VEGETABLE CURRY
Vegetable curry recipe with coconut milk, pineapple, and chickpeas (or beans)! This healthy comfort meal is vegan, gluten-free, oil-free, easy to make and can be also prepared in a slow cooker.

Steps:
- Chop the veggies + onion and put everything in a large pan or pot with a little water (or use oil, if not oil-free) and fry on medium heat for about 8-9 minutes. Add the garlic and fry for a further minute. Stir frequently.
- Drain and rinse chickpeas (or beans of choice) and add them to the pan together with the pineapple chunks.
- Add coconut milk, all spices + salt and pepper to taste. Simmer for about 10 minutes or longer (for a thicker curry). You can also add 1-2 tsp of cornstarch (mix it with some coconut milk before you add it) to make the curry sauce even thicker.
- Serve the curry with cooked rice of choice, potatoes, or naan bread. Garnish with fresh coriander. Enjoy!

- Blend 1/2 cup crushed pineapple and cream of coconut in a blender until smooth. Add heavy cream and pulse to blend; pour into a bowl.
- Fold remaining crushed pineapple into the blended mixture. Cover bowl with plastic wrap and refrigerate at least 30 minutes.

CRUSHED PINEAPPLE AND COCONUT COOKIES
This crushed pineapple and coconut cookie is similar to one sold in a regional grocery store in the Southeast. There are several similar recipes out there, and this is the best combination of them!

- Preheat the oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Spread pecans and coconut onto a baking sheet.
- Toast in the preheated oven until coconut is very light golden brown and pecans become fragrant, 5 to 7 minutes. Remove from the oven and let cool, about 10 minutes. Leave the oven on.
- Pulse oats in a blender or food processor until slightly ground.
- Mix brown sugar, white sugar, and butter together in a bowl. Add pineapple, egg, vanilla extract, and almond extract.
- Mix oats, flour, baking powder, and salt together in a small bowl; mix into the wet ingredients. Stir in toasted coconut and pecans. Drop by spoonfuls onto the prepared cookie sheets.
- Bake in the preheated oven until edges are golden, 12 to 15 minutes. Cool on the cookie sheets for 1 minute before removing to a wire rack to cool completely.

- Preheat oven to 325°F. Flatten crust on lightly floured surface; press seams together if necessary. Fit into 9-inch-diameter glass pie dish; crimp edges.
- Arrange pineapple in crust. Combine sugar, flour and salt in medium bowl. Add eggs and butter and blend well. Pour batter evenly over pineapple. Sprinkle coconut and nuts over and press lightly into batter. Bake until light brown and center is firm to touch, about 1 hour 15 minutes. Transfer to rack and cool completely.
PINEAPPLE COCONUT NOODLES
This dish has proven a big hit in my home. You can get all the ingredients in the Asian foods section of any well-stocked supermarket or natural foods store.

- Cook the noodles in plenty of rapidly simmering water until al dente, then drain.
- Meanwhile, heat the oil in a stir-fry pan. Add the garlic and sauté over low heat until golden. Add the coconut milk and pineapple, then whisk in the curry paste. Add the lemongrass, lime juice to taste, sugar, and salt.
- Add the cooked noodles to the coconut mixture, along with half the scallions and cilantro to taste. Remove from the heat. If you'd like a spicier dish, stir in small amounts of additional curry paste (dissolved in a little water) until the effect is as spicy as you'd like. Serve at once, passing around the remaining scallions and the peanuts for topping.
- Pair this easy recipe with a basic protein dish. Good choices are BBQ-Flavored Skillet Tofu (page 62), Cornmeal-Crusted Seitan (page 63), and Tempeh Fries with Horseradish or Wasabi-Dill Mayonnaise (page 78). Add a platter of grape or cherry tomatoes, sliced bell peppers, baby corn, and carrots.

- First, toast your sesame seeds in a frying pan until they turn golden brown. Remove from the pan into a bowl to prevent further browning. Reserve the pan for stir frying the vegetables.
- Heat 1 tbsp of oil in the reserved pan on medium-high heat. Tip in red onion wedges and chopped green pepper and stir fry for 4 minutes. Then, add pineapple chunks and stir-fry for 2 more minutes. Pineapaple should caramelise slightly, onions and peppers soften but still retaining some crunch.
- In the meantime, prepare your stir-fry sauce. Heat a small saucepan and add curry powder together with chilli flakes. Dry-cook on medium heat for a minute until fragrant. Cut 50g of creamed coconut block into pieces and tip into the spices. Reduce the heat to low. Add pineapple juice from the tin and soy sauce. Stir to combine everything into a thick sauce. Add 2-3 tbsp of water to loosen and take off the heat. It should be pouring cream consistency.
