3/4 cup canned light coconut milk (make sure to stir after opening the can)
1 1/2 ounces rum
2 tablespoons shredded coconut
1 to 2 drops coconut extract
3 to 5 ice cubes
Fresh pineapple wedges, for garnish

Steps:

  • Add the pineapple chunks, coconut milk, rum, shredded coconut, coconut extract and ice cubes to a blender and process until smooth and creamy. Pour into glasses and garnish each with a pineapple wedge.

Nonstick cooking spray, for the pie plate
15 shortbread cookies
½ cup toasted pecans
½ cup sweetened flaked coconut
4 tbsp (1/2 stick) unsalted butter, at room temperature
¼ tsp kosher salt
1 ½ cups finely diced or grated fresh pineapple
½ cup granulated sugar
2 tbsp cornstarch
Juice of 1 lime
1 8-oz package cream cheese, at room temperature
¾ cup sweetened coconut cream
2 tsp lime zest
1 tsp rum extract
2 large eggs
2 cups heavy cream
¼ cup confectioners' sugar
½ cup sweetened flaked coconut

Steps:

  • Preheat the oven to 350ºF. Spray a 9-inch pie plate with nonstick cooking spray.
  • In the bowl of a food processor, grind the cookies and pecans into a fine crumb. Add the coconut, butter and salt and pulse a few more times to combine. Dump the mixture into the prepared pie plate and press the mixture evenly up the sides and along the bottom. Bake until lightly browned, 10 to 12 minutes. Transfer to a wire rack until slightly cooled. Leave the oven on.
  • Add the pineapple and granulated sugar to a saucepan. In a small bowl, stir together the cornstarch and lime juice, then add the mixture to the saucepan with the pineapple. Bring to a boil over medium-high heat, whisking until combined. Continue cooking and whisking until the mixture starts to thicken, about a minute. Transfer to a bowl and allow to cool slightly.
  • In the bowl of a stand mixer or in a large bowl with an electric mixer, beat the cream cheese until very smooth. Add the coconut cream, zest and rum extract and beat until combined and smooth. Beat in the eggs one at a time.
  • Spread the pineapple mixture into the cooled crust. Pour the cream cheese mixture on top of the pineapple mixture. Bake until the filling is set, 40 to 50 minutes. Tent the edges of the crust with aluminum foil if the crust gets too dark. Remove to a wire rack and let cool to room temperature, then cover and refrigerate for at least 4 hours and up to overnight.
  • When ready to serve, whip together the heavy cream and confectioners' sugar in a large bowl to soft peaks. Spread the topping onto the chilled pie. Decorate the top of the pie with the coconut.

1 box (4-serving size) vanilla instant pudding and pie filling mix
1 1/2 cups milk
1 refrigerated pie crust, softened as directed on box
1 fresh pineapple, rind removed, cut into chunks
1 tablespoon rum or 1/4 teaspoon rum extract
1 cup sweetened shredded coconut
1 egg, beaten

Steps:

  • Heat gas or charcoal grill. In medium bowl, beat dry pudding mix and milk as directed on box (milk amount is slightly less than called for on box). Let set up 5 minutes. Meanwhile, remove pie crust from pouch; gently press crust in bottom and up side of 8-inch cast-iron skillet, leaving crust overhanging edge of skillet. Add pineapple, rum and 1/2 cup of the coconut to pudding; stir until well combined. Spoon into crust. Sprinkle with remaining 1/2 cup coconut. Fold crust edge over filling, pleating as necessary and leaving filling uncovered in center. Brush crust with egg. Place skillet on grill over medium-high heat. Cover grill; cook 10 to 14 minutes or until crust is golden brown. Cool slightly before serving. If you want to make hand pies instead, cut pie crust into 6-inch rounds. Spoon pudding mixture on each round; fold crust over filling and press edges firmly with fork to seal. Be sure to lightly oil one side of the pie so it doesn't stick to the grill. 1 cup light coconut milk (recommended: Thai Kitchen)
1 1/2 teaspoons rum extract, divided
1 (3.4-ounce) box instant vanilla pudding and pie filling (recommended: Jell-O)
1 cup shredded coconut meat
8 ounces whipped topping, divided
1 (9-inch) pie crust, baked (recommended: Marie Callender's)
1/4 cup shredded coconut meat, toasted, for garnish

Steps:

  • In a large bowl, combine nectar, coconut milk, and 1 teaspoon rum extract. Sprinkle pudding mix over liquid and whisk for 2 minutes. Fold in coconut and 1/2 of the whipped topping.

1 envelope unflavored gelatin
1 (12 ounce) can la preferida pina colada nonalcoholic drink mix
1/4 cup rum
1/2 cup whipped cream, lightly whipped
1 9-inch graham cracker crust
maraschino cherry (optional)
crushed pineapple (optional)

Steps:

  • In a saucepan sprinkle gelatin into Piña Colada Mix and heat stirring to simmer (or place in a microwave safe bowl and heat on HIGH 30 seconds, stirring once).
  • Add rum.
  • Chill in freezer 10 minutes.
  • Beat mixture until smooth.
  • Fold half of the whipped cream into the Piña Colada Mix and then place in crust.
  • Chill until firm, about 2 hours.
  • Serve: Topped with remaining whipped cream and garnished with cherries and/or pineapple if desired.

THE ORIGINAL PIñA COLADA

I had a Piña Colada at the place of its origin in Old San Juan, Puerto Rico - Barrachina Restaurant. This is actually the exact recipe that I got from the restaurant for the original Pina Colada. It is recommended that you use Bacardi rum as it is from Puerto Rico as well (we visited the distilllery that same day). I did not include the freezing time. Enjoy!

48 ounces pineapple juice
15 ounces coconut cream (Coco Lopez or Goya brand)
10 ounces water (if you use ice in a blender, do not add water)
bacardi rum
cherry and pineapple chunk (to garnish)

Steps:

  • Our little secret, do not mix blend with ice, instead freeze the mix stirring occasionaly until well frozen or use an old style ice cream maker to freeze the mix, then you will get the taste of a good piña colada.
  • Pour rum to taste in individual glasses then add frozen mix to serve.
  • Decorate with cherry and pineapple chunks to garnish (optional).

Grill pineapple, covered, over medium heat or broil 4 in. from heat 5-7 minutes or until lightly browned, turning once. Place pineapple on dessert plates. Top with whipped topping mixture; sprinkle with coconut.
