Number Of Ingredients 10

1 can (8 ounces) crushed pineapple
1/2 cup shortening
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1-1/2 cups confectioners' sugar

Steps:

  • Drain pineapple, reserving 3 tablespoons juice. Set pineapple aside; set juice aside for frosting. In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in egg. Add pineapple and vanilla; mix well. Combine the flour, baking powder, baking soda and salt; stir into the creamed mixture. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 325° for 17-20 minutes or until golden brown. Remove to wire racks to cool., For frosting, in a small bowl, combine confectioners' sugar with enough of the reserved pineapple juice to achieve a smooth spreading consistency. Frost cooled cookies.

Number Of Ingredients 11

1 c margerine (her recipe says "oleo" lol)
1 c brown sugar
1 c white sugar
2 large eggs
1 c 8oz can crushed pineapple / do not drain (reserve two tablespoons for frosting with both liquid and pineapple)
1 tsp vanilla extract
4 c all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c chopped walnuts

Steps:

  • 1. preheat your oven at 350 degrees In a large mixing bowl cream your butter, brown and white sugar. There is no need for a mixer on any part of this recipe.
  • 2. add your eggs, pineapple and vanilla.
  • 3. In another mixing bowl, blend your flour, soda, baking powder and salt. Gradually add the dry ingredients to the wet. Fold in your nuts.
  • 4. Drop by spoonfuls on a lined cookie sheet with parchment paper. Bake for 12 to 15 minutes or until they start to brown.
  • 5. Let cool on a cooling rack. Frost with pineapple butter cream frosting
  • 6. Make your frosting
  • 7. After your cookies are cooled frost a little or a lot! These cookies stay soft and are absolutely heavenly. The amount you get depends on if you want them big or tiny. "Enjoy"

We love pineapple at our house. This unique cookie recipe was found in a family members cookbook collection and I snagged it. I make them at Christmas time for gifts but would be great in the summer too! They are a nice change from the usual flavors and turn out so light and fluffy like soft cake. Enjoy!

3/4 c granulated sugar
1 c butter, softened
1 tsp pure vanilla extract
1 large egg
2 c unbleached all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
18 oz can crushed pineapple in juice (not syrup), drain and reserve juice
1/2 c chopped pecans
FROSTING
2 1/2 c powdered sugar
3-4 Tbsp reserved pineapple juice

Steps:

  • 1. Preheat oven to 350
  • 2. In a large bowl, combine granulated sugar and butter. Beat with electric mixer until light and fluffy. Add vanilla and egg. Beat well
  • 3. Lightly spoon the flour into the measuring cup and level off each time. Stir the remaining dry ingredients together in a separate bowl. Add dry ingredients to wet ingredients with mixer or spoon.
  • 4. Add drained pineapple and pecans. Mix thoroughly.
  • 5. Drop teaspoonful balls 2 inches apart on an ungreased cookie sheet. Bake 11-16 minutes. Allow to cool completely before frosting.
  • 6. FOR FROSTING: simply combine powdered sugar with reserved pineapple juice until desired thickness/thinness. Dip the tops of cooled cookies into the frosting or spoon it over them on a wire rack. Allow to set. ENJOY!

1 cup brown sugar
1 cup sugar
1 cup butter flavor shortening
2 eggs
1 teaspoon vanilla
4¼ cups flour
1½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
1 cup crushed pineapple ((drained - reserve juice for frosting))
½ cup butter (softened to room temperature)
2 cups powdered sugar ((add a little more if you need to thicken it up))
pineapple juice from above
½ teaspoon vanilla

Steps:

  • Cream together brown sugar, sugar, butter shortening, eggs and vanilla.
  • Then add in the flour, baking powder, baking soda, salt, and drained crushed pineapple. Stir together until blended.
  • Drop dough onto ungreased cookie sheet, or line your cookie sheet with a silpat baking sheet. If your dough is thick enough you could also roll it into 1 1/2 inch balls. Bake at 400 degrees for about 10 minutes.
  • Cool completely.
  • Mix softened butter with powdered sugar.
  • Add in about 2 Tablespoons pineapple juice that you reserved from the crushed pineapple and vanilla. If you need to thicken up the frosting add more powdered sugar. If it's too thick add a little more pineapple juice.
  • Spread frosting on cooled cookies. Top with drained crushed pineapple.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease or line 16 cupcake cups with paper liners.

8 ounces crushed pineapple, drained

6 tablespoons butter
1 1/2 cups powdered sugar
1 teaspoon vanilla
3 tablespoons reserved pineapple juice

Steps:

  • Preheat oven to 375°. Place Crisco and sugar in large bowl, beat on low speed until creamed, about 30 seconds. Add the eggs, one at a time, beating well after each--about 1 minute.
  • Add the pineapple and beat 15 seconds to mix in, turn off the machine.
  • In small bowl, combine the flour, baking soda and baking powder and salt.
  • Stir in the dry ingredients to batter with wooden spoon. Fold in walnuts.
  • Drop the batter on baking sheets, bake until set and beginning to brown, about 8 minutes.
  • Remove the cookies from oven and cool on wire rack.
  • To prepare FROSTING.
  • Sift powdered sugar into a large bowl. Place butter in pan over medium heat and Stir and cook until butter melts and browns.
  • Remove the pan from heat, stir in pineapple juice and vanilla and pour the liquid mix over sugar, whisking till smooth.
  • Frost cookies.
