This is a very good cake for Christmas. Do not double this recipe. You don't need to age this cake.

¾ cup butter
1 cup white sugar
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon almond extract
3 cups golden raisins
½ cup red candied cherries
1 cup candied mixed fruit peel
1 (15 ounce) can crushed pineapple with juice

Steps:

  • Line an angel food pan with parchment paper and brush with melted butter.
  • Cream butter or margarine, and then beat in sugar. Beat in eggs one at a time, beating well after each addition. Stir in extract. Mix in flour, baking powder, and salt. Stir in raisins, cherries, pineapple, and mixed peel. Cover bowl and let sit at room temperature, 8 hours to overnight.
  • Bake at 300 degrees F (150 degrees C) for 2 1/2 hours with a pan of hot water placed on the lowest rack of your oven during baking. Brush warm cake with some melted butter.

This is the finishing touch to our Christmas dinner. My family always claimed they didn't like fruitcake, but they love this one! For the best flavor, let it sit overnight before slicing.

1 cup chopped candied cherries
1 cup chopped candied pineapple
2 cups chopped pecans
4 cups all-purpose flour, divided
2 cups butter, softened
2 cups sugar
6 large eggs, room temperature
2 teaspoons vanilla extract
1 teaspoon baking powder

Steps:

  • In a bowl, combine the cherries, pineapple, pecans and 1 cup flour; set aside. In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each. Beat in vanilla. Combine baking powder and remaining flour; gradually add to creamed mixture. Fold in fruit mixture., Spoon into a greased and waxed paper-lined 10-in. tube pan. Bake at 300° for 1-3/4 to 2 hours or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Remove waxed paper while warm; cool completely before slicing.

500 g mixed dried fruit
1 cup brown sugar
155 g butter
1 (450 g) can crushed pineapple
2 eggs
1 cup plain flour
1 1/2 cups self raising flour
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda

Steps:

  • Place mixed fruit, sugar, butter and pineapple including juice into a saucepan.
  • Simmer for 5 minutes.
  • Allow to cool.
  • Beat eggs slightly and stir into fruit mixture.
  • Sift together the flours, spice and bircarbonate of soda.
  • Fold into fruit mixture.
  • Place mixture into a greased and lined 30cm cake tin.
  • Bake in a moderate oven for 90 minutes.
  • Test after 90 minutes.

I got this recipe from my friend Julie, and her version does not have the mixed spice in it, but I love it with the spice in. Not a traditional fruitcake, but a lovely light fruity cake.

1 (15 ounce) can crushed pineapple
4 ounces butter
12 ounces raisins
1 cup sugar
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda
1 pinch salt
1 cup self raising flour
1 cup plain flour
2 beaten eggs

Steps:

  • Put in pan crushed pineapple and juice, butter, raisins, sugar, spice, bicarbonate soda and pinch of salt.
  • Boil for 10 minutes, watch that it does not boil over with the bicarbonate of soda in it!
  • Cool and then add the beaten eggs and flours.
  • Put into an 8x8-inch tin that has been lined with baking paper.
  • Bake at 350°F for approximately 1 hour.

1 cup brown sugar
1 (405 g) can crushed pineapple
1 teaspoon mixed spice
1 cup plain flour
1 cup self-rising flour
2 eggs
4 cups mixed dried fruit, apples, pear, apricot sultanas, peaces
1 teaspoon baking powder
4 ounces butter
brandy, enough to cover the fruit

Steps:

  • Place sugar, pineapple undrained fruit in a bowl and cover with brandy. Let sit for 24-72 hours.
  • Then put it in to a saucepan with baking powder and butter.
  • Bring to boil and boil for 3 minutes.
  • Remove from the heat and cool completely.
  • Sift flours and mix into the cold fruit mix with well beaten eggs.
  • Put the mixture into a greased and lined 8" 20 cm cake tin.
  • Back at 350°F 35-50 minutes.
  • Note: cover with a brown paper bag if it is not cooked in the middle to stop the top from burning.
  • Also I sometime use Angas Park Fruit Medley 375g packet x2.

This is a recipe I made up in 1979. I wanted to make something quick and easy. Took me quite a few tries before it turned out though. I entered it in the county fair and took first place plus the gold ribbon which entitled me to enter the State Fair. So I entered the State Fair and came in second. I was told that if I had told the judges it was an original recipe, I would have taken first place. This was the very first time I had ever entered anything like this before, for both fairs and I guess you could say I was wet behind the ears. Oh well, I sure did have fun.

2 cups all-purpose flour
½ teaspoon baking powder
2 tablespoons baking soda
1 ¾ cups white sugar
3 eggs
¾ cup maraschino cherries, drained and halved
1 (20 ounce) can crushed pineapple, with juice
1 cup chopped walnuts
1 cup butter, softened
3 cups confectioners' sugar
1 ½ teaspoons vanilla extract
2 (8 ounce) packages cream cheese, softened

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch Bundt pan.
  • In a large bowl, combine the flour, baking power, baking soda, sugar, eggs, cherries, pineapple and walnuts. Stir by hand with a sturdy spoon just until blended. Spoon into the prepared pan, and spread evenly.
  • Bake for 40 to 45 minutes in the preheated oven, or until the top springs back when lightly touched. Cool, then invert onto a serving plate. While the cake cools, mix together the butter, confectioners' sugar and vanilla in a medium bowl with an electric mixer until fluffy. Stir in the cream cheese, and beat until smooth. Frost cake with the icing when completely cool.

1 cup dried apricots
1 cup water
¾ cup butter
1 cup white sugar
4 eggs
1 cup golden raisins
1 pound red and green candied cherries
6 candied pineapple slices
1 pound dried mixed fruit
2 cups all-purpose flour, divided
½ teaspoon baking soda
½ teaspoon salt
½ cup apricot nectar
1 cup chopped walnuts

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Grease two 9 inch tube pans.
  • In a saucepan over medium heat cook apricots in the water until they are mushy. Press them through a sieve and let them cool.
  • Separate the eggs. Beat the egg yolks until lemony colored. Then beat the egg whites until stiff peaks are formed. Set aside.
  • Cream the butter or margarine and sugar together. Add the beaten egg yolks and the apricots, and mix thoroughly.
  • Combine the raisins, candied cherries, candied pineapple, and mixed dried fruits in a bowl coated with one cup of the flour.
  • Combine the remaining flour, baking soda, and salt. Add this flour mixture alternately to the creamed mixture with the apricot juice. Blend this batter into the mixed fruits. Add the chopped pecans or walnuts and fold in the beaten egg whites. Turn the batter into the prepared pans.
  • Bake at 275 degrees F (135 degrees C) for 2 hours. Garnish cakes with candied pineapples and cherries. Makes about 24 servings.

1 lb white raisins (golden)
1 (14 ounce) can crushed pineapple
4 ounces approx liquor (rum, brandy, wine, whatever!)
1/4 cup flour
1/2 lb red glace cherries
1/2 lb glace green cherries
4 ounces mixed peel (or whatever a small package is)
3/4 cup butter
1 cup sugar
3 eggs, beaten
2 1/4 cups flour
2 teaspoons baking powder
1 teaspoon salt

Steps:

  • Line bottom and sides of springform pan or loaf pan with one layer of brown paper and one layer of waxed paper.
  • Let stand overnight in a bowl (in the fridge): 1 lb. raisins and the can of crushed pineapple with some of the liquid replaced with the liquor. (Your choice how much.).
  • In a large bowl, cut up the red and green cherries and mixed peel and dust with 1/4 cup flour.
  • In another bowl, cream the butter and sugar.
  • Add the beaten eggs.
  • In another bowl, sift together the 2 1/4 cups flour, baking powder and salt.
  • Add flour mixture to creamed mixture and combine.
  • Add pineapple and combine.
  • Add other fruit last.
  • Bake at 275 degrees F for 3 hours. (Place a pan of water in the oven while cake bakes.).

I may substitute 1/2 cup coconut rum for half the pineapple juice when I make it. NOTE: Cake needs to mellow for 2 weeks before serving.

Steps:

  • Preheat oven to 300*. Grease and flour (3) 8" x 4" loaf pans.
  • Mix fruits, nuts and coconut; set aside.
