- Heat oven to 425°F. Spray 3-quart casserole with cooking spray. Cook and drain macaroni as directed on package. In 12-inch nonstick skillet, cook sausage over medium-high heat until no longer pink; drain. In same skillet, cook bell pepper and onion 5 minutes or until crisp-tender.
- In 4-quart saucepan, melt butter over medium-low heat. Stir in flour, salt and 1/2 teaspoon of the pepper flakes. Cook and stir until smooth. Gradually add milk and water, stirring constantly until thickened. Gradually add Cheddar cheese; stir until melted. Add macaroni, sausage and onion mixture; toss to coat. Spoon into casserole. Sprinkle with mozzarella cheese. Bake uncovered 30 minutes or until bubbly. Top with Parmesan cheese, pepperoni and remaining 1 teaspoon pepper flakes. Bake 2 to 4 minutes longer, or until lightly browned. Garnish with basil.

- Preheat oven to 350° F. Lightly grease a 9x13-inch baking dish or other large rectangular baking dish.
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions for al dente. Be careful to not overcook the pasta. Reserve ½ cup of the pasta cooking water and then drain the pasta. Return the drained pasta to the pot.
- Meanwhile, heat the olive oil in a large skillet over medium high heat. Add the onion and bell pepper to the pan and cook, stirring often, until the vegetables soften, 3 to 4 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the ground beef to the pan. Crumble the beef and cook until it is browned.
- Pour the marinara sauce and reserved ½ cup of pasta cooking water into the skillet. Stir in the salt and pepper. Bring to a simmer and reduce the heat to low. Simmer for about 10 minutes.
- Pour the meat and sauce mixture from the skillet into the pot with the pasta. Stir. Stir in the shredded cheddar cheese. Transfer the pasta mixture to the prepared casserole dish. Top with the mozzarella cheese.
- Bake for 20-25 minutes, until the casserole is hot and the cheese is lightly browned on top. Let stand for 5 minutes and then serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Reserving cheese packets, cook macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. - Pre-heat the oven to 200ºC/400ºF.
- To make the sauce, sweat the onions, garlic and oregano in a few tablespoons of olive oil until soft and translucent.
- Add the tomatoes, basil (I use a medium bunch that I can remove from the sauce once cooked) and seasoning and allow to simmer for 5 minutes until slightly reduced. Adjust seasoning if necessary.
- Slice 3/4 of the pepperoni/salami (reserving a few slices for presentation).
- Add the cooked pasta (and stir in some of the reserved pasta cooking water). Add the sliced salami to the pasta with the sliced basil.
- Transfer half of the pasta to an oven-proof dish, add half of the cheese then the remainder of the pasta and cheese. Top with the rest of the pepperoni/salami and place in the oven to bake for 10 minutes or until the cheese has melted.
- Remove from the oven, top with more basil and serve.

- Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.
- Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
- Heat the half-and-half, oregano and crushed red pepper in a large saucepan over medium heat until the mixture just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
- Add the macaroni and reserved pasta water to the saucepan and stir to combine. (The mixture will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) Gently stir in the marinara sauce, sun-dried tomatoes and pepperoni and season with more salt if needed. Pour into a 13-by-9-inch baking dish. Toss the bread crumbs, Parmesan and sun-dried tomato oil together in a small bowl and sprinkle evenly over the macaroni and cheese. Bake until the cheese is bubbly and the bread crumbs are lightly browned and crispy, about 10 minutes.

I found this in an issue of Reminisce magazine. It was in the Cooking For 2 section, but I just double it. Also should work with other ground meats, such as beef or turkey.

- In a skillet cook sausage, green pepper and onion over medium heat until meat is no longer pink, drain.
- Stir in the cooked macaroni, tomato sauce, 2 T Parmesan cheese, water, oregano, and pepper.
- Transfer to a lightly greased 1-qt. (or larger) baking dish. Sprinkle with remaining cheese. Cover and bake for 25-30 minutes or until liquyid is absorbed and casserole is heated through.
