SWEET AND SPICY PINEAPPLE SALSA CHICKEN (SLOW COOKER)

Slow Cooker Sweet and Spicy Pineapple Chicken - crazy good EASY, flavorful sweet, savory and spicy chicken for burrito bowls, salads, burritos, etc.

Number Of Ingredients 20

2 pounds chicken breasts (thawed)
1/2 cup mild salsa
1/4-1/3 cup Franks Buffalo Hot WINGS Sauce NOT regular hot sauce*
3/4 cup light brown sugar
1 20 oz. can pineapple chunks, drained
1 15 oz. can black beans, rinsed & drained
1 15 oz. can sweet corn, rinsed & drained
1 4 oz. can mild diced green chillies
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon salt
Rice
tortilla chiips
sour cream
cheese
Tomatoes
Avocados
lettuce
limes

Steps:

  • Place the chicken in the slow cooker then add the rest of the ingredients. Start with 3 tablespoons hot wings sauce and add more at the end of cooking if you aren't sure how hot you want it.
  • Cook on low for 6-7 hours or on high 4-6 hours. When chicken can shred easily, remove to a cutting board and shred. Mix the chicken back in the crockpot and allow to cook 30 more minutes. Taste and add additional hot wings sauce, brown sugar salt, pepper if desired.**
  • Transfer chicken to a strainer and drain off any excess liquid.
  • Serve chicken over rice or in tortillas, on salad, etc. with desired garnishes.

1 cup all-purpose flour, or as needed
4 chicken thighs, trimmed
1 cup pineapple chunks
¾ cup pineapple juice
½ cup soy sauce
⅓ cup brown sugar
2 tablespoons ketchup
1 clove garlic, minced

Steps:

  • Put flour into a shallow bowl. Dredge chicken thighs in the flour to coat; tapping thighs to remove excess flour.
  • Arrange chicken thighs in the bottom of your slow cooker crock; top with pineapple chunks.
  • Whisk pineapple juice, soy sauce, brown sugar, ketchup, and garlic together in a small bowl; pour over the chicken and pineapple in the slow cooker.
  • Cook on Low for 4 hours.

2 chicken breasts (about 1.5 lbs or so)
1/2 jar (12 oz) Trader Joe's Pineapple Salsa

Steps:

  • Clean and jaccard your raw chicken. Put the uncooked chicken breasts in your slow cooker.
  • Pour the salsa over the chicken breasts. Add a little water (2-3 tablespoons).
  • Put the lid on and cook for 6-8 hours on low, or 3-4 hours on high heat.
  • Shred with a fork (it should be super tender) and let sit for another 10-20 minutes low on low heat before serving.

500g skinless boneless chicken thighs
1 tbsp vegetable oil
1 medium onion , chopped
2 tsp sweet smoked paprika
2 tsp ground cumin
2 tbsp cider vinegar
1 tbsp chipotle paste
200ml passata
2 tbsp soft brown sugar
½ small pineapple , cored, peeled and chopped
½ small pack coriander , chopped
corn or flour tortillas
hot sauce (I like Tabasco Chipotle), to serve

Steps:

  • In a food processor, roughly blitz the chicken thighs into chunky mince. Alternatively, chop into bite-sized pieces.
  • Heat the oil in a large saucepan. Add half the onion and the chicken mince. Season well and cook for about 5 mins on a high heat to brown, breaking up the meat with a spoon. Add the spices, vinegar, chipotle paste, passata and sugar. Cook for another 5 mins, then remove from the heat.
  • In a small bowl, mix the remaining onion, the pineapple and coriander. Serve the chicken and the pineapple salsa with warm tortillas and hot sauce.

1 can black beans (do not drain)
1 (32 ounce) jar of mild to medium chunky style salsa (I make my own)

  • Place the thawed chicken breasts in the crockpot and add the rest of the ingredients.
  • Cook on low for 6 to 8 hours.
  • Serve with warm tortillas and some rice.
  • I usually do six, so the we have the leftovers.
