GOSH I FIL- ELEPHANT'S EAR

Gosh i Fil- Elephant's Ear image

Most of us eat these at the fair but it is also an Afghanistan dessert sometimes served at a dastarkhan, literally 'tablecloth', the enormous meal served to family and guests on special occasions. The American version usually does not have cardamom and pistachio as part of the ingredient list.

Categories     Breads

Time 20m

Yield 6-8 serving(s)

Number Of Ingredients 12

3 large eggs
1/4 teaspoon salt
1 tablespoon sugar
2 tablespoons vegetable oil
1 cup milk
3 3/4 cups sifted white flour
2 cups vegetable fat
1 cup sugar
1/2 cup water
1 cup powdered sugar
1/2 teaspoon cardamom
1/3 cup ground pistachio nut

Steps:

  • Beat eggs, then add and beat together salt, sugar, oil and milk.
  • Add sifted flour to beaten mixture, turn out on lightly floured board and knead for 10 minutes until smooth.
  • (Add a little water if necessary).
  • Roll out small sections of dough to paper thin circles or squares.
  • For ears, pleat in one side of a circular piece- for bows pleat in the center of a rectangular piece.
  • (You can make these up to a foot in diameter- whatever your pan will accommodate.) Heat fat in a large shallow pan, and fry ears a few at a time until lightly brown, turning once.
  • Remove from fat and drain.
  • Pour dribbles of syrup over pastry and dust at once with generous amounts of powdered sugar, cardamom and pistachio.

Time 35m

Yield 12 elephant ears

Number Of Ingredients 2

1 sheet frozen puff pastry, thawed but still chilled
3 tablespoons cinnamon sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Unfold the pastry sheet on a clean work surface. Sprinkle with 2 tablespoons of the cinnamon sugar. Starting at each long side, fold the pastry toward the center, leaving a 1/4-inch space in the middle. Sprinkle with the remaining 1 tablespoon cinnamon sugar. Fold one side over the other, making a 4-layer rectangle. Cut the rectangle into twelve 3/4-inch slices and put the slices cut-side down on baking sheets, about 2 inches apart.
  • Bake until golden brown, 15 to 18 minutes. Use a spatula to transfer them from the baking sheets to cool on wire racks.

CINNAMON ELEPHANT EARS

Cinnamon Elephant Ears image

Provided by Ina Garten

Time 25m

Yield about 20 cookies

Number Of Ingredients 4

1 cup sugar, divided
Pinch kosher salt
1/4 teaspoon cinnamon
1 sheet puff pastry, defrosted (recommended: Pepperidge Farm)

Steps:

  • Preheat the oven to 450 degrees.
  • Combine 1/2 cup of the sugar and kosher salt and pour it over a flat surface such as a wooden board or marble slab. Unfold the sheet of puff pastry onto the sugar mixture.
  • Combine 1/2 cup of the sugar and the cinnamon and spread it evenly on the puff pastry. This is not about sprinkling, it's about an even covering of sugar. With a rolling pin, lightly roll the dough until it's a 13-inch square and the sugar is pressed into the puff pastry on top and bottom. Fold the sides of the square toward the center so they go halfway to the middle. Fold them again so the two folds meet exactly at the middle of the dough. Then fold one half over the other half as though closing a book. You will have 6 layers. Slice the dough into 3/8-inch slices and place the slices, cut side up, on baking sheets lined with parchment paper.
  • Bake the cookies for 6 minutes, or until caramelized and brown on the bottom, then turn with a spatula and bake for another 3 to 5 minutes, until caramelized on the other side. Transfer to a baking rack to cool.

"CANADIAN" ELEPHANT EAR FRIED PASTRIES

This is my copycat recipe for the Canadian version of Elephant Ears, often called or sold as the tail of a buck toothed animal. Try them with garlic and butter or chocolate syrup or a fruity jam. A lot of steps but not so overly time consuming that they are not worth the little extra effort!!! Enjoy them!! I don't have an idea how many this makes as the kids eat them faster than they can be fried.

Categories     Breads

Time 1h12m

Yield 36-40 tails

Number Of Ingredients 13

1/2 cup warm water
5 teaspoons active dry yeast
1 pinch white sugar
1 cup warm milk
1/3 cup white sugar
1 1/2 teaspoons salt
1 teaspoon vanilla extract
2 eggs
1/3 cup vegetable oil
5 cups whole wheat flour
1 quart oil (for frying)
2 cups white sugar
cinnamon (touch)

Steps:

  • In a large bowl, stir together the yeast, warm water and the pinch of sugar.
  • Let stand until it is a slightly foamy (approximately 5 minutes).
  • Then add the other 1/3 cup of sugar, milk, vanilla, eggs, oil and salt.
  • Stir it all until it is smooth.
  • Mix in about half of the flour and continue stirring it.
  • Gradually add more flour.
  • Turn the dough onto a floured surface when it is firm enough to handle.
  • Knead for approximately 6-8 minutes.
  • Add more flour if you need it to form a firm elastic dough.
  • Place dough in a greased bowl and cover.
  • Let dough sit covered until it rises and doubles (approximately 35-45 minutes). Lightly deflate the dough and pinch off a piece the size of a golf ball.
  • On a floured surface use a rolling pin to roll out the small ball of dough into an oval shape.
  • Put it aside and cover it with a clean tea towel while you continue to do the same with the remaining dough.
  • Heat approximately 4 inches of oil in either a deep-fryer (375 degrees) or a wok or a Dutch oven.
  • Before placing the flattened dough into the oil, stretch them into ovals and thin them and enlarge them (to resemble the tail). Place the tails in the oil one (or two) at a time.
  • Fry in the oil, turn them once until the tails are a deep brown.
  • This process usually takes about 1 to 2 minutes per side.
  • Carefully remove the tail from the oil and let it drain on a paper towel.
  • Place left over sugar in a flat dish like a pie pan and add the cinnamon.
  • Toss the tail into the bowl while it is still hot.
  • Shake off any extra sugar and cinnamon mixture.
  • Serve warm.
