½ cup honey
⅔ cup white sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon ground cloves
¼ teaspoon ground cinnamon
1 cup chopped canned plums
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, blend the egg, honey, sugar, and vanilla. Mix in the flour, baking soda, cloves, and cinnamon. Fold in the plums and walnuts.
  • Transfer the batter to the prepared loaf pan, and bake 50 to 60 minutes in the preheated oven, until a toothpick inserted in the center of the loaf comes out clean.

2 cups all-purpose flour
1 cup sugar
1/2 cup packed brown sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
3/4 cup canola oil
1 large egg, room temperature
1 teaspoon grated lemon zest
1-1/2 cups chopped pitted fresh plums (about 9 small)
TOPPING:
2 tablespoons sugar
2 tablespoons chopped pecans
1/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the flour, sugars, baking soda and salt. In another bowl, whisk the buttermilk, oil, egg and lemon zest. Stir into dry ingredients just until moistened. Fold in plums. Pour into two greased 8x4-in. loaf pans., Combine the topping ingredients; sprinkle over batter. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

1/3 cup sugar
2 teaspoons freshly grated orange zest
1 tablespoon fresh orange juice
2/3 cup whole-wheat flour
1/2 cup old-fashioned rolled oats (not instant)
1/2 cup packed light brown sugar
1 teaspoon ground cinnamon
Pinch salt
1 tablespoon butter, cut into small pieces
1 tablespoon canola oil
3 tablespoons frozen orange-juice concentrate
1 tablespoon chopped walnuts
Serving Suggestion: 1 1/2 cups reduced-fat vanilla ice cream or nonfat frozen vanilla yogurt (optional)

Steps:

  • Preheat oven to 375 degrees F. Coat an 8 by 8-inch baking dish (or similar 1 1/2 to 2- quart dish) with cooking spray.
  • Make the fruit: Combine plums, sugar, orange zest and juice in a large bowl, toss to coat. Transfer to prepared baking dish. Cover with foil and bake for 20 minutes.
  • Meanwhile, make the topping. Mix flour, oats, brown sugar, cinnamon and salt in a medium bowl with a fork. Add butter and blend with a pastry blender or your fingertips. Add oil and stir to coat. Add orange-juice concentrate and blend with your fingertips until dry ingredients are moistened.
  • When fruit has baked for 20 minutes, stir it and sprinkle topping evenly over the surface. Sprinkle with walnuts. Bake, uncovered, until fruit is bubbly and tender and topping is lightly browned, 20 to 25 minutes more. Let cool for at least 10 minutes before serving. Serve warm or at room temperature with ice cream (or frozen yogurt), if desired.

A cross between a cake and a loaf bread, with sweet-tart plums and a brown sugar topping. Just like my mother-in-law used to make. Use plain, lemon, or orange yogurt.

1 cup pitted, chopped plums
1 tablespoon all-purpose flour
½ cup margarine
1 cup white sugar
½ teaspoon vanilla extract
2 eggs
1 ½ cups all-purpose flour
½ teaspoon salt
¼ teaspoon baking soda
⅓ cup plain yogurt
¼ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray, or line with parchment paper.
  • Sprinkle chopped plums with 1 tablespoon of flour in a bowl, and toss to coat. Set aside. In a large bowl, beat the margarine, white sugar, and vanilla extract with an electric mixer until light and fluffy. Beat in the eggs. In another bowl, sift together 1 1/2 cup of flour with salt and baking soda. Stir the dry ingredients into the egg mixture, alternating with yogurt until the mixture forms a smooth batter. 2 cups all-purpose flour
3/4 cup finely chopped walnuts
3/4 cup light brown sugar, lightly packed
12 tablespoons cold unsalted butter (1 1/2 sticks), diced
1 egg yolk
2 pounds firm, ripe Italian prune plums, pitted and quartered lengthwise

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the flour, walnuts, and sugar in a large bowl. Add the butter and the egg yolk. Mix, either by hand or with an electric mixer, until crumbly.
  • Press 1 1/2 cups of the crumb mixture in an even layer into the bottom of a 9 1/2-inch springform or tart pan. Arrange the plums in the pan, skin side down, to form a flower pattern; begin at the outside and work your way in.
  • Sprinkle the rest of the crumb mixture evenly over the plums. Bake the tart for 40 to 50 minutes, or until it's lightly browned and the plum juices are bubbling. Remove from the oven and cool for 10 minutes. Remove from the pan and transfer the tart to a flat plate. Serve warm or at room temperature.

1 cup pitted dried plums (prunes), coarsely chopped
3/4 cup water
2 tablespoons plus 3/4 cup sugar, divided
2 tablespoons shortening
1 large egg, room temperature
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons coarse sugar

Steps:

  • Preheat oven to 350°. In a small saucepan, combine dried plums, water and 2 tablespoons sugar. Bring to a simmer over medium heat for 1 minute. Remove from heat; let stand until plumped, about 10 minutes. Drain plums, reserving fruit and liquid. Measure liquid, adding enough water to yield 1/2 cup. , Cream shortening and remaining sugar until light and fluffy, about 4 minutes. Beat in egg. In another bowl, whisk together flour, baking powder, baking soda and salt. 4 eggs

2 teaspoons grated lemon rind
2 cups fresh prunes, diced or 2 cups dried prunes, soaked and diced

  • Wash and dry the plums, but do not peel, dice into small pieces.

2 cups white sugar
1 teaspoon red food coloring

1 cup chopped nuts
1 cup confectioners' sugar

2 cups diced Italian plums (Nectarines or Peaches can also be used)
3 cups flour
1 cup butter
1 1/2 cups sugar
1 teaspoon vanilla
4 eggs
1 teaspoon salt
1 teaspoon cream of tartar
1 teaspoon baking soda
3/4 cup vanilla yogurt

Steps:

  • Cream butter sugar and vanilla together until fluffy.
  • Add eggs one at a time, beat after each addition.
  • Sift together flour, salt, cream of tartar, and baking soda.
  • Add about 1/3 of the yogurt to the mixture then 1/3 of the flour mixture, alternating until all is added.
  • fill two greased and floured bread pans 1/2 full with batter, then add 1/4 of the fruit to each pan, then the remaining batter and top with the remaining fruit.
  • Bake at 350 degrees for about 50-55 minutes.
  • cool in the pan for about 15 minutes and turn onto a platter.
  • Makes two loaves but freezes well.
