1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
2 cups shredded part-skim mozzarella cheese
1 cup shredded cheddar cheese
1/2 cup pizza sauce
1/2 cup finely chopped green pepper
1/2 cup finely chopped sweet red pepper
tortilla chips or breadsticks

Steps:

  • In a bowl, combine cream cheese, Italian seasoning and garlic powder; spread on the bottom of a greased 9-in. pie plate. Combine cheeses; sprinkle half over the cream cheese layer. Top with the pizza sauce and peppers. Sprinkle with the remaining cheeses. , Bake at 350° for 20 minutes. Serve warm with tortilla chips or breadsticks.

One 24-ounce package frozen breaded mozzarella sticks
1 tablespoon extra-virgin olive oil
1 cup chopped pepperoni (about 8 ounces)
2 small cloves garlic, finely chopped
One 28-ounce can tomato puree
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
Kosher salt
1/4 cup marinated artichoke quarters, finely chopped
2 tablespoons chopped capers plus 2 teaspoons brine
2 tablespoons grated Parmesan
1/2 cup pitted black olives, finely chopped
1/4 cup marinated mushrooms, finely chopped
Dried oregano, for sprinkling
Crushed red pepper flakes, for sprinkling
1/4 cup drained sun-dried tomatoes in oil, finely chopped
1/4 cup fresh basil leaves, finely chopped
2 tablespoons fresh ricotta

Steps:

  • For the mozzarella sticks and dip base: Cook the mozzarella sticks according to the package instructions.
  • Meanwhile, make the dip base: Heat the oil in a large skillet over medium heat. Add the pepperoni and cook, stirring, until just crisped on the edges, 1 to 2 minutes. Remove half the pepperoni with a slotted spoon to a plate and reserve. Add the garlic and cook until sizzling, about 30 seconds. Add the tomato puree, oregano, red pepper flakes, 1/2 teaspoon salt and 1/2 cup water. Bring to a brisk simmer over medium heat and cook until thickened, about 10 minutes.
  • For the mix-ins: Divide the dip base among 3 serving bowls (about 1 cup per bowl). Stir the artichokes, capers and brine and 1 tablespoon of the Parmesan into the first bowl and sprinkle with the remaining 1 tablespoon Parmesan. Stir the olives and mushrooms into the second bowl and sprinkle with the oregano and red pepper flakes. Stir the sundried tomatoes, reserved pepperoni and most of the basil into the third bowl.   • Arrange the mozzarella sticks on a platter and serve with the dips.

Steps:

  • Preheat the oven to 350 degrees F.
  • For the pizza sauce: Add the olive oil to a 12-inch saute pan over medium heat and, when hot, add the onion. Saute until translucent. Add the garlic and red chile flakes, cook for 1 minute, and then add the canned tomatoes. Reduce the heat to a simmer and cook for 25 minutes, stirring occasionally. When the mixture has thickened, stir in the fresh and dried spices. Simmer for an additional 15 minutes and adjust seasoning, if necessary. Remove from the heat.
  • For the bottom layer: In a medium bowl, combine the cream cheese, ricotta, Parmesan, egg, garlic and spices. Spread the mixture evenly into an oven-safe casserole (2-quart capacity or a 9-inch pie pan). Set aside.
  • For the toppings: In a small saute pan over medium heat, add a drizzle of olive oil and the pepperoni. Saute until the pepperoni is just crisp, 4 to 5 minutes, and then drain on a paper towel-lined plate. Add the remaining olive oil and the red bell peppers and saute over medium-high heat until just starting to soften. Add the shallot, cook for 2 minutes, and then add the mushrooms. Cook for 7 to 10 minutes and remove from the heat.
  • To assemble: Spread the pizza sauce over the top of the bottom layer of cheese, sprinkle with the pepper and mushroom mixture, and then the pepperoni. Evenly distribute the mozzarella over the top and bake for 20 minutes. Remove from the oven and sprinkle with the Parmesan. Garnish with the basil sprig and serve hot with pizza dough strips, toasted pita strips, or crackers.

1/4 teaspoon red pepper flakes

1/2 cup chopped red onion
1 red bell pepper, chopped

1 loaf crusty bread or baguette, thinly sliced, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • In a food processor, combine 1/2 cup of the mozzarella, 1/2 cup of the Parmesan, and the ricotta, sour cream and cream cheese. Blend until smooth, with no lumps of cream cheese. Spread the mixture into an even layer in the bottom of a 9-by-9-inch baking dish.
  • Mix together the fire-roasted tomatoes, tomato paste, garlic powder, Italian seasoning and red pepper flakes in a small bowl. Season with salt and pepper.   • Using a spatula or butter knife, evenly spread the cream cheese over the base of pie dish. It'll slide around a bit and it doesn't have to be perfect, but it's so much easier if your cream cheese is very well-softened.

  • Stir in the tomato paste and cook, stirring, until it coats the vegetables and smells lightly toasted, about 1 minute. Stir in the tomatoes with their juice from the can. Reduce the heat and simmer, stirring occasionally, until the mixture is slightly thickened, about 15 minutes. Stir in the olives and Parmesan and remove from the heat. Season with additional salt and pepper.
  • Meanwhile, toss the baguette slices with the oil and spread in a single layer on an ungreased baking sheet. Bake until lightly toasted and crisp, 7 to 9 minutes. Rub the slices with the whole garlic clove and set aside to cool.
  • Preheat the broiler. Scatter the mozzarella and reserved sliced pepperoni over the dip in the skillet. Place the skillet under the broiler and broil until the cheese is melted and lightly browned, 2 to 3 minutes. Serve the dip warm with the garlic toasts on the side.

1 (8 ounce) package cream cheese, softened
2 teaspoons Italian spices
1 cup grated parmesan cheese
1 cup grated mozzarella cheese
1 cup pizza sauce

Steps:

  • Mix cream cheese with Italian seasonings.
  • Spread cream cheese mixture on a pie plate or shallow dinner plate.
  • Sprinkle 1/2 cup of both the parmesan cheese and the mozarella cheese on top of the cream cheese layer.
  • Top with the pizza sauce.
  • Sprinkle the remaining cheeses on top of the pizza sauce.
  • Cover with plastic wrap.
  • Microwave for 5 minutes.
  • (It will be hot!) Serve it with crusty french bread or crackers.
  • Tip: You can double this recipe and put it in a glass casserole dish for parties.

1/2 cup sour cream
1 tablespoon fresh oregano, chopped
1 1/2 cups shredded mozzarella
1 1/2 cups marinara sauce
2/3 cup mini pepperoni
1/4 cup black olives
1 small green pepper, diced small
Fresh basil leaves, for serving
1 loaf French bread, cut in half lengthwise
1 stick (1/2 cup) salted butter, softened
1 tablespoon fresh oregano, chopped
4 cloves garlic, grated

Steps:

  • For the pizza dip: Preheat the oven to 450 degrees F.
  • Put the ricotta, cream cheese, sour cream, oregano and 1 cup of the mozzarella in a bowl and mix. Add to the bottom of a 9-inch round baking dish. Top with the marinara sauce and remaining mozzarella. Scatter the pepperoni, olives and green peppers over the top. Set aside.
  • For the garlic toast: Put the French bread on a baking sheet cut-side up. Mix the butter, oregano and garlic in a bowl, then spread the butter mixture on top of the French bread halves.
  • Bake both the dip and bread until the bread is golden and the dip is hot and bubbly, about 12 minutes.
  • Slice the bread into sticks or wedges. Garnish the dip with basil and serve alongside the bread.
