PINTO BEAN CAKE
Your cake-loving guests won't believe that pinto beans is the surprise ingredient in this recipe for spice cake decorated with candied cherries and pecans.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease one 9 or 10 inch tube pan.
- Cream butter or margarine and sugar together. Add the beaten egg and mix well. Stir in the mashed cooked beans and the vanilla.
- Sift the flour, baking soda, salt, ground cinnamon, ground cloves, and ground allspice together. Add the chopped pecans, golden raisins, and the diced apples to the flour mixture. Stir to coat. Pour flour mixture into the creamed mixture and stir until just combined. Pour batter into the prepared pan.
- Bake at 375 degrees F (190 degrees C) for 45 minutes. Dribble with a simple confectioner's sugar icing and garnish with candied cherries and pecan halves, if desired.

Steps:
- Preheat oven to 375 degrees.
- Cream sugar and butter.
- Add eggs and mashed pinto beans and mix well.
- Sift together dry ingredients and add to sugar mixture.
- Stir in apples, nuts and vanilla.
- Pour into greased Bundt pan and bake for 45 minutes.

Steps:
- In a blender puree beans with cilantro, chili powder, cumin, coriander. Pour mixture into a medium bowl. Stir in garlic, onion, eggs and enough flour to make a thick batter. Heat 1 tablespoon vegetable oil in a large non-stick saute pan and spoon about 1 tablespoon of batter into pan. Cook for about 2 minutes per side turning once or until cakes are golden and cooked through. Serve with a dollop of sour cream and a spoonful of salsa.;
PINTO BEAN CAKES
Steps:
- In a large skillet over medium high heat, melt butter with red bell pepper and green onion. Cook for 2-3 minutes or just until the bell pepper has softened.
- To the skillet add beans, Creole seasoning, granulated garlic, garlic salt and onion powder.. Cook for 2-4 minutes just until the beans are heated through.
- Remove from heat and mash together using a potato masher or fork. Let cool slightly.
- Next, add 1/2 cup panko breadcrumbs, flour, egg and bacon. Mix well
- Form into 8-10 even bean cakes about 1/2 inch thick. Coat on all sides with reserved bread crumbs.
- Drizzle a large skillet with oil. Cook beans cakes over medium-high heat for 2 minutes per side or until golden. If frying in batches, wipe skillet clean between each batch.
- Serve warm with topped with sour cream and Southern Chow Chow.

SPICY PINTO BEAN CAKE
This cake is really good--nice way to use left over pinto beans. Don't think anyone will guess your "secret" ingredient. Can be frosted with powdered sugar frosting, drizzled with browned butter frosting or just served with a sprinkle of powdered sugar.

Steps:
- Beat pinto beans and bean liquid in bowl until smooth.
- Cream butter and sugar in large bowl until light and fluffy.
- Add egg, vanilla and beans, mix well.
- Combine dry ingredients, mix well.
- Add half the flour mixture to creamed mixture, beat well.
- Stir in apples, raisins, walnuts and remaining flour mixture, beat until just mixed.
- Pour into buttered 8" tube pan.
- Bake at 350° for 1 hour.
- Invert on funnel to cool.
- Loosen cake from sides of pan.
- Turn onto cake platter.
