This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

Ingredients

1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted

Steps:

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

You want to make biscuits fast, but you discover that you're all out of biscuit mix (or flour...I'm guilty of this one)! Oh no! What can you do? You can grab your off-the-shelf pancake-and-waffle mix off the shelf, and get to work. That's what you can do!

Ingredients

2 cups pancake mix
2 tablespoons sugar
4 tablespoons shortening
2/3 cup milk

Steps:

Preheat oven to 450.
Mix together pancake mix and sugar.
Cut in shortening until mix resembles coarse cornmeal.
Add milk, a little at a time, until a soft dough forms.
Turn out on floured board (or wax paper) and knead about 10 times until dough is smooth and elastic.
Let dough rest about 5 minutes.
Roll out to 1/2 - 3/4 inch thick and cut with 2-1/4 inch biscuit cutter.
Bake 8-12 minutes until done (keep an eye on them, they'll burn fast!).

9 cups flour
1/3 cup baking powder
1 tablespoon salt
1 teaspoon cream of tartar
1/4 cup sugar
2 cups shortening (like Crisco, etc.)

Steps:

Sift dry ingredients together THREE times.
Cut in the shortening until the consistency of corn meal.
Store in covered container at room temperature.
For Biscuits: for each 1 cup of mix, add 1/4 cup milk, pat out on a floured board and cut.
Bake 10 minutes at 400.
For Pancakes: for each 3 cups mix, add 1 egg and 1 1/2 cup milk.
Stir only until moistened.
Bake on hot griddle.
These are extremely thick and"meaty".

Carefully mix all the ingredients until they are blended together.
Store in an airtight container.
When ready to use this mix, take one and one-half cup of the dry ingredients and mix with 1 cup of water and one egg. Don't over mix and put in a skillet to cook. Flip and then serve!

Preheat the oven to 375F and line a baking sheet with parchment paper or a silicone baking liner.

If I’m making a meal, I’ll stick room temperature premade biscuits into a warm appliance, if possible, for about 5 minutes. This includes the oven, toaster oven, and air fryer. Otherwise, to warm from room temperature, place in an oven or toaster oven and use the ‘Warm’ or “Low” setting for 5 minutes. To warm from frozen, wrap in foil and heat in an oven or toaster oven at 300F for 20 minutes, or until they’re warm and no longer frozen in the middle.
