- Drain pineapple, reserving liquid. Set aside. Heat oil in large skillet on medium-high heat. Add steak; cook and stir 5 min. or until cooked through. Add pineapple, onions and garlic; cook and stir 2 min. Reduce heat to low.
- Mix reserved pineapple liquid, water and cornstarch until well blended. Add to steak mixture; cook 1 min. or until thickened, stirring constantly. Remove from heat.

- Peel the pineapple using a sharp knife and chop the flesh into small cubes. To save time, you can buy already peeled and chopped pineapple. Add 2 cups of cubed pineapple and 1 tsp chopped garlic in the medium jar of a blender and blend to make a coarse mixture.
- Do not blend the pineapple too much. We are looking for a coarse texture here.
- Add the pineapple mixture in a heavy bottom pan along with ½ cup pineapple juice, ¼ cup vinegar, ¼ cup lemon juice, 1 tsp lemon zest, 1 cup brown sugar, 2 tsp red chili flakes, and 1 tsp salt. Bring the mixture to a boil and cook for 5-6 minutes on medium heat. Cover the pan with a lid of the mixture is spluttering too much. Keep stirring frequently.
- Mix 3 tbsp cornflour in ¼ cup water in a small bowl to make a thin slurry and add it to the pan.
- Cook on medium heat until the sauce thickens. Remove the pan from heat and let the sauce cool down. Store in a glass jar in the refrigerator and use as desired.

- In a large bowl, combine the chicken pieces with the fish sauce, lemon juice and pepper; toss to combine. Cover with plastic wrap and refrigerate for at least an hour. Drain the chicken and discard the marinade.

- Combine crushed pineapple + juice, chicken stock, apple cider vinegar, soy sauce, brown sugar, ginger, minced garlic, red chili flakes, cornstarch & water in a medium bowl, whisk - set aside.
- Toss chicken chunks with oil in a large bowl.
- Sprinkle with salt & pepper, and stir to combine. Set aside.
- Place cornstarch for the chicken in a zip-top bag, add the chicken to the bag & close. Shake to coat & then set aside.
- Heat oil to 350 degrees in a wok or large skillet.
- Carefully drop several pieces of chicken into the hot oil, working in batches to not overcrowd the chicken.
- Fry until golden. Scoop out the chicken & drain on a paper towel-lined baking sheet.
- Continue frying & draining the remaining chicken.
- Carefully transfer the hot oil into a Pyrex measuring cup so it can cool.
- Add the garlic & pineapple sauce to a medium saucepan & bring to a simmer.
- Cook mixture, stirring constantly until it starts to thicken.
- Add the chicken, toss to combine.
- Serve with fried or steamed rice.

- In the pan heat the oil over high heat and add the green onions. Cook for 5 minutes, then add the salt and pepper and stir for a few seconds. Add the pineapple jelly and plum sauce cook for a couple of minutes and stir in the Sriracha. Stir and slowly drop all but 1 cup of the pineapple chunks (be careful of the splash-- it burns) into the pan. Cook for 5 minutes then remove the pan from the heat and let cool.
- Remove the cooked pineapple from the pan and put into a blender with the pineapple juice and 8 cups water, and grind until the pineapple chunks disappear. Pour the pineapple mixture and the sauce from the pan into a bowl and mix well. Thinly slice the reserved pineapple and mix into the bowl.
- Use this sauce on pork or as a marinade for grilled shrimp.

Carefully turn the fish pieces over, then cook for about 20 seconds more. Add half the dill and scallions and sauté for about 20 seconds, or until the scallions are wilted.
- 5. Divide the cooked fish, scallions, and dill over 2 of the plates of noodles.
- 6. Repeat the cooking process with the remaining fish, scallions, and dill, then divide them over the remaining two plates.
- 7. Drizzle 1 to 2 tablespoons of the pineapple sauce over the fish and noodles. Sprinkle with the roasted peanuts and serve immediately. Pass the extra pineapple sauce at the table.
