I got this recipe out of HomeBasic book. It's a good carb recipe. Made it tonight for supper and hubby said to make it anytime. I used regular sauce as that's all I had on hand.

2 lbs lean ground beef
1 (700 ml) jar garden-style low-carb pasta sauce, divided
1/2 cup green pepper, chopped
1/2 cup quick-cooking oats
1 cup shredded part-skim mozzarella cheese, divided
2 eggs, lightly beaten
salt and pepper
1/2 cup chopped onion

Steps:

  • Preheat oven to 350°F.
  • In a large bowl combine ground beef, 1 cup sauce, 1/2 cup green peppers, 1/2 cup oats, 1/2 cup cheese, eggs, salt and pepper.
  • In a 13 x 9 baking pan, shape into loaf.
  • Top with 1/2 cup sauce.
  • Bake uncovered for 50 minutes.
  • Top with 1/2 cup cheese and bake an additional 10 minutes.
  • Let stand 10 minutes before serving.
  • Remove meat loaf to serving platter and serve with sauce.
  • 377 calories per serving, 26.8 g fat, 7.2 g carbohydrates.

1 (1 1/4 ounce) envelope Lipton Recipe Secrets onion soup mix (1 envelope)
2 lbs ground beef
1 1/2 cups fresh breadcrumbs
2 eggs
1 small green bell pepper, chopped (optional)
1/4 cup water
1 cup ragu old world style pasta sauce, divided
1 cup shredded mozzarella cheese, divided (about 4 ounces)

Steps:

  • Preheat oven to 350°F.
  • In large bowl, combine all ingredients except 1/2 cup Pasta Sauce and 1/2 cup cheese.
  • In 13x9-inch baking or roasting pan, shape into loaf. Top with remaining 1/2 cup Pasta Sauce.
  • Bake uncovered, 50 minutes.
  • Sprinkle top with remaining 1/2 cup cheese. Bake an additional 10 minutes or until done. Let stand 10 minutes before serving.

2 eggs
1 jar (14 ounces) pizza sauce, divided
1 cup shredded mozzarella cheese
1 cup Italian-seasoned bread crumbs
1/4 teaspoon garlic salt
1/8 teaspoon pepper
2 pounds ground beef
1/2 pound bulk Italian sausage

Steps:

  • In a large bowl, beat eggs. Add 3/4 cup of pizza sauce, cheese, bread crumbs, garlic salt and pepper; mix well. Combine beef and sausage; add to egg mixture and mix well. Press into a 9x5-in. loaf pan. Bake at 350° for 1-1/4 hours. Drain. Spoon remaining pizza sauce over meat loaf; bake 15 minutes longer or until no pink remains. Let stand 10 minutes before slicing.

2/3 cup CLASSICO Traditional Pizza Sauce, divided
3/4 cup KRAFT Shredded Mozzarella Cheese
1/4 cup sliced fresh mushrooms
5 slices OSCAR MAYER Pepperoni
2 Tbsp. chopped green peppers
1 Tbsp. sliced black olives

Steps:

  • Heat oven to 375°F.
  • Mix ground beef, bread crumbs, egg and 1/3 cup pizza sauce just until blended.
  • Press meat mixture into even layer in 8-inch round pan sprayed with cooking spray.
  • Bake 30 to 35 min. or until done (160°F), topping with remaining pizza sauce, cheese and remaining ingredients after 20 min.

1 cup cracker crumb
1/2 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese, divided

Steps:

1 1/2 cups shredded wheat cereal, crushed to 3/4 cups
1 cup pizza sauce, divided
1 egg, slightly beaten
1 1/2 teaspoons seasoning salt
3/4 teaspoon onion powder
1/4 teaspoon dried oregano, crushed
1/8 teaspoon pepper
1/2 cup mozzarella cheese, shredded

Steps:

  • Preheat oven to 350 degrees F.
  • Combine beef, cereal, 2/3 cups pizza sauce, egg, seasoned salt, onion powder, oregano and pepper in a large bowl.
  • Mix well, then shape into a loaf and place in an ungreased 9x13x2 inch baking dish.
  • Bake 50 minutes.
  • Spread remaining 1/3 cup pizza sauce on top.

A kid friendly dish and delicious for grown-ups too. I used a special pan from Pampered Chef, but a jumbo muffin tin will work here too. I use a frozen pepper stir-fry mix which is essentially green, red and yellow peppers and onions. Using it frozen helps keep the meatloaf moist. This recipe is so versatile. You can customize each meatloaf by adding pepperoni, spinach, mushrooms, olives, bacon, etc. in the middle!

1 lb ground chuck
1 (3/4 ounce) packet good season's Italian salad dressing mix
1 cup frozen pepper stir fry vegetables
1 egg
1/4 cup grated parmesan cheese
1/2 cup Italian seasoned breadcrumbs
1 cup pizza sauce
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees.
  • Place frozen veggies in a mini chopper and chop fine; set aside.
  • Combine meat, chopped veggies, dressing mix, egg and Parmesan cheese until JUST mixed; do not overmix.
  • Scoop about 1/3 c meat mixture into each muffin cup and press down.
  • Sprinkle 2 T shredded mozzarella cheese on top of each cup.
  • Place another scoop of the meat mixture on top of the cheese on each cup, pushing to the edges to seal.
  • Bake for 35 minutes.
  • Remove from oven and top each muffin with 2 T pizza sauce and 1 T shredded cheese.
  • Return to oven and bake an additional 10 minutes, until cheese is melted.

1 small onion, chopped
2 tablespoons onion soup mix
1 cup pizza sauce, divided
2 pounds ground beef
1/4 cup grated Parmesan cheese

Steps:

  • In a large bowl, combine the egg, bread crumbs, olives, mushrooms, mozzarella cheese, pepper, onion, soup mix and 1/2 cup pizza sauce. Crumble beef over mixture and mix well. Shape into a 10x6-in. rectangle and place in a greased 15x10x1-in. baking pan; Spoon remaining pizza sauce over top., Bake, uncovered, at 350° for 45 minutes. Sprinkle with Parmesan cheese. 1/3 cup low-fat milk
1/4 teaspoon salt
1/2 cup prepared marinara sauce

Steps:

  • Preheat oven to 400 degrees.
  • Coat a 12 inch pizza pan with cooking spray, and place it on a large baking sheet with sides.
  • Heat oil in a large skillet over medium heat and add onion, bell pepper, mushrooms, and basil. Cook stirring until softened, about 10 minutes.

1 egg, beaten
1/2 cup pizza sauce
1/4 cup seasoned bread crumbs
1/2 teaspoon italian seasoning
1 1/2 lbs ground beef
1 1/2 cups shredded part-skim mozzarella cheese
additional pizza sauce (optional)

Steps:

  • In a bowl, combine the egg, pizza sauce, bread crumbs and Italian seasoning.
  • Fold beef into mixture and mix well.
  • Divide meat mixture into 12 greased muffin cups.
  • Press mixture into bottom and up the sides.
  • Fill center with cheese.
  • Bake at 375°F for 15-18 minutes or until meat is no longer pink.
  • Serve immediately with additional pizza sauce and cheese if desired.
  • Or cool, place in freezer bags and freeze for up to 3 months.
  • To use frozen pizza cups:.
  • Thaw in the refrigerator for 24 hours.
  • Heat in microwave on high for 2-3 minutes or until heated through.
  • Top with additional pizza sauce and cheese if desired.

I'm not crazy about meatloaf, but my husband is. I do however want to eat it when I do make it, so I found this recipe from What's Cooking magazine, tweaked it a bit to suit my taste and they're not half bad.

1 (120 g) box Stove Top stuffing mix
2 teaspoons Italian herb seasoning
1/2-1 cup pizza sauce
1 cup Italian cheese blend

  • Heat oven to 375.
  • Place beef in bowl along with stuffing mix and seasoning.
  • Mix well.
  • Spray an 8 sectioned muffin tin with non stick spray.
  • Divide the meat mixture into 8 pieces and press the meat into each section.
  • Make an indentation in each and spoon the sauce into each one.
  • Bake 30 minutes or until done.
  • Divide the cheese evenly over the top of each muffin and return to the oven to melt.
  • Remove and let stand a few minutes so they are easier to take out.
