Categories     main-dish

Time 16m

Yield 6 to 8 servings

Number Of Ingredients 27

6 deli rolls or small baguettes, halved
One 24-ounce jar marinara sauce
1 jar prepared pesto, optional
Five 8-ounce packages fresh mozzarella, sliced
5 ounces Canadian bacon slices, halved
8 ounces canned pineapple chunks
5 tablespoons olive oil
Salt and freshly ground black pepper
One 12-ounce jar Kalamata olives, chopped
8 ounces crumbled feta
4 ripe tomatoes, diced rough
1/2 English cucumber, seeded and diced
1/2 bunch fresh parsley, chopped
1 cup sliced pepperoni
6 to 7 jalapenos, sliced
Sliced Roma tomatoes, for topping
2 tablespoons olive oil
Salt and freshly ground black pepper
1/2 bunch fresh basil
Olive oil, for sauteing
1 pound ground beef
1 teaspoon red pepper flakes
Salt and freshly ground black pepper
8 ounces grated Cheddar
1 pound browned ground beef
Chopped romaine lettuce, for topping
Diced tomatoes, for topping

Steps:

  • For the pizza base: Preheat the oven to 375 degrees F.
  • Lay the rolls cut-side up on a large baking sheet. Top each half with marinara sauce (or pesto for the tomato basil pizzas), followed by the mozzarella. Then add your toppings of choice. See below for directions for assembling specific pizzas.
  • Once the pizzas are assembled, put the baking sheet on the lowest rack for 8 to 10 minutes. Then turn up the heat to 425 degrees F and put the sheet on the highest rack until the cheese starts to bubble a bit and turns golden. Remove and serve immediately! Cut the pizzas in half right across the middle so there are mini French bread pizzas for everyone.
  • Pizza Varieties:
  • For the Canadian bacon and pineapple pizzas: Top with the Canadian bacon slices and pineapple and bake according to the directions above.
  • For the Greek salad pizzas: Leave off the sauce and brush the sliced rolls with 2 tablespoons of the olive oil; sprinkle with salt and pepper. Top with the mozzarella and bake according to the directions above.
  • While the pizzas are baking, toss together the olives, feta, tomatoes, cucumbers, parsley, the remaining 3 tablespoons olive oil and salt and pepper to taste in a medium bowl. Top the cooked pizzas with the chopped Greek salad.
  • For the pepperoni and jalapeno pizzas: Top with the pepperoni and jalapeno slices and bake according to the directions above.
  • For the tomato basil pizzas: Use pesto instead of the marinara sauce, and top with the tomato slices. Drizzle with the olive oil and sprinkle with salt and pepper. Bake according to the directions above. Top the cooked pizzas with basil leaves.
  • For the hamburger pizzas: Heat the olive oil in a skillet over medium-high heat. Add the ground beef, red pepper flakes and salt and pepper and saute until the beef is no longer pink. Top the rolls with the sauteed ground beef and bake according to the directions above.
  • For the hamburger taco pizzas: Top with the Cheddar and ground beef and bake according to the directions above. Top the cooked pizzas with the chopped lettuce and tomatoes.

PIZZA BUBBLE BREAD (MICROWAVEABLE!)

Pizza Bubble Bread (Microwaveable!) image

This is an incredibly easy snack recipe that I learned back in 7th grade Home Ec. Good for kids, dorm cooking, movie nite, or any quick fix. It's also a great one to make with kids because they can help with the entire process or make it themselves if they're older. You can always split up the Italian seasoning or add more toppings if you need more "jobs" for your cooks! For easier and safer cutting, they can use kitchen scissors. I don't like pepperoni so I always replace it with mushrooms or peppers.

Categories     Lunch/Snacks

Time 11m

Yield 4 serving(s)

Number Of Ingredients 5

1 (10 ounce) package refrigerated biscuits
3/4 cup pizza sauce
1/4 cup pepperoni, sliced small
1/2 teaspoon italian seasoning
1 cup mozzarella cheese, shredded

Steps:

  • Spray a glass pie pan (a 9x9 pan also works) with cooking spray.
  • Place a custard cup upside down in the center of pan (this is to make sure it cooks evenly). Make sure to spray this with cooking spray also.
  • Separate the biscuits and cut each biscuit into 4-6 pieces per biscuit.
  • Toss dough with pizza sauce and seasoning. Pour around custard cup.
  • Sprinkle mozzarella and pepperoni over the top.
  • Microwave for 6 minutes. Watch closely as microwaves vary. Enjoy:)!
  • **Variation** Make it Mexican with picante sauce, taco cheese, cumin, and black olives.
  • **Of course, you could always make this in the oven too!

CHEF JOHN'S POURABLE PIZZA

Chef John's Pourable Pizza image

Besides being kind of fun to make, this pourable pizza method doesn't require kneading or rolling/stretching/spinning. So it's an easy way to achieve a really thin-crust pizza. Plus you get that crispy, near-charred bottom you usually get only from a pizza oven.

Provided by Chef John

Categories     Main Dish Recipes     Pizza Recipes

Time 1h40m

Yield 4

Number Of Ingredients 8

3 cups all-purpose flour
1 (.25 ounce) package active dry yeast (2 1/4 teaspoons)
1 teaspoon kosher salt
1 ½ teaspoons honey
1 tablespoon olive oil, plus more to oil pan
2 cups warm water (105 degrees F/41 degrees C)
Pizza sauce
Favorite pizza toppings

Steps:

  • Place flour in mixing bowl with dry yeast, salt, honey, olive oil, and warm water. Whisk together for about 5 minutes. This will be a very thin batter-like dough. Cover and let rise 1 1/2 hours. Dough should be bubbly. Stir with a ladle to eliminate the bubbles.
  • Generously oil a cast-iron skillet with olive oil off heat. Pour batter in a squeeze bottle or zip-top bag with a bottom corner snipped. Slowly pour the batter into the skillet starting from the center of the pan and working in circles toward the edge. Try to avoid mixing batter with the oil. If small bubbles of oil appear on the surface, use the tip of a paring knife to gently stir them into the dough.
  • Place pan over medium-high heat. Wait for the dough to form bubbles over the entire top surface and the crust starts to dry out a bit. Flip over and continue cooking one side and the next. The bubbly side should be dry and achieve a golden brown color; the bottom should be well browned, about 4 to 5 minutes total per side. Doneness times will depend on how thickly the batter was poured. Remove from heat.
  • Spread with pizza sauce and top with your favorite pizza toppings: mozzarella cheese, grated Parmigiano-Reggiano cheese, pepperoni, etc. Try to avoid topping too heavily.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place pizza under broiler until toppings are cooked, 3 to 4 minutes.

  • Drizzle the olive oil into a 9-inch to 12-inch cast iron skillet (or other heavy oven safe skillet.) Use a pastry brush to distribute the oil over the bottom and up the sides of the pan.
  • In a medium mixing bowl, stir together the pizza sauce, 1 cup of the mozzarella and the pepperoni slice quarters until evenly mixed. Drop in one piece of dough at a time, use tongs or two forks to turn it to coat both sides, then transfer to the prepared pan. Repeat with the remaining pieces of dough. If any of the sauce mixture remains in the bowl, use a spoon to dollop it in small amounts over the dough that is in the pan. Sprinkle the remaining cheese evenly over the prepared dough and let rise for 10 minutes before preheating your oven to 425°F with a rack positioned in the center third of the oven.
  • When the oven reaches the correct temperature, slide the pan into the oven (on top of a rimmed baking sheet to catch drips if the dough, cheese and sauce look precariously close to the top of the pan. Remember it will rise higher as it bakes!) Bake for 25-30 minutes (or longer, if necessary) or until the bread is puffy and well-set and the cheese is melted and browned. Remove the pan from the oven and let it rest for 10 minutes. Lay a platter or plate that's slightly larger over the top of the pan before carefully inverting.
  • If desired, you can sprinkle sliced green onions over the Bubble Pizza before serving. Serve warm!
