POLLO CON CREMA (MEXICAN CREAMY CHICKEN)



Pollo Con Crema (Mexican creamy chicken) image

This pollo con crema features a delicious combo of tender chicken simmered in a Mexican-style creamy sauce. A one pan easy recipe that pairs perfectly with pasta, rice or a side of veggies.

4 large chicken breast fillets (2 breasts halved)
¼ cup all-purpose flour
1 tsp chili powder
½ tsp ground cumin
2 Tbsp olive oil
1 Tbsp butter
salt and pepper
1 ¼ cup Mexican crema (read note 1)
1 cup jalapeno peppers (diced, veins and seeds removed)
1 small onion ( finely chopped )
1 garlic clove (minced)
2 Tbsp olive oil
½ tsp dried oregano
2 Tbsp butter
1 ¼ cup chicken stock
1 Tbsp cilantro or parsley (finely chopped)

Steps:

  • Generously season the chicken breast with with salt, cumin, chili powder and pepper.
  • Place flour on a flat plate and dredge the chicken on all sides, shake off excess.
  • On a sautéing pan, heat 2 tablespoons of olive oil and 1 tablespoon butter over medium-high heat.
  • Fry chicken until they is cooked through and lightly brown-golden on the outside (about 5 minutes each side, depending on the thickness of your chicken).
  • Transfer to a plate and cover with foil to prevent chicken from drying out. Set aside.
  • Reduce heat to medium. Add one tablespoon of oil and sauté jalapeno and onion until softened.
  • Add garlic and sauté until fragrant.
  • Add the chicken stock to deglaze the pan scraping up the bottom to remove any browned bits.
  • Add the oregano and simmer until the sauce is reduced almost to half, stirring from time to time.
  • Reduce heat to low and add the cream, allow to simmer for 2 minutes while stirring occasionally. Adjust with salt and pepper to your taste.
  • Return the chicken back into the pan and let simmer from 2 to 3 minutes more to thicken the sauce a little bit.
  • Garnish with parsley and chili flakes and serve warm.

"Pollo Con Crema" is my absolute favorite Mexican chicken dish! I always order it when we go out for Mexican food, so of course I had to recreate it at home. It tastes so much better homemade and is fast and easy to make. I pair it with Spanish rice (recipe on my blog) for the best Mexican dinner!

2-3 Chicken Breasts (boneless, skinless, cut into thin strips)
1 8oz. Pack White Mushrooms (thickly sliced)
1 Large Sweet Onion (cut into thin strips)
2 Green Bell Peppers (cut into thin strips)
1 16oz. Container Sour Cream
1.5 Cups Heavy Cream
2 TBS "Better Than Bouillon" Chicken Paste (or 1 TBS Chicken Bouillon cube)
2 TBS Olive Oil (for cooking the chicken)
1 tsp Paprika
1/4-1/2 tsp Cayenne Pepper (depending on how spicy you prefer it to be)
Montreal Chicken Seasoning (to taste, for cooking the chicken)
Salt/Pepper (to taste)

Steps:

  • Do the prep work first. Wash and cut all the veggies (mushrooms thickly sliced, onion and bell peppers into thin strips) and cut chicken breasts (into thin strips).
  • Heat 2 TBS olive oil in a large pan on medium-high heat. Add the chicken breast pieces and season with salt/pepper and Montreal chicken seasoning, to taste.
  • Cook the chicken until it cooks all the way through and gets golden on the outside. Then add in the onion, mushrooms, bell peppers, and cook until the onion is soft and translucent and all vegetables are soft and cooked through well.
  • Add in 1.5 heavy cream and 2 TBS "Better Than Bouillon" chicken paste (or 1 chicken bouillon cube). Bring to a boil and simmer for 5 minutes.
  • Stir in the sour cream, sprinkle in 1 tsp paprika and 1/4-1/2 tsp cayenne pepper. Turn burner off and mix well. The cream should be a creamy, slightly thick consistency. If it's not thick, give it 10-15 minutes to stand and it will thicken up!

Pollo con Papas is chicken and potatoes simmered in a flavorful, spicy sauce. This comforting dish is a fabulous family dinner and is great for a party.

2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
6 chicken thighs or legs or both (skin-on, bone in )
2 Guajillo chilis (deseeded)
6 Roma tomatoes
1 cup water
1/2 onion (finely diced)
3 garlic cloves (minced)
2 teaspoons chicken bouillon
1 bay leaf
1/2 teaspoon dried thyme
1/2 teaspoon Mexican oregano
1/2 teaspoon coriander
4 potatoes (peeled and cut into bite size pieces)
2 carrots (diced)
1/3 cup Spanish olives

Steps:

  • Gather all the ingredients needed.
  • Heat olive oil in a large skillet. Season the chicken with salt and pepper and place skin side down in the pan. Cook for 5 minutes per side until browned.
  • While the chicken is frying, place the chilis in a bowl of water and microwave for 3 minutes. Remove and let sit for 5 minutes.
  • Add the tomatoes, water and chilis to a blender. Blend until smooth, then strain through a fine strainer. Press through with a spatula until all the pulp has been pressed through.
  • Remove the chicken from the pan. Add the onion and garlic and cook for 3 minutes. Add the chicken bouillon, bay leaf, thyme, oregano and coriander and stir.
  • Add the carrots and potatoes and cook for 5 minutes, stirring often.
  • Add the tomato puree and stir. Cook for 10 minutes.
  • Add the chicken into the sauce and simmer over medium heat for 30 minutes.
  • Add the olives and continue simmering for another 5 minutes. Remove the bay leaf before serving.
  • Serve with bread or over a bed of rice.
  • Enjoy every bite!

2 large baking potatoes (peeled and roughly chopped)
2 boneless chicken breasts (sliced in thin strips)
1/4 cup onion (slices sliced 1/4 inch thick)
5 garlic cloves (minced)
1 cup sour cream
2 cups water
2 tablespoons chicken bouillon powder or 2 large bouillon cubes
2 roma tomatoes (chopped into thirds)
1 poblano pepper (roasted and roughly chopped)
1 tablespoon butter

Steps:

  • First start off by bringing your water, potatoes and 1 tbsp chicken flavoring to a boil uncovered.
  • While the potatoes are boiling melt the tbsp of butter in a skillet and saute the onions, garlic and tomatoes for 5 minutes. Next add the chicken breast strips and cook on medium heat until chicken is no longer pink.
  • Check your potatoes. As soon as a fork pierces them and slides in easliy immediately take them off the heat and drain the liquid reserving it in a bowl. Next add half of the reserved liquid in the with chicken and add your sour cream. Bring the heat down to a high simmer or medium low heat.
  • Make sure to stir the sour cream in fully. Add the rest of the reserved liquid if needed. The mixture should almost coat the back of a spoon. Next, add your poblano peppers, potatoes and the last tbsp of the chicken flavor.
  • Cover and continue to cook on medium low until the cream sauce coats the back of a spoon and is thickened (10 minutes).
  • Last but not least season with cracked black pepper and salt as needed and serve.

This combination of roasted poblano chiles, cubed boiled potatoes, onions, and crema, cooked into a savory concoction makes a divine vegetarian taco filling.

5 large poblano chiles, stemmed, seeded, and veins removed (or not, depending on how spicy you want this to be)
2 large Yukon gold potatoes or another waxy potato, cut into 1/2-inch / 12mm cubes
1 Tbsp sea salt, plus more as needed
1 Tbsp safflower oil
1 large white onion, thinly sliced
1 cup / 240g Homemade Mexican Crema or crème fraîche

Steps:

  • On an ungreased comal or in a cast-iron skillet over high heat, roast the chiles, turning them over every couple of minutes using tongs or your hands (carefully, so you don't get burned). You're looking for uniform blistering, but you don't want them to become too soggy in the process, especially if you intend to stuff them, since they need to hold their shape. The process will probably take 10 to 15 minutes. Once they are well blistered and before the flesh is completely charred through in any spots, place the peppers in a plastic container with a tight-fitting lid or in a bowl that you can cover with a plate (not a towel or anything porous) and set aside to "sweat" for about 10 minutes, or until they are cool enough to handle.
  • Remove the charred skin from the whole chiles. Once you have removed and discarded the skin and seeds, cut them into rajas, or strips, about the width of fettuccine.
  • In a small saucepan, cover the potatoes with 2 inches / 5cm water and add the salt. Bring to a boil over medium-high heat, then decrease to low and simmer for about 5 minutes. Remove one of the potatoes and taste it. The piece should be soft but not falling apart, still holding its cube shape. Cubed like this, they will cook quite quickly, so be attentive. Once they have the right texture, drain the potatoes and set aside in a medium bowl with a lid or cover the pan with a plate to keep them warm.
  • Using the same comal or skillet in which you toasted your chiles, heat the oil over medium-high heat until it's hot but not smoking. Add the onion and sauté until it's translucent but not browned.
  • In a saucepan, combine the potatoes, chiles, onion, and crema or crème fraîche. Bring to a boil, then turn off the heat and let it sit for 5 to 10 minutes. As the mixture cools, the starches will absorb some of the melted cream and help it firm up. Taste and add more salt if needed. Serve as you wish!
  • Do Ahead: These potatoes can be stored in a sealed container in the refrigerator for up to 2 days.

My favorite dish at our local Mexican Restaurant. Chicken, mushrooms & onions in a spicy cream sauce, YUM! Very rich, but so delish! A real comfort food. I have been playing with the recipe for some time, just trying to get close to what they serve. I think I'm finally as close as I can get. 5/30/08 Update: If you can find Mexican Crema (dairy case at my grocer) it is thicker and works better than cream. This is also good served over rice or noodles. ***I discovered that my Paprika had gotten old and lost strength, when I bought new, I also had to reduce the amount. The recipe now reflects the reduced amount.

  • Remove from heat and stir in sour cream. Mixture will be somewhat thin, but should be a creamy texture like the consistency of a white sauce.
  • Serve hot with warmed flour tortillas and Spanish Rice.

2 tablespoons extra virgin olive oil, divided

2 large red bell peppers, cut into chunks

¼ cup butter
¼ cup all-purpose flour
1 ½ cups low-sodium chicken broth
1 ½ cups heavy cream
¼ cup sour cream
3 tablespoons ketchup, or to taste
2 dashes hot pepper sauce (such as Frank's RedHot®), or to taste
1 teaspoon ground cumin
½ teaspoon ground dried Anaheim or California chiles
12 (6 inch) flour tortillas

Steps:

  • Sprinkle chicken cubes with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium heat, and cook and stir the chicken until the juices run clear, 5 to 10 minutes. Transfer the chicken to a bowl, and heat 1 more tablespoon olive oil in skillet over medium heat. Cook and stir the mushrooms, bell peppers, onion, and garlic until the vegetables are beginning to brown, about 10 minutes. Transfer the vegetables into the bowl with the chicken.
  • Melt butter over medium-high heat in the same skillet, and whisk in the flour. Cook the mixture, whisking constantly, until the roux is lightly browned and gives off a toasted fragrance, about 2 minutes. Whisk in the broth, bring to a simmer, and whisk until thickened.
