FETA PINE NUT DIP

- Preheat oven to 350 degrees F.
- Toast pine nuts in a shallow baking pan, stirring occasionally until golden brown, about 7 minutes. Cool and chop finely.
- Combine nuts, red pepper, parsley, basil and mint in a medium bowl. Crumble feta in small pieces, add to nuts.
- Whisk garlic, salt, pepper, and yogurt in a small bowl until well blended. Stir into the nut and feta mixture. Chill for one hour.
- Serve with crackers.

Serve with crackers and vegetables.
QUICK & EASY FRUIT AND DIP
I got this recipe about 20 years ago from a Tupperware dealer at a party. It is still a family favorite after all of these years.

- Blend cream cheese and marshmallow crème in mixer.
- Slowly add ¼ C of juice.
- Mix until well blended.
- Cover and chill.
- Cut fruit up into bite size pieces.
- Dip the bananas and apples into the remaining pineapple juice to prevent the fruit from browning.
- (Works as well as lemon but adds some sweetness to the fruit) To serve, arrange fruit on a platter around the dip.

- In a saucepan, combine the first six ingredients; cook and stir over low heat until mixture reaches 160*. Remove from the heat. , In a bowl, beat cream cheese. Gradually add egg mixture, beating until smooth. Cool to room temperature. Fold in whipped topping. Refrigerate until serving. , Stand pineapple upright and vertically cut about a third from one side, leaving the top attached. Remove fruit and discard outer peel from the smaller section. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch loaf pan.
- Beat brown sugar and butter with an electric mixer in a large bowl until light and fluffy. Add eggs one at a time, blending the first into the brown sugar mixture before adding the other.

- Place the pine nuts, basil, and oregano into a food processor. Cover, and pulse 2 or 3 times to finely grind the nuts. Add beans and garlic; process until smooth, about 30 seconds to 1 minute. Pour in the lime juice, tomato, salt and pepper, and pulse 2 to 3 times until mixture is smooth and spreadable. With the food processor running, drizzle the oil into the dip. If mixture becomes too thick, add a tablespoon of water at a time until the dip is the right consistency.
- Refrigerate at least 2 hours or overnight to blend the flavors before serving.
