TROPICAL ESCAPE SOFT PINEAPPLE CRUMBLE BARS

Tropical Escape Soft Pineapple Crumble Bars image

In need of a tropical pineapple dessert? Look no further than these pineapple bars! There's an abundance of pineapple chunks in every bite, which are surrounded by a custardy, creamy filling!

Provided by Averie Sunshine

Categories     Bars & Blondies

Time 2h

Number Of Ingredients 10

1/2 cup unsalted butter, softened (1 stick)
1 cup all-purpose flour
1/2 cup granulated sugar
pinch salt, optional and to taste
1 large egg
1/2 cup granulated sugar
1/3 cup sour cream (plain or vanilla Greek yogurt may be substituted)
1 1/2 teaspoons McCormick Pure Vanilla Extract
1/4 cup all-purpose flour
one 20-ounce can pineapple chunks, drained (fresh or frozen could likely be substituted)

Steps:

  • Preheat oven to 350F and line an 8×8-inch pan with aluminum foil, spray with cooking spray; set aside.
  • To a large bowl, add the butter, 1 cup flour, 1/2 cup sugar, and optional salt. Using two forks or a pastry cutter, cut butter into dry ingredients until a sandy mixture with peas-sized buttery bits forms.
  • Reserve 3/4 cup of this mixture; set aside.
  • Transfer remaining mixture into prepared pan and using your fingertips or the back of a spatula, lightly press crumbs evenly into pan to form a crust.
  • Bake for 10 minutes. While crust bakes, make the filling.
  • In a large bowl (same one used to make the crust mixture is fine) add the egg, 1/2 cup sugar, sour cream, vanilla extract, 1/4 cup flour, and whisk until smooth; set aside.
  • Remove crust from oven and top evenly with pineapple chunks. About 90% of the surface area will be covered with pineapple; chunks will be very close to each other but not quite touching.
  • Carefully and evenly pour the sour cream mixture over the pineapple, making sure to get it into the corners.
  • Evenly sprinkle the reserved crust mixture over the top to create the crumble topping.
  • Bake for about 35 minutes, or until edges and top are set.
  • Place pan on top of a wire rack and allow bars to cool for at least 1 hour before slicing and serving.

  • Pineapple Upside Down Cake. I’m not quite sure why it is called a ‘pineapple upside-down cake’ as it is rare to see a cake with the fruit topping on the bottom!
  • Pineapple Coconut Popsicles. Pineapple is considered a tropical fruit. Maybe that is why it works so well with another beachside favorite… The humble coconut.
  • Pineapple Cupcakes. By the time I’ve skinned and chopped pineapple, I want my workload to be as low as possible. That’s why I cheat a little and use a pre-made cake mix.
  • Easy Pineapple Dessert. Did I mention I like low effort desserts? Well, here I another that relies upon and a few little pre-made cheats. Three ingredients and a mouthful of taste… What could be better than that?
  • Pineapple Cheesecake. Is there a person in the world who doesn’t like cheesecake? When it is as good as this, it’s easy to see why. Starting at the bottom, you’ve got sweet and savory graham crust, then a thick layer of tangy and slightly sweet cream cheese, all topped off with juicy slices of pineapple.
  • Easy Pina Colada Pie. Do you like pina coladas? (That reminds me of a song… I can’t quite remember the name) Do you like pie? Well, how’s about we combine both?
  • Pineapple Upside Down Donuts. Ok, so these are upside-down donuts, and you could always flip them on the plate. Pineapples are the ideal donut topping as they are big, round, and have a hole in the middle, just like donuts!
  • Pineapple Bread Pudding. Bread pudding is traditionally made with raisins. As they cook, they break down slightly and swell, making them super juicy. Well, what works for raisins also works exceptionally well with pineapple.
  • Pineapple Pudding. Desserts made with condensed milk are an Indian specialty. The best bit is that it isn’t too heavy. It’s also really easy to knock up in minutes, so if you require a sweet treat after a busy day of working (or cooking), it could be ideal.
  • Pineapple Candy. Candying fruit is an age-old way of making it last longer… Not pineapple candy will have a chance as it will be snaffled up in minutes.
