapple, drained
2 tablespoons cornstarch
1/2 teaspoon cinnamon
1 pinch clove
1/3 cup frozen orange juice concentrate, slighty thawed
1 cup water
1/3 cup raisins
1/2 cup maraschino cherry, left whole or sliced in half (optional)

Steps:

  • In a saucepan combine the cornstarch with cinnamon and cloves; add in the reserved peach and pineapple juice, orange juice concentrate and water.
  • bring to a boil and simmer over medium heat until thickened and bubbly.
  • Reduce heat, then stir in chopped peaches, crushed pineapple, raisins and cherries (if using) simmer 1-2 minutes.
  • Serve this warm or cooled with ham.

3 cups cubed fully cooked ham
1 medium onion, thinly sliced
1 small green pepper, cut into rings
2/3 cup raisins
3/4 cup pineapple tidbits, drained
3/4 cup packed brown sugar
3 tablespoons cornstarch
3 teaspoons ground mustard
1/4 teaspoon salt
1-1/2 cups pineapple juice
1/2 cup cider vinegar
4-1/2 teaspoons reduced-sodium soy sauce
Hot cooked rice

Steps:

  • Preheat oven to 350°. In a greased 2-qt. baking dish, layer ham, onion, green pepper, raisins and pineapple. , In a large saucepan, combine brown sugar, cornstarch, mustard and salt. Stir in pineapple juice and vinegar until smooth. Bring to a boil; cook and stir 2 minutes or until thickened., Remove from heat; stir in soy sauce. Pour over pineapple. Cover and bake 30-35 minutes or until heated through. Serve with rice.

2 tablespoons brown sugar
1 lb center-cut ham steak

Steps:

  • Pour 1/2 inch juice into skillet and stir in brown sugar. Make slashes in fat around steak to keep it from curling.
  • Place ham in skillet with juice mixture and top with pineapple slices.
  • Cook on medium low heat and turn twice.
  • Cook until sauce becomes thick and serve with pineapple slice on each serving.
