1/2 cup plus 1 tablespoon all-purpose flour (spooned and leveled)
1 cup plus 2 tablespoons packed light-brown sugar
1/2 cup old-fashioned rolled oats (not quick-cooking)
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
2 1/2 pounds ripe plums (about 8), cut into 1-inch pieces

Steps:

  • Preheat oven to 375 degrees. In a medium bowl, stir together 1/2 cup flour, 1 cup sugar, oats, and salt. Using a pastry blender or two knives, cut in butter until coarse crumbs form.
  • In a shallow 2-quart baking dish, toss plums with remaining 2 tablespoons sugar and 1 tablespoon flour; sprinkle with oat topping. Place dish on a rimmed baking sheet. Bake until topping is golden brown, 40 to 45 minutes. Let cool 20 minutes before serving.

4 cups thinly sliced pitted plums (6-8 medium plums)
3 tablespoons Wondra® quick-mixing flour
Juice of 1/2 lemon
3 cups all-purpose flour
1-1/2 cups old-fashioned oats
1-1/2 cups dark brown sugar
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup (2 sticks) cold unsalted butter
2 teaspoon vanilla

Steps:

  • Preheat oven to 350°F. Line 9×13-inch baking dish with parchment paper and lightly grease with non-stick cooking spray.
  • In a medium bowl, toss the plums and Wondra flour until plums are well coated. Squeeze with lemon juice and stir until well combined. Set aside.
  • In a large bowl, whisk together the flour, oats, brown sugar, baking soda, cinnamon, nutmeg, and salt. Cut in the butter and vanilla until mixture resembles coarse crumbs. You can use a pastry cutter, two forks or your hands for this step.
  • Set aside 1-1/2 cups for topping. Press remaining crumbs into prepared baking dish. Arrange plums evenly over top. Sprinkle with reserved crumbs.

4 cups sliced fresh unpeeled plums
1 teaspoon lemon juice
3 tablespoons shortening
1 cup Gold Medal™ all-purpose flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
Whipping (heavy) cream, if desired

Steps:

  • Heat oven to 400°F.
  • Mix 3/4 cup sugar, the cornstarch and cinnamon in 2-quart saucepan. Stir in plums and lemon juice. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into ungreased 2-quart casserole; keep plum mixture hot in oven.
  • Cut shortening into flour, 1 tablespoon sugar, the baking powder and salt in medium bowl, using pastry blender or crisscrossing 2 knives, until particles are size of fine crumbs. Mix in milk until mixture forms soft dough. Drop by 6 spoonfuls onto hot plum mixture.
  • Bake 25 to 30 minutes or until topping is golden brown. Serve warm with whipping cream.

In this simple recipe, you have to cook down the plums to be thick enough, but the process is relatively hands off, and the flavor of the slow-simmered fruit is well worth it. You can cut the cobbler easily into bars, as the name implies, but the filling stays a bit soft, so you may prefer to eat them with a fork. They're excellent with ice cream, but many like them best topped with a drizzle of cold heavy cream.

2 1/4 pounds/about 1 kilogram red, black or purple plums, pits removed and roughly chopped (about 6 cups)
1 1/2 cups/300 grams plus 1/3 cup/65 grams granulated sugar
1/4 cup/30 grams cornstarch
2 teaspoons vanilla extract
3 cups/240 grams old-fashioned oats
2 1/2 cups/320 grams all-purpose flour
3/4 cup/90 grams whole-wheat flour
1 1/2 cups/330 grams light brown sugar
1 teaspoon baking powder
1 teaspoon coarse kosher salt
1 teaspoon ground cinnamon
1 1/2 cups/340 grams unsalted butter (3 sticks), melted

Steps:

  • In a large pot, combine plums and 1 1/2 cups/300 grams granulated sugar. Heat over medium-low heat, stirring occasionally, until fruit releases juices and becomes very tender, 12 to 15 minutes. Meanwhile, place a small plate in the refrigerator to chill. You'll use this later to check the doneness of the jam.

  • Heat oven to 350 degrees, and line a 9-by-13-inch pan with parchment paper with overhang on all sides. In a large bowl, combine oats, flour, whole wheat flour, brown sugar, baking powder, salt and cinnamon. Add melted butter and stir until the mixture forms streusel-like crumbs.
  • Press 2/3 of crumb mixture into an even layer at bottom of prepared pan. Spread cooled plum jam in an even layer over crust, then sprinkle remaining crumb mixture evenly over top of jam.
  • Bake until jam bubbles at edges and streusel is lightly browned, 45 to 55 minutes. Cool completely before slicing into 12 pieces.

1/2 cup heavy cream
1/2 teaspoon almond extract
1/2 teaspoon pure vanilla extract
1 1/2 pounds dark plums (about 6), pitted and cut into eighths

Steps:

  • Preheat the oven to 375 degrees. In a medium bowl, whisk together 1 cup sugar, salt, and flour. Using a pastry blender, cut in the butter until the mixture resembles coarse meal. Set aside half the mixture. Add the cinnamon, baking powder, and 1 egg to the other half. Mix until well blended. Press into the bottom of a 9-inch shallow baking dish. Bake until firm and golden brown, about 15 minutes.

1¾ cups (168g) blanched almond flour
1 cup gluten-free rolled oats
¼ cup coconut flour
¼ teaspoon cinnamon
⅓ cup maple syrup
⅓ cup coconut oil, softened, texture similar to softened butter, use refined for no coconut flavor
¼ cup almond butter
3 cups fresh plums, pitted and chopped into small chunks (I used 5 plums)
2 tablespoons maple syrup
1 tablespoon tapioca flour
¼ teaspoon vanilla bean powder or 1 teaspoon vanilla extract
¼ teaspoon cinnamon

Steps:

  • Preheat oven to 350°F and line an 8×8-inch square pan with parchment paper. Grease with nonstick cooking spray.
  • In a mixing bowl, combine the almond flour, gluten-free rolled oats, coconut flour, and cinnamon; whisk to combine. Add the maple syrup, coconut oil, and almond butter. Stir until the dry ingredients are completely moistened and it sticks together but is still a little crumbly. Press 2/3 of the crust into the prepared pan, reserving the rest for the topping. Place the extra dough into the refrigerator.
  • Bake crust for 10 minutes and then set aside to cool.
  • While the crust bakes, add the plums to a saucepan over medium heat. Stir in the maple syrup, tapioca flour, vanilla bean powder, and cinnamon. Cook down the chopped plums for about 20 minutes or until they're mostly broken down and reducing a little bit. Put in the blender or food processor and blitz for a few seconds to blend up the skins.
  • Return the blended plum mixture to the saucepan and cook for 15 minutes or until it cooks down into a thick paste. When you run a wooden spoon through the center, it should take a second before it floods back into the middle. When it's reached that thicker consistency, pour and spread evenly over the baked crust.
  • Sprinkle the remaining crumble topping evenly over the top of the plum jam.
  • Bake for 25 to 30 minutes, or until the topping is a nice golden brown.
  • Let cool completely in the refrigerator before cutting into squares. Store in the refrigerator for 3-4 days or in the freezer for a few months.

1 cup milk (warm)

  • Set aside 1/2 cup of the flour. Combine all other dough ingredients with the dough hook of your mixer until smooth and satiny. Only use remaining flour if needed.
  • Cover the bowl with a clean kitchen towel and let the dough rise in a warm, draft free spot for 30 minutes (it should about double in size). You can preheat your oven to 200 F, then turn the oven off and let the dough rise inside the warm oven.
  • We are only using half of the yeast dough for this cake. You can wrap the other half and freeze for later use, or double the filling and crumb ingredients to make 2 crumb cakes.
  • Roll out half the dough to cover the bottom of a lined or greased 9x13-inch baking pan. Let dough rise for another 10 minutes.
  • Preheat oven to 350 F. Drain plums well if using canned.
  • To make the crumb topping, add all ingredients to a bowl and rub them together by hand into the butter until large crumbs form.
  • Spread pitted plums over the dough and top with fairly large crumbs. Bake for 30-35 minutes until crumbs are golden brown.
