1/4 cup olive oil
1/2 baguette, sliced into 16 slices
2 tablespoons fig spread or preserves (or you can use plum, apricot, etc.)
4 ounces blue cheese, cut into chunks
Torn fresh basil, for garnish

Steps:

Heat the olive oil in a nonstick skillet over medium heat. Add the baguette slices and toast on both sides until golden and crisp, about 8 minutes. Allow to cool, then spread with a little fig spread/preserves. Top with blue cheese chunks. Sprinkle on some basil.

1 teaspoon minced garlic
1/3 cup homemade mayonnaise
Salt and pepper
1 (12-inch) french baguette, sliced into 2-inch slices
1 cup grated Parmigiano-Reggiano cheese
1 tablespoon finely chopped parsley

Steps:

Preheat the oven to 400 F. In a mixing bowl, combine the cheese, parsley, garlic, and mayonnaise together. Mix until incorporated. Season with salt and pepper. Spread 1 tablespoon of the mixture onto each baguette slice. Bake for 6 to 8 minutes or until the croutons are golden brown. Ladle the soup into a shallow bowl. Place the croutons around the bowl. Garnish with parsley.
