BREADED POLENTA CUTLETS

Cutting polenta into cutlets turns it into a delightful main dish that has a firmer texture. With a nice Recipe #93435 or Recipe #106626(or try a mushroom sauce or roasted red pepper sauce!) it is a perfect light dinner! Years ago, when I ate meat, I used to add leftover chopped chicken to the polenta. My husband loved it! Adapted from Moosewood Restaurant New Classics cookbook.

1 teaspoon salt (or more to taste)
2 1/2 cups water
1 cup cornmeal
1 cup chopped onion
1 -2 garlic clove, minced
1/2 teaspoon ground fennel
2 tablespoons olive oil
1/2 cup parmesan cheese, grated (optional)
1 egg
1/4 cup milk
1 cup seasoned bread crumbs
1/4 teaspoon dried herbs (like basil, oregano, thyme, and marjoram with a dash of salt and black pepper)

Steps:

  • To make herbed bread crumbs:.
  • Pulverize stale or lightly toasted whole wheat, sourdough, or French bread in a food processor. Mix in mixed dried herbs. Set aside.
  • Bring the salt and water to a boil. Gradually pour in the cornmeal and stir briskly with a whisk until the polenta begins to thicken. Lower the heat and simmer, stirring frquently until the polenta tastes done. The cooking time will vary with different cornmeals. Finely ground cornmeal might be done after just a few minutes of cooking, coarsely ground and stone ground may need to simmer for up to 45 minutes. Add more water, if needed, during cooking, until the cornmeal is no longer crunchy and the polenta is the consistency of thick porridge.
  • Meanwhile, saute the onions, garlic, and ground fennel seeds in the olive oil on medium heat for about 7 minutes. Remove the cooked polenta from the heat. Stir in onions and the grated cheese(if using). Add salt to taste.
  • Pour the hot polenta onto an oiled baking tray or 10" pie pan to about 3/4" thickness. Spread evenly with a rubber spatula. Chill for at least 30 minutes. The plenta will thicken as it cools.
  • Preheat the oven to 375*F. and oil a baking sheet.
  • In a large bowl, whisk the eggs until they get foamy and then whisk in the milk. Place the bread crumbs in a separate shallow bowl. With a knife, cut the cooled polenta into squares, rectangles, diamonds, or whatever shape you like. Line up in order the pan of cutlets, egg mixture, bread crumbs and the oiled baking sheet.
  • Lift one cutlet at a time with a spatula and dip it inot the egg mixture. Lightly coat the cutlet and gently shake off the excess. Then dip each cutlet in the bowl of bread crumbs and coat well. Arrange the cutlets on the baking sheet about an inch apart.
  • Bake for 35 minutes, until golden brown on both sides, turning once after about 20 minutes.
  • Variation:.
  • To fry the cutlets, heat olive oil about 1/4" deep in a skillet and fry the cutlets for 2-3 minutes on each side. Serve immediately, or keep in a wqrm oven until ready to serve.

2 eggs
2 cups packaged seasoned stuffing mix

Steps:

  • break egg into a bowl and whisk.
  • Dip cutlets into egg to coat.
  • coast cutlets in dry stuffing mix as you would to bread them.
  • place on a baking tray and cook at 350F for approx 40 minutes or until golden.
  • DO NOT turn them over.

  • Season with pepper and garnish with chopped parsley.

50g parmesan , finely grated
1 tbsp curry powder (we used Schwartz Mild Curry Powder)
4 lamb cutlets
1 tbsp olive oil
tomato chutney, to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Mix the parmesan and curry powder together. Season the lamb, then press the meat into the cheese mix to coat. Heat the oil in an ovenproof frying pan or heavy baking tray and fry the cutlets for 2 mins on each side to brown.
  • Transfer to the oven for 5 mins for medium, or longer for well done. Delicious served with a dollop of tomato chutney and some mash flavoured with chopped coriander.

12 lamb cutlets
1 cup panko breadcrumbs, flakes (Japanese breadcrumbs you can use regular crumbs. I just love these as they come out more crisp than )
1/2 cup grated parmesan cheese
1 1/2 tablespoons fresh basil, chopped fine
1 1/2 tablespoons fresh parsley, chopped fine
2 eggs, beaten lightly
flour
olive oil

Steps:

  • Trim off any excess fat from each cutlet, flatten slightly with a meat mallet.
  • Combine breadcrumbs, parsley, basil and cheese. Coat cutlets in flour dip into egg then coat completely in breadcrumb mixture.
  • Lay cutlets flat on a tray or plate in a single layer, place in refrigerator for 10 Min's this makes them easier to handle.
  • Heat a couple of tablespoons of oil in fry pan add lamb ( you may need to use a couple of pans) Cook until browned on both sides turn the heat down and continue cooking until cooked as desired, turning occasionally, I do this instead of finishing in the oven as the coating tends to lose its crispiness.
  • I have allowed for three cutlets per person so make 16 if you want four per person.
  • Serve with mash, roasted or boiled potato and vegetable.

Lovely dish, very simple to prepare. The polenta crust, crispy on the outside and keeps the fish moist on the inside.You may serve with fresh peas. I use a knob of butter alongwith the oil when frying the fish fillets, it just gives that extra flavour.

4 (150 g) salmon fillets, skinned and boned
2 tablespoons finely chopped fresh parsley
2 -3 garlic cloves, very finely chopped
100 g polenta or 100 g fine semolina
1 -2 large egg
4 tablespoons olive oil
salt & freshly ground black pepper
225 g tomatoes, skinned, de-seeded and chopped small
75 g pitted black olives, chopped small
1 garlic clove, crushed
1 teaspoon whole grain mustard
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
110 ml olive oil
1 tablespoon chopped fresh parsley
salt & freshly ground black pepper

Steps:

  • To make the vinaigrette, in a bowl add the crushed garlic, mustard, vinegar, lemon juice, olive oil and a good seasoning of salt and black pepper, and whisk thoroughly.
  • Half an hour before serving, add the tomatoes, olives and chopped parsley.
  • For the crust, just combine chopped parsley, garlic and polenta or semolina on a plate, season with salt and pepper and give it a good mix.
  • Beat the eggs in a shallow dish.
  • Wipe dry the the salmon fillets with kitchen paper.
  • Dip the fillets first in the egg and then coat them with the polenta mixture, pressing it on well.
  • In a very large frying pan, heat the oil over a high heat.
  • When hot add the fish, then turn the heat down to medium and cook the fish for about 3-4 minutes on each side, depending on the thickness of the fish fillets.
  • Drain on absorbent kitchen paper.
  • To serve, spoon a small portion of vinaigrette onto a plate and place the fillet on top and serve the rest of the vinaigrette separately.

Steps:

  • Preheat oven to 220 degrees C.
  • Roll lamb cutlets in polenta to give a generous coating.
  • Heat frypan to quite hot and add a little oil.
  • Place 6 cutlets in the pan and cook until brown, but by no means cook.
  • Transfer cutlets to an oven tray.
  • Repeat process with the remaining lamb cutlets.
