COTTAGE CHEESE PANCAKES
The name of the recipe may sound odd, but it is fantastic! My husband and I love to make this for breakfast on lazy weekends. Serve with syrup.

- Combine cottage cheese, flour, oil, and eggs in a large bowl.
- Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/3 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

UKRAINIAN SYRNIKI RECIPE (CHEESE PANCAKES)
Steps:
- In a large bowl, mix together cheese, eggs, 3/4 cup flour, sugar and salt.
- Place baking soda in a small bowl and add vinegar; give it a stir as it fizzes. Add this mixture to the cheese mix.
- With a hand-held electric mixer, mix until uniform consistency. Stir in the raisins with a spoon. It will still have some little cheese clumps.
- Heat a large skillet over medium heat, add 2-3 Tbsp extra light olive oil.
- Add 1/2 cup flour to a small bowl. Place a heaping tablespoon of flat ice cream scoop of the cheese mixture into the flour. Reach into the bowl and sprinkle flour over the top of the pancake. With Well-floured hands, remove excess flour by gently transferring the pancake from one hand to another.
- Once the skillet and oil are hot, place patties directly into the skillet as you mold them. Saute until golden brown, about 3-4 minutes each side, flipping once during cooking.
- Transfer to a plate and serve with your favorite toppings like sour cream, fruit and powdered sugar.
POLISH COTTAGE CHEESE DIP (GZIK)
This is a simple dip with infinite possibilities. The classic version, called gzik, comes from the Wielkopolska province in Poland. It's built from a farmer's cheese called twarog, which is essentially a dry version of what Americans know as cottage cheese. The cheese, which comes molded into a thick disc, is mashed with a fork, then loosened with a few tablespoons (or more, depending on the dryness of the cheese) of yogurt or cream. Radishes and some members of the allium family, most often chives or onions, add flavor; dill or other herbs sometimes make an appearance. The classic way to eat it is on boiled or baked potatoes still in their jackets, but gzik on buttered rye bread is a popular breakfast dish. Although you can use any style of cottage cheese for this recipe, smaller curds work better than large because the dip should be slightly smoother than cottage cheese.

POLISH COTTAGE CHEESE PANCAKES
A co-worker from Poland gave me this recipe. It's good on it's own as a side dish or add your favorite jam and make it a yummy dessert.

- 1. Combine all ingredients except butter. Let batter rest for 10 minutes
- 2. Coat a griddle with butter. Pour batter into hot griddle and cook until browned. Flip and brown on other side.
- 3. Serve plain, folded over, or roll them up with jam or ricotta cheese etc..
RICOTTA PANCAKES
Steps:
- Combine 32 oz ricotta cheese with 1 egg and mix until the egg is well incorporated (if using vanilla add 1 tsp vanilla with the egg); add 1/2-3/4 cup sugar and mix again; add 1½ cups flour and 1/2 tsp baking powder and with a minimal amount of mixing bring everything together into a smooth mass.
- Using a tablespoon or a large ice cream scoop, scoop the mixture then drop it into the flour. Coat the ball in flour, then gently shape into a flat patty about 1/2 inch thick. You can shape them all and then fry the ricotta pancakes, or shape enough to fill the pan and while they're frying continue shaping the rest.
- To fry the pancakes add about 1 tablespoon of oil to a skillet and heat over low-medium heat. Add ricotta pancakes in, cover with a lid and fry for about 2-3 minutes per side or until well browned on both sides.

NALESNIKI (POLISH PANCAKES)
These are really similar to the pancakes/crepes that I had for the first time last week on a studytour in Russia. They can be dessert or breakfast or whatever. There were a lot of options for fillings, mostly it looked like different flavors of jam, but I don't like fruit so I had mine plain there and found this recipe for a cheese filling when I got back home.

- Batter: Sift the flour into a large bowl.
- Add the egg and the egg yolks from the separated eggs.
- Add the milk, water, oil and nutmeg and mix thoroughly.
- Whisk the egg whites together with the salt until stiff, and fold into the batter.
- Filling: Cream the butter with the egg yolk and mix together with the cheese.
- Add the sugar and vanilla sugar.
- Mix well.
- If the mixture is too stiff, add a little bit of milk.
- Putting It Together: Melt some of the butter over medium heat in a small frying pan.
- When it's hot, pour in about 2tbs of batter and cook on both sides until lightly browned.
- Remove from pan and keep warm in the oven at low heat.
- Repeat until all of the batter is used.
- Put a tablespoonful of filling on each pancake, fold over and serve hot.

- Add all the ingredients for the crepes into a medium bowl (flour, eggs, milk, vanilla, melted butter, sugar, salt). Whisk until combined and smooth (although small lumps are ok), you can do that by hand, with a mixer, in a food processor or a blender. The batter will be thin.
- Brush the pan with a small amount of butter (I’m only adding the butter before the first crepe). The pan should be well-heated, I’m cooking my crepes over high heat. Holding the pan in the air (it shouldn’t be on the burner), pour in the batter, tilting the pan simultaneously until the batter evenly coats the bottom of the pan. Place the pan on the burner and cook for about a minute.
- Spread about 2-3 tablespoons of the filling onto each crepe (don't add to much, these pancakes are thin).

- Pierogi. Undeniable, pierogi is the most popular Polish food. Pierogi is already plural in Polish (pieróg is singular), but in the US people love to call it pierogis which makes no sense.
- Golabki / Gołąbki – Cabbage Rolls. Polish golabki (translating directly it means ‘little pigeons’) is cooked minced meat, often with onions and mushrooms, wrapped up in a leaf of white cabbage and stewed.
- Bigos. Poles love to pickle food. The Polish pickled cucumber is a bit different than the traditional gherkin you might be used to – it’s a bit sour, with a lot of dill, similar to kosher-style pickles.
- Kotlet Schabowy. Kotlet Schabowy is a pork cutlet in a coating. It’s like Wiener Schnitzel, but thicker. If you ask a Pole to serve you something typically Polish, you’ll be served schabowy with boiled potatoes and warm beets – alternatively with a boiled carrot chopped in cubes mixed with peas.
- Kotlet Mielony. Similar to the Danish meatballs, the Kotlet Mielony is a flat, pan-fried meatball but in a coating. They’re usually eaten with boiled potatoes, or a cold salad like sauerkraut or pickled/boiled beetroots.
- Gulasz. The gulasz in Poland is the local version of the well known Goulash dish, of which many Central European countries have their own recipes. The main ingredients are usually tender pieces of beef and then a broth of bell pepper, carrots, mushroom, onions and paprika.
- Kluski Slaskie / śląskie. Known in English as Silesian dumplings, these are a simple recipe of eggs, mashed boiled potatoes and flour that are usually eaten with fried beef roulades and rich gravy with some boiled red cabbage.
- Pyzy & Knedle. ‘Pyzy’ is a type of large oval-shaped dumpling (the singular being ‘pyza’) stuffed with meat, twarog cheese or mushroom stuffing and boiled in water.
- Leniwe – Lazy Pierogi. The lazy man’s pierogi is a simpler substitute for the very popular Pierogi mentioned above which is what makes it different from the normal recipe.
- Placki Ziemniaczane – Potato Pancakes. The authentic Polish potato pancakes are a traditional comfort food eaten all over the country. Everyone has their own family recipe but the base is always potatoes, grated onions, eggs and flour, flattened and fried into savory pancakes.
