BEAN AND MEAT LOAF
When I make meat loaf, I usually just mix together whatever I have on hand. One time I added leftover kidney beans I had in the fridge, and my family loved the meat loaf's soft texture. Now it's our favorite. -Patricia Zwerk of Tucson, Arizona

- In a large bowl, combine the eggs, 1 cup ketchup, beans, bread crumbs, onion, celery, Worcestershire sauce, lemon-pepper and seasoned salt; crumble beef over mixture and mix well. , Shape into two loaves. Place in a 13x9-in. baking dish coated with cooking spray., In a bowl, combine water and remaining ketchup; pour over meat loaves. Bake, uncovered, at 325° for 70 minutes or until meat is no longer pink and a thermometer reads 160°.

BLACK BEAN VEGETARIAN MEAT LOAF
This was a creation based on trying my first black bean vegetarian burger and deciding I had to learn how to make one, then I decided to go for a vegetarian meatloaf instead! Based on a 4 ounce serving, this recipe could be used to make twelve 4 ounce burgers instead of a meatloaf.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Generously coat the inside of an 8x13-inch baking dish with cooking spray.
- Mash black beans in a large bowl. Mix crackers, Cheddar cheese, bell peppers, corn, onion, jalapeno pepper, egg white, taco seasoning, and Ranch seasoning into black beans until evenly mixed. Spoon mixture into the prepared baking dish; form into a loaf.
- Bake in the preheated oven until cooked through, 45 to 60 minutes.

- 1.Preheat oven to 375°. 2.In a small bowl, whisk together all glaze ingredients. Set aside. 3.In a food processor, pulse the oats until chopped well, but not into a powder. 4.Add onion, green pepper, garlic and sunflower kernels and pulse again until well combined. 5.Add in chickpeas, pinto beans, chili powder, Worcestershire, salt and pepper. Pulse until beans are almost nearly pureed. Leave a little bit of texture. 6.Spoon bean mixture into a greased loaf pan and even out. 7.Pour glaze over bean mixture. 8.Bake for 30-35 minutes or until glaze is caramelized and loaf is solid.
BEST EVER PINTO BEANS
I learned to make pinto beans from my Grandma, who came from Oklahoma. I've added to the recipe, and my Mother used to say mine were the best beans she'd ever tasted. Serve the Southern way - with cornbread and steamed greens.

Steps:
- Cover pinto beans with water in a large bowl. Soak beans for 4 hours, changing water every 30 to 45 minutes. Drain.
- Bring 6 cups water to a boil in a large pot. Add pinto beans, ham hock, and kosher salt to the pot. Pour in more water if needed to cover ingredients by at least 1 inch.
- Reduce heat to medium-low and simmer until beans are just tender, 2 to 3 hours.
- Remove ham hock from beans; cut meat from the bone, chop the ham, and return to pot.
- Stir tomato sauce and brown sugar into the beans. Continue to simmer until beans are tender and flavors are blended, about 1 more hour.

Steps:
- Preheat oven to 350 degrees.
- In large bowl, combine meat, beans, 1/2 cup picante sauce, onion, garlic, bread crumbs, eggs, cumin and salt. Mix well with hands or big spoon.
- Press mixture into 9x5 inch loaf pan.
- Bake one hour.
- Carefully pour off and discard any drippings.
- Combine remaining picante sauce and brown sugar and mix well. Spread over top of loaf and bake an additional 15 minutes.
- Allow to rest 10 minutes before slicing.
