3 lbs boneless chicken thighs or 3 lbs chicken breasts
1 cup thousand island dressing (I recommend Thousand Island Dressing)
1 cup orange marmalade
2 tablespoons onion soup mix (I recommend Copycat Lipton's Onion Soup Mix)

Steps:

  • Arrange chicken thighs in greased 9 x 13 inch pan.
  • Combine remaining 3 ingredients in small bowl. Pour over chicken. Bake, covered, in 350ºF (175ºC) oven for about 1 1/2 hours, turning chicken halfway through cooking time, until no longer pink inside. Remove cover for last 15 minutes to thicken sauce if desired.
  • **For OAMC: place all ingredients into a large ziploc bag. Label and Freeze. TO serve: Defrost overnight, dump ingredients into baking pan and cook until done, about 1 1/2 hours.**.
  • I think this would also work in a crockpot as well.

2 tablespoons cornstarch
1 teaspoon celery salt
1/2 teaspoon garlic powder
1/2 teaspoon nutmeg
1 teaspoon paprika
4 boneless skinless chicken breasts
reserved pineapple juice
1/4 cup soy sauce
1 tablespoon brown sugar
1 (14 ounce) can pineapple chunks, drained and juice reserved
1/4 cup pitted black olives (optional)

Steps:

  • Mix together first 5 ingredients.
  • Arrange chicken in a greased roasting pan; sprinkle with spice mixture.
  • Sir together pineapple juice, soy sauce, and sugar in a small bowl.
  • Drizzle over chicken.
  • Cover and bake in a preheated 375* oven for about 45 minutes to 1 hour until tender.
  • Scatter pineapple and olives (if using) over chicken.
  • Bake, uncovered, for about 5-10 minutes until heated through.
  • Enjoy!

1/2 cup low sodium soy sauce
1/3 cup honey
1 tablespoon hoisin sauce
2 star anise
2 tablespoons peeled and grated fresh ginger
10 green onions, sliced 1/4-inch thick
1 cup chopped fresh cilantro leaves

Steps:

  • Preheat oven to 375 degrees F.
  • In a large baking dish, mix the diced chicken, soy sauce, honey, hoisin sauce, star anise, and ginger. Bake for 35 minutes.
  • Sprinkle green onion and cilantro over top and serve.

1 cup all-purpose flour
2 teaspoons salt
1 teaspoon coarsely ground pepper
20 chicken leg quarters, skin removed
1/3 cup vegetable oil
2 cups orange juice
1-1/2 cups pineapple juice
1/4 teaspoon ground ginger
1 can (20 ounces) pineapple chunks, drained
2 cans (11 ounces each) mandarin oranges, drained
1 cup sliced almonds, toasted
Hot cooked rice

Steps:

  • In a large resealable plastic bag, combine the flour, salt and pepper. Add the chicken, one piece at a time, and shake to coat. in a large skillet, brown chicken in oil in batches; drain. Place in two greased 13-in. x 9-in. baking dishes., In a large saucepan, bring orange juice, pineapple juice and ginger to a boil. Pour over chicken. top with pineapple, oranges and almonds. , Cover and bake at 350° for 30-45 minutes or until chicken juices run clear. Serve with rice.

1 cup buttermilk
1 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
3 -4 lbs chicken pieces (we use boneless chicken tenders & boneless thighs)
1 cup peanut oil
1 (20 ounce) can pineapple chunks in juice
1/2 cup sugar
2 tablespoons cornstarch
1/2 cup cider vinegar
1 tablespoon reduced sodium soy sauce
1/4 teaspoon ground ginger
1 medium green bell pepper, sliced into thin strips
cooked rice (optional)

Steps:

  • Preheat oven to 350 degrees. Grease a 13 x 9-inch baking pan.
  • Pour buttermilk into a shallow bowl. Combine flour, salt and pepper in a separate shallow bowl.
  • Dip chicken in buttermilk and dredge in flour mixture.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook until browned; transfer to baking pan.
  • Drain pineapple, reserving juice. Add enough water to equal 1½ cups liquid.
  • Combine sugar and cornstarch in a medium saucepan. Add pineapple liquid, vinegar, soy sauce and ginger.
  • Stir until cornstarch is completely dissolved. Bring to a boil and cook 2 minutes, stirring constantly. Pour over chicken.
  • Bake, uncovered, 30 minutes. Add pineapple and green pepper strips. Bake 15 minutes longer, or until chicken is tender and no longer pink in the center.
  • Serve over rice, if using.
