PITA PIZZA
Whole-wheat pita bread forms the crust for these pizza wedges topped with fresh basil, yellow pepper, mozzarella, and homemade tomato sauce.

- Preheat oven to 350 degrees. Make the tomato sauce: Heat the olive oil in a medium saucepan set over medium heat. Add the onion and garlic, and cook, stirring frequently, until onion and garlic are browned, about 4 minutes. Add the dried oregano, dried basil, crushed red pepper flakes, bay leaf, chopped tomatoes, and tomato paste. Bring mixture to a boil. Reduce heat to medium-low, and let simmer, stirring occasionally, until the liquid has evaporated and the sauce is thick, about 35 minutes.
- Assemble the pizzas: Arrange pita breads on two baking sheets. Spread about 6 tablespoons tomato sauce on each. Scatter strips of yellow bell pepper on top, and then sprinkle with the mozzarella cheese. Transfer the baking sheets to the oven, and bake the pizzas until the peppers begin to wilt and the mozzarella has melted, about 20 minutes. Remove the pizzas from the oven, and transfer to a cutting board. Sprinkle with basil, andcut each pita pizza into 12 wedges. Serve warm or at room temperature.

- Place the crust on an ungreased 14-in. pizza pan. In a small bowl, combine the Parmesan cheese, mayonnaise, onion, garlic and oregano; spread over crust. Bake at 450° until edges are lightly browned, 8-10 minutes. Cut into wedges. If desired, serve with Alfredo sauce.

It's almost that time of year again...time for packing school lunches! I am posting some freezer friendly recipes from the Company's Coming "school days lunches" cookbook for anyone who needs some great make ahead recipes for the lunch box, Enjoy! Steps:
- Cook onion in oil until soft. Add garlic, and spices and cook an additional 2 minutes.
- Add pepperoni and cook until lightly browned. Remove from heat and cool.
- Combine flour, baking powder, and salt in a large bowl. Make a well in the center of the mixture. Add pepperoni, and remaining ingredients and stir until just moistened.
- Spread evenly into a 9 inch round pan.
- Bake 20-25 minutes at 375 or until golden. Let stand for 5 minutes before removing and cutting into 8 wedges.
- Freezes Great!
- Other ideas:.
- For Wedges: Spread evenly in greased 9" (22cm) round pan. Bake in 375°F (190°C)oven for about 20 minutes until golden and wooden pick inserted in center comes out clean. Let stand in pan for 5 minutes before removing to wire rack to cool. Cut into 8 wedges to serve.
- For Muffins: Grease 8 muffin cups with cooking spray. Fill cups almost full. Bake in 350°F (175°C) oven for about 20 minutes until wooden pick inserted in center of muffin comes out clean. Let stand in pan for 5 minutes before removing to wire rack to cool.
- For Mini-Muffins: Grease 48 (or 36) mini muffin cups with cooking spray. Fill cups evenly. If you only use 36 muffins, they will be quite full but it will still work. I only have a large pan and a half pan so I had to make 36 and it worked great. Bake in 350°F (175°C) oven for about 10 minutes or until wooden pick inserted in center of a muffin comes out clean. Let stand in pan before removing to wire rack to cool.
- FOr a Loaf: I have never made it into a loaf but if I were to, I would bake it in a cooking spray greased loaf pan at 350°F (175°C) for about 15 minutes. And keep checking every 2-5 minutes there after until a wooden pick inserted in the center comes out clean. Let stand in the pan for 5 minutes before removing to cool on a rack. You could slice the loaf and use it instead of bread for a spicy sandwich!

- Place crust on an ungreased 14 in Pizza Pan. (I stretched my refrigerated dough on greased pan and brushed with olive oil and baked at 400 degrees for 8 minutes and then proceeded as follows.).
- In a small bowl, combine cheese, mayonnaise, onion, garlic and oregano.
- Spread over crust.
- Bake at 450 degrees (with the refrigerated dough I left my oven at 400 degrees) for 8 to 10 minutes or until edges are lightly browned.

ITALIAN WEDGIE SANDWICHES
My inspiration for this recipe came from two places...(1) My love for a traditional Italian Hoagie and (2) a little pizza shop I remember from my Hometown in PA that made "Wedgie" sandwiches out of Pizza crust instead of regular bread. I hope you enjoy this as much as I do!

- Make the Bread:.
- Separate the Pizza Doug in half. Roll out as if you were making a regular pizza crust. Drizzle each round with Olive oil, salt, black Pepper, garlic, and Parm cheese. Bake according to manufacturers directions.
- Make the Dressing:.
- Whisk together all ingredients until well incorporated.
- Make the Sandwich:.
- Take one of the pizza crusts, seasoned side down, and drizzle 1/2 of the dressing on the bread. Layer the meat, cheese, and vegetables. Pour remaining dressing on top. Top the giant sandwich with the second pizza crust. Press.
- Cut the Giant Pizza shaped sandwich into 8 wedges. Bake the wedges in oven or toaster oven at 350 for a few minutes to allow cheese to melt.
- Serve and be happy!

EXTRA CHEESY CRESCENT MOZZARELLA WEDGES
I was sitting here trying to figure out what would be a quick thing to feed my kiddos for lunch and at the same time thumbing through the most recent issue of Quick Cooking magazine. This recipe was submitted by Lisa Keesee and it is so simple to make with ingredients you most likely have on hand. These soft cheesy wedges would be great as an appetizer or as an addition to your next meal. For my kids, this and some carrots with ranch was their lunch and they loved it! If you love extra cheesy things and like the sweet flavor of crescents, then you'll love this recipe! UPDATED 2/15/2005 Thanks to the tips of some wonderful reviewers, I tried this a different way. These can easily be rolled into a big rectangle shape. I also sprinkled some oregeno and pizza seasoning on it and it added a whole new dimension of flavor!

- Line a baking pan with foil. Split bagels and place halves face-up in the pan.
- Mix garlic powder and cajun seasoning into olive oil, and brush across the bagels.

- Heat the oven to 200C/180C fan/gas 6. Bring a large pan of lightly salted water to the boil. Cut the potatoes into chunky wedges, then boil in the water for 7 mins. Drain and leave to steam dry for 5 mins.
- Spread the wedges out on a large baking sheet or two smaller ones. Toss with the oil and 1 tsp salt (preferably sea salt) and spread out so that they aren't overlapping. Roast for 30 mins, turning halfway until golden and crisp.
