1 1/2 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
1 teaspoon cinnamon
1/2 cup soft butter or 1/2 cup margarine
1 cup brown sugar
1 large egg
3 -4 ripe bananas, mashed
1 teaspoon vanilla
1 1/2 cups raw quick-cooking oats
3/4 cup nuts (optional) or 3/4 cup dried fruit (optional)

Steps:

  • Combine flour, salt, soda and spices and set aside.
  • In a large bowl, beat butter, sugar and egg until fluffy.
  • Add bananas and vanilla beat until smooth.
  • Gradually stir in flour mixture and oats until well combined.
  • If using fruit or nuts, add them now.
  • Pour into a grease 9x13 baking pan.
  • Bake at 425° for about 25 minutes or until golden.

½ cup white sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ cup raisins
1 cup mashed bananas
¼ cup skim milk
2 egg whites
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together dry ingredients. In a separate bowl mix together bananas, egg whites, milk and vanilla. Beat all together.
  • Bake in a 9 x 13 inch pan which has been sprayed with non-stick spray for about 35 minutes. Cool and cut into bars. You may sprinkle with cinnamon and sugar, if desired.

1 1/2 teaspoons ground cinnamon

1 teaspoon baking powder

1/4 teaspoon salt
3 bananas, mashed
1/3 cup maple syrup
2 teaspoons vanilla extract
1/3 cup unsweetened applesauce
1/2 cup chocolate chunks

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 9×9 baking dish with cooking spray and cover with parchment paper. (this will help you remove the bars more easily later)
  • To a medium bowl, add oats, flour, baking powder, baking soda, salt, nutmeg and cinnamon.
  • To a large bowl, add finely mashed banana, maple syrup, vanilla extract and apple sauce. Whisk together until combined.
  • Slowly add the wet ingredients to dry ingredients. Fold in the chocolate chunks.
  • Add oatmeal mixture to prepared 9×9 baking dish.
  • Bake for 20-25 minutes or until top is golden brown and toothpick test comes out clean.
  • Serve!
