Categories     dessert

Time 13h30m

Yield 8 servings

Number Of Ingredients 18

2 cups gingersnap crumbs
6 tablespoons melted butter, plus extra butter for pan
1/4 cup sugar
Pinch salt
2 (8-ounce) packages cream cheese, at room temperature
1 (12-ounce) log goat cheese
12 ounces creme fraiche or sour cream
4 eggs
1 cup sugar
2 teaspoons vanilla extract
Vanilla Pineapple Compote, recipe follows
Special equipment: 9-inch springform pan
1 cup brown sugar
1 1/2 cups water
1 cup rum
2 vanilla beans, split, seeds scraped and reserved
1/2 lemon, juiced
1 ripe pineapple, top, skin and core removed, cut into bite-size wedges

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the crust:
  • Stir all of the ingredients together in a large bowl. Butter a 9-inch springform pan. Press the crumb mixture onto the bottom and about halfway up the sides of the pan.
  • To make the filling:
  • Beat the cream and goat cheeses in the bowl of an electric stand mixer with the paddle attachment until light and fluffy. Add the creme fraiche and beat to combine. Add the eggs, 1 at a time, beating after each egg is added, until thoroughly combined. Beat in the sugar and vanilla until just combined.
  • Pour the filling into the prepared crust. Put on a baking sheet in the preheated oven and bake for 55 to 60 minutes. Rotate the baking sheet halfway through the cooking process. If the cheesecake starts to color, tent the springform pan with aluminum foil.
  • Remove the cheesecake from the oven and let it cool completely before serving, as it continues to set as it cools. It is best to refrigerate overnight before serving. Cut the cake into wedges and serve with Vanilla Pineapple Compote.
  • Say cheesecake!
  • Combine the brown sugar, water, rum, and vanilla beans in a saucepan over medium heat. Squeeze the lemon juice into the pan and stir to combine. Bring to a simmer, add the pineapple and stir until well mixed. Simmer until the liquid has reduced to a syrupy consistency and the pineapple is soft.
  • Let cool and serve as an accoutrement to yummy desserts like goat cheese cheesecake!

GOAT CHEESE POTATO GRATIN

Goat cheese potato gratin image

Simple and easy recipe for a comforting goat cheese potato gratin made with sliced potatoes, garlic, milk, cream, and egg.

Provided by Layla Pujol

Categories     Side Dish

Number Of Ingredients 9

8 small to medium sized Yukon gold potatoes (sliced thinly)
1 cup whole milk
1 cup crumbled goat cheese + ¾ cup crumbled goat cheese for topping
6 garlic cloves
1 egg
1 tsp salt
1 cup heavy cream
Fresh ground pepper
Fresh herbs (thyme (oregano and rosemary)

Steps:

  • Pre-heat oven to 375° F.
  • Arrange potato slices in a 8×15 baking pan or in small gratin dishes, arrange the slices in a way that small spaces are left (to allow the sauce to distribute evenly).
  • Combine the milk, 1 cup of goat cheese, whole garlic cloves, egg, and salt in a blender and mix until all the ingredients are well combined.
  • Add the heavy cream to the blended mix and stir lightly, don't blend the cream or the sauce will become too thick, which keeps the sauce from seeping between the potatoes.
  • Pour the sauce over the potatoes, it should barely cover them but should seep through the layered potato slices.
  • Bake for about 30-40 minutes, until the top begins to golden.
  • Remove from oven, sprinkle with remaining crumbled goat cheese, ground pepper and fresh herbs.
  • Turn the broiler on and return pan to oven, broil for about 5 minutes or until goat cheese begin to brown.
  • Let cool for about 10 minutes before serving to allow the sauce to solidify.

Yield Makes 4 potato cakes

Number Of Ingredients 7

two 1/2-pound russet (baking) potatoes
6 large shallots, sliced (about 1 cup)
2 garlic cloves, sliced
1 cup fine dry bread crumbs
a 3 1/2-ounce log of soft mild goat cheese such as Montrachet, at room temperature
1/4 cup minced fresh chives or scallion greens
1/2 stick (1/4 cup) unsalted butter

Steps:

  • In a saucepan combine the potatoes, peeled and cut into 1-inch pieces, the shallots, and the garlic with enough cold water to cover the mixture by 1 inch and simmer the mixture for 10 to 15 minutes, or until the potatoes are tender. Drain the potato mixture, return it to the pan, and steam it over moderate heat, shaking the pan, for 30 seconds, or until any excess liquid is evaporated. Force the potato mixture through a ricer or the medium disk of a food mill into a bowl and stir in 1/2 cup of the bread crumbs, the goat cheese, the chives or scallions, and salt and pepper to taste. Form 1/2-cup measures of the mixture into four 3/4-inch-thick cakes, transferring the potato cakes as they are formed to a plate covered with the remaining 1/2 cup bread crumbs, and coat the potato cakes with the crumbs.
  • In a large heavy skillet heat the butter over moderately high heat until the foam subsides and in it sauté the potato cakes, turning them once, for 5 minutes on each side, or until they are crusty and golden brown.

Provided by Molly O'Neill

Categories     weekday, salads and dressings, side dish

Time 30m

Yield 4 servings

Number Of Ingredients 17

1 cup soft goat cheese
1 1/4 cups riced or mashed potatoes
1/2 cup fresh bread crumbs
3/4 cup grated aged goat cheese
2 tablespoons minced scallion tops
1/4 cup minced flat-leaf parsley
3/4 teaspoon nutmeg
Salt and finely ground pink peppercorns
2/3 cup ground pecans
1 tablespoon safflower oil
1 tablespoon champagne vinegar
3 tablespoons olive oil
2 teaspoons minced shallots
1/2 teaspoon salt
A few grinds pink peppercorns
2 bunches watercress, washed and tough stems removed
2 heads Belgian endive, sliced into strips

Steps:

  • To make the cakes, place the soft goat cheese in a food processor and process until smooth. Transfer the cheese to a large bowl and add the potatoes and bread crumbs; mix until smooth. Add 1/4 cup of the grated cheese, scallions, parsley and nutmeg and toss with a fork until combined. Season to taste with salt and a few grinds of pink peppercorns.
  • Using your hands, form the mixture into balls about the size of golf balls. (You should have about 12.) Flatten the balls into disks about 1/2-inch thick. Place the ground pecans on a plate and coat each disk with pecans. Heat a large skillet over medium heat and add the oil. Add the potato cakes and cook until nicely browned (lower the heat if the nuts begin to burn), about 2 minutes per side. Transfer to a plate and keep warm.
  • To make the salad, whisk together the vinegar, olive oil, shallots, salt and pepper in a large bowl. Place the watercress and endive in the bowl and toss to coat. Add the remaining grated cheese and toss again.
  • Divide the salad between 4 plates and top each with a few warm potato cakes and serve immediately.

  • Mix the goat cheese, potato, cream, herbs, yolk, paprika and a grind of pepper in a bowl. Mix well till incorporated.
  • Prepare a tray with baking paper ready to lay the goat croquettes on once rolled. Take a scoop of the potato mixture, approximately the size of a golf ball from the bowl and roll firmly with your hands. (I made a longish almost flat shape so the croquettes cook in a small amount of oil and turn easily.) The mixture should not be wet, it will stick together easily. If you find that your mixture is wet due to the potatoes holding water you may need to add the 1 Tablespoon extra flour.
  • Keep rolling the mixture till you have evenly sized ovals on the tray. Check to make sure they are all the same size by pinching off a bit here and there to even them out, reshaping as you go.

  • Plunk the potatoes in a large pot and pour in enough cold water to barely cover the spuds. Season the cooking water with salt (it should taste like the sea) and bring to a boil. Cook on medium-high heat until the potatoes are tender but not mushy, 10 to 15 minutes or so, depending on the size of your spuds. Drain the potatoes, place them in a large bowl, and roughly mash them with a fork or a potato masher. Let cool slightly.
  • Add the parsley, scallions, goat cheese, and salt and pepper to the potatoes and mix until just combined, making certain that blobs of goat cheese are still visible. Cover and refrigerate until chilled through, at least 6 hours.
  • Using your hands, form the mixture into a 1-inch-thick block on a lightly floured countertop and cut it into rectangular cakes about 2 1/2 inches along their long side or, if you prefer, use a 2 1/2-inch round biscuit or cookie cutter to cut out individual potato cakes. You should have at least 12 cakes (and, quite possibly, more). Place the flour on a plate and lightly flour the cakes on both sides.

  • In a medium mixing bowl, thoroughly combine mashed potatoes, eggs, salt and pepper. Mix in corn, poblano and jalapeno peppers, cheese and cilantro. Place back in refrigerator for at least 30 minutes to chill.
  • Preheat a large skillet over medium heat. Add a T olive oil to hot pan and, using a spoon, drop one large spoonful (about half a cup) into pan and spread out into a thin circle using the back of the spoon. Continue this step until you have 3-4 large patties in your skillet (depends on size of your pan). Allow to brown well, then flip (see tips, above). Continue to allow patties to brown on both sides, then slide out of pan and onto individual salad plates (the patties can be served hot or at room temperature). Repeat with remaining potato mixture until it’s gone (you should have approximately 10 patties), adding additional olive oil to the pan as needed. (To make as appetizers, make 1-inch patties, be sure to brown well so they hold together when picked up).
  • For sauce: In a food processor (I use a hand blender, it works great) pulse together all remaining ingredients until smooth. Set aside.
  • Place patties on serving dish or individual plates. Top with avocado sauce and crumbled cotija cheese. (Halved cherry tomatoes or salsa are also delicious!)
