BAKED POLENTA WITH SAUSAGE AND ARTICHOKE HEARTS
Here, the polenta is already made -- just bake this flavorful blend of sausage, artichokes and onions with it, and serve like a lasagna.

- Preheat oven to 400 degrees. In a large skillet, heat oil over medium. Add onion and cook until softened, 5 minutes. Add sausage and cook, breaking up meat with a wooden spoon, until browned, 8 minutes. Add garlic and cook until fragrant, 30 seconds. Remove skillet from heat and stir in artichokes; season with salt and pepper.
- In a 2-quart baking dish, layer polenta rounds and spoonfuls of sausage mixture. Pour stock over top and bake until bubbling and polenta is pale golden, 20 to 25 minutes. Sprinkle with parsley and serve.

HOW TO MAKE PERFECT POLENTA
Polenta is nothing more than coarsely ground cornmeal. The classic ratio is 1 part polenta to 4 parts water, but I like to measure the polenta just a little scant of a full cup. I often use chicken broth instead of water. It's a perfect base for any kind of saucy meat or mushroom ragout.

Steps:
- Bring water and salt to a boil in a large saucepan; pour polenta slowly into boiling water, whisking constantly until all polenta is stirred in and there are no lumps.
- Reduce heat to low and simmer, whisking often, until polenta starts to thicken, about 5 minutes. Polenta mixture should still be slightly loose. Cover and cook for 30 minutes, whisking every 5 to 6 minutes. When polenta is too thick to whisk, stir with a wooden spoon. Polenta is done when texture is creamy and the individual grains are tender.
- Turn off heat and gently stir 2 tablespoons butter into polenta until butter partially melts; mix 1/2 cup Parmigiano-Reggiano cheese into polenta until cheese has melted. Cover and let stand 5 minutes to thicken; stir and taste for salt before transferring to a serving bowl. Top polenta with remaining 1 tablespoon butter and about 1 tablespoon freshly grated Parmigiano-Reggiano cheese for garnish.

- Brush a 9- by 13-inch baking dish with butter. Fill a large pot with 6 cups water and bring to a boil. Bring a second saucepan with 4 cups water to a simmer, cover, and set aside.
- Whisk polenta, salt, pepper, and herbs into the first pot of boiling water. Reduce heat to medium-low and cook, stirring continually until polenta thickens and begins to bubble. Stir in a 1/4 cupful of the simmering water to the polenta and cook while continuing to stir until absorbed. Repeat with remaining water until polenta is soft and creamy.
- Serve hot in bowls. Or for molded polenta, pour while hot into the prepared baking dish and chill in the refrigerator to set, about 1 hour.

CORN POLENTA
This is a great hard polenta recipe. In fact, with a few modifications, I used this for my final cooking practical in culinary school. Allow this to set and use for croutons, grill, sauté, or whatever.

Steps:
- In a sauce pan sweat the shallot and garlic with a little bit of olive oil until cooked (translucent).
- Add the water and quickly bring to a boil.
- Gradually whisk in the polenta a little at a time until all the polenta is in the water (to prevent lumps).
- Turn the heat down to medium-low flame and cook the polenta until done (about 40 minutes or when the polenta 'pulls' away from the sides of the pan).
- Stir frequently so the polenta doesn't crust on the bottom of the pan--this makes cleanup MUCH easier.
- In another pan sweat the corn until fully cooked, no colour, then remove from heat.
- When the polenta is done fold in the corn and grated cheese.
- Season with salt and pepper to taste.
- Layout on a pan or into a mold and refrigerate until firm (20 minutes).
- To serve: Sauté, grill, toss with flour and fry for croutons, etc-- the options are endless!
- As an extra option, use 5 cups of water instead of 4 for a soft polenta. Serve warm out of the pan and elevate it by adding some marscapone cheese, whipped cream, or roasted mushrooms.
POLENTA FLORENTINE
This is an adaptation of ClareVH's "Recipe #84268". I feel it gives the polenta that extra Italian flair. Hearty all on it's own as a vegetarian dish (with the vegetable broth, of course) but also great as a side dish.

- Preheat oven to 350.
- Spray a 2 quart oven-proof casserole with non-stick spray.
- Combine broth, water, 1 teaspoon salt, garlic powder, cornmeal, and butter in the casserole; stir well.
- Bake for 40 minutes.
- Meanwhile, defrost spinach and thoroughly squeeze dry. Season with remaining salt and pepper. Drain tomatoes.
- Remove polenta from oven. Add spinach, tomatoes, ricotta, and parmesan; stir well.
- Return to oven and bake for 5 more minutes.
- Remove from oven and allow to rest for 5 minutes before serving.
