Cinnamon and nutmeg spice up this deliciously moist snack cake from Kay Bakanec of Londonderry, New Hampshire. "It's similar to carrot cake, but much easier because you don't have to grate all those carrots," says Kay.

Steps:
- In a small bowl, beat the egg, sugar and vanilla. Combine the flour, cinnamon, baking soda and nutmeg; add to egg mixture alternately with pineapple. Beat just until combined., Pour into a 9x5-in. loaf pan coated with cooking spray. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. , For frosting, in a small bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually beat in confectioners' sugar until smooth. Spread over top and sides of cake; sprinkle with walnuts.

- Make cake according to package directions in 3 9" cake pans (or one 13x9 pan) that have been greased and floured.
- Cool cake completely.
- To make frosting mix pudding mix and crushed pineapple with juice. Then fold in the thawed Cool Whip.
- Frost cake (you may have to secure layers with tooth pick).
- Must chill cake at least 4 hours before serving, overnight is best.

This cake is similar to the Italian love cake, just made with pineapple. Every Time I make this cake, I get rave reviews. It's like a pineapple cheesecake, but better. Very moist, and tastes even better the next day. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Blend cake mix, water, 3 eggs, and oil together in a large bowl using an electric mixer until smooth. Pour batter into the prepared pan.
- Mix ricotta cheese, sugar, 3 eggs, and vanilla extract together in a bowl. Pour evenly over the batter.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 10 minutes. Let cool, at least 20 minutes.
- Mix milk and pudding mix together until thickened. Fold in whipped topping and pineapple. Spread over the cooled cake. Cover and refrigerate until set, at least 4 hours.

- Bake in the preheated oven until deep golden brown, 40 to 45 minutes. Remove from the oven and immediately turn upside down to cool, about 2 hours.
- Run a knife around the edges and turn cooled cake out onto a serving place. Use a serrated knife to cut into slices.
