POLISH PORK WITH SAUERKRAUT
A hearty and delicious, cold-weather dish, pork and sauerkraut!

Steps:
- If you're using a roast, slice it into 3/4-inch thick pieces and season with salt, pepper, and paprika. Put in a sealed container and marinate for 2 hours.
- Preheat oven to 350° F.
- Add the sauerkraut to a pot and cover with water. Bring to a boil. Remove from heat and drain. Add to the pot with the sauerkraut: 2 cups of water, Vegeta (or substitute spices), bay leaves, 1/4 teaspoon black pepper, and allspice. Simmer for 30 minutes.
- Meanwhile, saute the onion in 1 tablespoon oil over medium-high heat until it just begins to brown. Add the onion and the carrot to the sauerkraut.
- Add 2 tablespoon oil to a frying pan and brown the meat on both sides. Add an additional tablespoon of oil if needed.
- Place half of the sauerkraut mixture in a casserole dish (I used 9 x 13-inch). Place the meat on top of the kraut, and top the meat with the remaining sauerkraut. Cover (with foil if your dish doesn't have a lid). bake for 90 minutes.
KOTLET SCHABOWY (POLISH BREADED PORK CHOP)
Breaded pork chops with mashed potatoes and salad (preferably a sauerkraut salad) is served regularly for Sunday dinner in Poland. Pound the meat as thinly as you can for best results.

- Place pork chops between 2 sheets of heavy plastic on a solid, level surface. Firmly pound with the smooth side of a meat mallet, turning occasionally, until very thin. Season with salt and pepper.
- Pour flour onto a large plate. Whisk egg in a wide, shallow bowl. Place breadcrumbs in a separate shallow bowl.
- Dredge chops with flour. Dip in whisked egg. Coat with bread crumbs on both sides. Shake off excess coating.
- Heat oil in a large skillet over medium-high heat. Add breaded chops; cook until golden brown, about 5 minutes per side.

As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large nonstick skillet over medium-high heat, and brown the pork chops on both sides, about 5 minutes per side. Place the chops into a 9x13-inch baking dish.
- Mix the sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl until well combined, and spread the sauerkraut mixture over the pork chops. Cover the dish with aluminum foil.
- Bake in the preheated oven until the pork is no longer pink inside, about 45 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

- Heat oil in a large skillet over medium heat. Brown chops on all sides and remove from pan.

PORK CHOP AND SAUERKRAUT BAKE
Steps:
- Gather the ingredients.
- Heat the oven to 350 F. Lightly grease a shallow 2 1/2- to a 3-quart baking dish.
- Sprinkle the pork chops lightly with kosher salt and black pepper.
- Heat the olive oil in a large skillet over medium heat. Cook the pork chops in the hot oil for about 8 to 10 minutes, turning to brown both sides. Remove the pork chops to a plate and set aside.
- Peel the onion and cut it in half lengthwise. Cut the onion halves crosswise into thin slices.
- Add the onion slices to the same skillet and cook, stirring, until the onion has softened and is lightly browned, about 8 minutes.
- Meanwhile, in a bowl, combine the sauerkraut, caraway seeds, applesauce, and apple juice. Spoon the sauerkraut mixture into the prepared baking dish. Arrange the pork chops on the sauerkraut and then top them with the browned onion.
- Cover the baking dish tightly with foil and bake for 45 minutes.
- Uncover the baking dish and bake for about 10 minutes longer, or until the pork chops are tender.
- Garnish with fresh chopped parsley or dill, if desired.

- Trim some of the fat from chops and use along with the peanut oil for browning.
- Sear chops on high heat in heavy skillet for 1 minute each side.
- Set aside chops and keep warm.
- Lower heat to medium and add onion.
- Saute until translucent.
- Return chops to pan and reheat with sauce to warm through.
- Add remaining ingredients, stir until hot.
- Serve.

- In a heavy skillet, fry the bacon until golden. Remove and drain on paper towels. Brown the chops in the bacon fat and add the onion, the sauerkraut, the bacon, caraway seeds and pepper. Cover the chops well with the sauerkraut.

- In a large heavy skillet heat oil to medium high and brown the chops on both sides.
- Remove from pan.
- To the pan add the onions and garlic.
- Reduce heat to medium and cook onions until translucent.
- Season with salt and pepper.
- Add the bay leaf and the drained sauerkraut.
- Arrange chops on top.
- Pour the stock over top, bring to a slow boil and cook for 15 minutes.
- Peel, core and dice the apple.
- Add to the pan with the cumin seeds and stir well, simmering for another 15 minutes.
- Test for doneness.
- Remove bay leaf and serve.

POLISH PAPA'S PORK CHOPS
This is one of the many favorite recipes that I got from my father (the Polish Papa!). It's incredibly easy and very, very good. The apples, applesauce, and onion mixture cuts some of the sharpness of the sauerkraut. As a result, even people who claim to hate sauerkraut love this dish. If you REALLY love sauerkraut, use two cans with both the applesauce and apples. I usually do this, as the sauerkraut is a wonderful leftover.

Steps:
- Heat oven to 375°F.
- Spray a 9x13 baking dish with cooking spray.
- Mix the drained sauerkraut, applesauce or apples, and chopped onion in the baking dish. Spread out evenly.
- Shake the pork chops in the Shake and Bake until evenly coated. Place chops on top of the sauerkraut, but don't overlap.
- Sprinkle any coating mix remaining in the bag over the top of the pork and sauerkraut.

- In a large skillet or electric frying pan, cook bacon until it just begins to brown. Pour off fat, then add onion. Saute until onion is transparent.
- Stir in sauerkraut, carrots, brown sugar, chicken broth and wine.
- Tie up spices and herbs in a small bag of cheesecloth. Bury in the center of the sauerkraut mixture. Cover and simmer 10 minutes.
- Diagonally score 1 side of each bratwurst. In a separate skillet brown the bratwurst and pork chops.
- After the sauerkraut mixture has simmered 10 minutes, add potatoes, working them down into the mixture. Top with browned bratwurst and pork chops. Cover and simmer 15 minutes.
- Add smoked sausages. Simmer, covered another 15 minutes.
- Remove pouch of seasonings before serving.
POLISH PORK CHOPS WITH SAUERKRAUT
This is a fantastic way to prepare pork chops. I've been doing it for years. For the apples, I usually use Granny Smiths, but you can use any apple that you'd normally eat on its own. DON'T use a cooking apple. You need a sweeter apple to balance with the sauerkraut.

- Melt the butter in a flameproof casserole dish, and fry the chops till browned on both sides. Remove from pan and set aside.
- Add onion and garlic to the dish and fry till transparent.
- Season with salt and pepper, add the sauerkraut and the bay leaf, and then arrange the pork chops on top.
- Pour in the chicken broth. Bring to a boil, then lower the heat and allow to simmer for about 15 minutes.

- 1. Preheat oven to 350 degrees.
- 2. Brown the pork chops in a skillet (do not burn!). Place in a buttered baking pan, set aside.
- 3. Core and cut apples into round slices. Place slices of apple over the pork chops. Dust apple slices lightly with cinnamon. Set aside.
- 4. In the same skillet: Add butter and some of the sauerkraut juice. Stir the pan well to get the drippings. Add the onions to the skillet and cook to translucent (do not burn! add water if needed for a little moisture). Add the sauerkraut, ground black pepper and caraway seeds. Stir together well and heat through. Put a layer of sauerkraut over the apple slices in the pork chop pan. Put another layer of apple slices over the sauerkraut. Next put the remaining sauerkraut over the apple slices.
- 5. Bake covered for 40 minutes. Remove covering from pan and bake 10 more minutes uncovered.
- 6. ***Serve with mashed potatoes and corn on the cob.
