BISCUIT TOPPED ITALIAN CASSEROLE
Biscuit Topped Casserole made with tomato sauce, veggies, and beef topped with mozzarella cheese and refrigerated biscuits, this casserole will warm your family and fill them up for sure!

Steps:
- Brown ground beef in pan, drain, and set aside.
- Sauté onion in pan over medium heat until tender and translucent.
- Add garlic and sauté until just fragrant, about 30 seconds.
- Stir in tomato sauce, water, and tomato paste.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in thawed vegetables and 1 cup cheese and pour mixture into a greased 9 x 13 baking dish.
- Top with remaining 1 cup cheese.
- Remove biscuits from tube and separate each horizontally so that you have 16 thinner biscuits.
- Arrange biscuits around the edge of the dish overlapping as necessary to fit them all.
- In a small bowl, combine butter, oregano, and garlic powder.
- Brush over tops of biscuits.
- Bake at 350 for 15 - 20 minutes or until biscuits are browned on top and cooked through (gently lift one of the biscuits off of the top of the casserole to be sure it has cooked on the bottom).
- Allow dish to rest 5 minutes before serving.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomato sauce, water and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. - Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Cut each biscuit into 8 pieces; place in prepared dish. Add sauce, green onions and bell pepper and stir to blend well.
- Bake until top is set and almost firm to touch, about 35 minutes. Sprinkle cheese over evenly. Bake until cheese melts, about 5 minutes longer. Let stand 10 minutes. Cut into squares and serve.

- Preheat oven to 350°F.
- In a large pot of boiling salted water, cook rigatoni according to package directions until al dente; drain.
- Combine tomato sauce with seasonings, and simmer, uncovered, for 10 minuntes.
- Add sauce to pasta and toss to coat.
- In a baking dish, arrange pasta and cheese in layers, ending with cheese.
- Pour melted butter over all.
- Bake, covered, for 15 minutes.
- Uncover, and bake for another 15 minutes.
- To freeze: Undercook pasta by a minute or two. Assemble dish as directed. Wrap with plastic wrap and then foil. Label and freeze.

- Preheat the oven to 375 degrees F.
- In a large nonstick skillet, brown the ground beef with the onion and green pepper. Drain off any excess fat.
- Stir in the tomato sauce, chili powder, and garlic salt. Let simmer.
- Separate the biscuit dough into 10 biscuits; split each in half. Press 10 biscuit halves over the bottom of an ungreased 8-inch or 9-inch square baking pan.
- In a bowl, mix 1/2 cup of the cheese with the sour cream and egg.
- Remove the meat mixture from the heat and stir in the sour cream mixture. Spoon over the biscuit dough.
- Arrange the remaining biscuit halves on top. Sprinkle with the remaining 1 cup of cheese.
- Bake for 25 to 30 minutes, until golden brown.

- In a large skillet, over medium heat, melt butter. Stir in the onions, cooking until tender and translucent, about 3-5 minutes.
- Immediately remove the skillet from heat. Mix in the sour cream, mayo, cheese, oregano, garlic stirring until equally incorporated and the cheese has melted. Salt and pepper the sauce, to taste.
- Spray a 9x13 baking dish with non-stick cooking spray. Spread the 8 biscuits out evenly into the pan. Use your fingers to press them out further, until they're all touching and completely spread out over the bottom of the pan. Seal the seems together so the pan's covered and press the outer edges up the sides slightly, just enough to form a tiny lip.
- Layer the sliced tomatoes evenly out over the thin layer of dough. Use a spatula to spread the cheese sauce evenly out overtop of the tomatoes. Sprinkle the prepared casserole with a little smoked paprika.
