Steps:
- Wash the chicken, cut it in pieces; season well with salt and pepper.
- Place in a glass baking dish and add the onion, carrots, bay leaf, rosemary and wine.
- Cover with foil and place in the fridge to marinate for 24 hours.
- Roast in the oven at 375°, in the same dish covered with the same foil for one hour.
- Meanwhile, grate the apple and mix it with the water and sugar.
- Take off the foil, cover the chicken in the apple mixture and continue cooking for 20 minutes more until the chicken is browned.

- Place a sheet of baking paper and then foil over the dish and roast in the oven for one hour.
- Meanwhile, grate the apple and mix it with the water and sugar.
- Take the chicken from the over, remove foil and baking paper, cover the chicken in the apple mixture and continue cooking for 20 minutes more until the chicken is browned.

- In a large skillet heat the oil and butter. Add the onions and garlic, saute until browned.
- Add the cubed meat to the mixture and brown well on all sides. Stir in the tomatoes, carrots and beef broth to cover the meat. Season with salt and pepper, cover, and cook over low heat for 15 minutes.
- Uncover skillet, add the potatoes, squash, and corn cooking over low heat until vegetables are almost fork tender. Stir in fruit and rice, cook until rice is tender. Check seasonings and garnish with parsley or basil. Serve immediately.

One of our members here at Zaar was looking for this receipe. As I am Portugues I decided to look it up, for this is a traditional cake from Serra Da Estrela (Loriga the village) Portugal. This receipe is more than 100yrs old. It usually baked in a wooden firestove, in red pottery baking dish. It does not have a time limite, as it varies from oven to oven. I impravise and use my electric oven. But as I also have a wooden firestove I'm going to give it a try there, they say you a much better taste that way. Hope you all enjoy.
