Have a delicious chocolatey treat in the evening without feeling guilty. This recipe comes from the 100 Calorie Snacks and More cookbook. These snack bars are made with peanut butter, molasses, ground flax seeds, crisp rice cereal, sliced almonds and bittersweet chocolate.

3 tablespoons creamy peanut butter
2 tablespoons molasses
2 egg whites
2 tablespoons ground flax seeds
4 cups crisp rice cereal
1/2 cup sliced almonds
1 ounce bittersweet chocolate, melted

Steps:

  • Preheat oven to 350°F Spray a 9-inch square baking pan with nonstick cooking spray. Place peanut butter in small microwaveable bowl; microwave on LOW (30%) 30 seconds or until peanut butter is melted. Stir in molasses; cool.
  • Place egg whites and flax seeds in blender; blend until foamy. Pour into large bowl. Add peanut butter mixture; stir until smooth. Stir in cereal and almonds until cereal is evenly coated. Press cereal mixture into prepared pan.
  • Bake 20 to 25 minutes or until lightly browned. Cool completely in pan on wire rack. Cut into bars. Drizzle melted chocolate over bars.
  • Tip: Look for ground flax seeds in large supermarkets or health food stores. You may also buy whole flax seeds and grind them in a coffee mill or blender.

2 (14 ounce) cans sweetened condensed milk
2 cups rolled oats
1 cup shredded coconut
1/4 cup dried cranberries
1/4 cup dried blueberries
1/2 cup dried apple
1/4 cup pine nuts
1/4 cup toasted almond
1/2 cup raw cashews
1/3 cup pepitas
1/3 cup sunflower seeds
1 tablespoon sesame seeds

Steps:

  • Preheat oven to 250 deg and line a 9x13 baking pan with parchment paper. Oil the parchment.
  • Warm the condensed milk in a large pan.
  • Process the ingredients, separately if necessary, to get them to the size and consistency you would like.
  • Mix all ingredients with the milk and spread evenly in the baking pan.
  • Bake for one hour. Remove from oven and allow top cool for 15 minutes before cutting into individual squares.

3/4 cup dark brown sugar
1/2 cup honey
1 1/2 cups peanut butter
1 (6 ounce) package dried fruit, chopped
5 cups cereal, such as Wheaties

Steps:

  • In a saucepan, combine sugar and honey and bring to a boil.
  • Remove from heat and stir in peanut butter until smooth.
  • Stir in fruit bits and cereal, and combine well.
  • Press mixture into a 9 inch baking pan, using a piece of wax paper. Chill with paper on top for at least 1 hour.
  • Remove the paper and chill for another hour.
  • Cut into bars.

2 cups enjoy life granola cereal (any flavor)
1/2 cup rice flour
1/2 cup tapioca flour
1/4 teaspoon salt (optional)
1/2 cup butter or 1/2 cup oil
1/2 cup all fruit spread
1 1/2 cups all fruit spread
1 cup enjoy life semi-sweet chocolate chips
1 cup dropped dried fruit
1 cup dried coconut, and or nuts

Steps:

  • Blend all ingredients in food processor until well blended. Cover with wax paper and press firmly into lightly greased baking pan. Remove paper and bake uncovered at 350°F for 10-15 minutes.
  • While baking, warm 1 ½ cups All Fruit in saucepan or microwave until liquefied. When crust is done, pour preserves on top of crust. Sprinkle with remaining toppings. Let cool before slicing. (Option: use more granola for topping).

1 1/3 cups flour
1 1/4 cups sugar
1/2 cup unsweetened cocoa
1 teaspoon baking powder
1/2 teaspoon salt
4 large eggs
3/4 cup butter or 3/4 cup margarine, melted
1 cup semisweet chocolate morsel
1/2 cup milk chocolate chips
3 (2 ounce) Snickers candy bars, chocolate coated caramel peanut nougat bars cut into 1/4-inch pieces

Steps:

  • Combine first five ingredients in a large bowl.
  • Add eggs and butter, stirring well. Stir in morsels.
  • Spoon mixture into a lightly greased 13x9" pan.
  • Bake at 350° for 30 minutes or till a wooden toothpick inserted in center comes out clean.
  • Sprinkle immediately with candy pieces.
  • Cool completely before cutting into bars. Enjoy!
