SIMPLY AU GRATIN SHREDS
My family loves this side dish. Got this from Simply Potatoes. I have made these in the oven and on the grill.

Steps:
- Heat oven to 375 degrees .
- Spray a 13x9-inch dish with nonstick cooking spray.
- In medium bowl mix together potatoes, salt and pepper.
- Spread half of the potatoes into the bottom of the pan.
- Top with 1 cup cheese.
- Top with the remaining potatoes.
- Top potatoes with remaining cheese.
- In a measuring cup mix together the chicken broth and cream.
- Pour over the potatoes mixture.
- Place the butter pieces over potatoes.
- Bake, uncovered, 30 to 40 minutes or until potatoes are golden brown and tender.

- Preheat oven to 350°F.
- Combine hash brown potatoes, whipping cream, 1 1/4 cup Cheddar, green onions, salt and pepper in a large bowl and mix well.
- Spoon potato mixture into one 11 x 7 inch baking dish.
- Sprinkle with the remaining Cheddar. Bake until hot and bubbly, about 25 minutes.

LIGHTENED UP AWESOME AU GRATIN POTATOES
My favorite recipe for au gratin potatoes comes from The Dillard House in Dillard, GA. I have found a way to lighten this recipe up so I can still have it while watching my calories. These are simply fantastic.

Steps:
- Peel and boil the potatoes until fork tender, let cool.
- Heat oven to 350 degrees.
- Spray a 2qt casserole dish with non-stick spray.
- Shred the potatoes with a grater and add to the dish.
- Pour the evaporated milk over the potatoes.
- Sprinkle with salt and pepper to taste.
- Cover the potatoes with the cheese.
- Bake 30 minutes, let cool to thicken. If it is a bit runny simply stir the cheese in and wait, it will thicken.
