  • Segment 1 grapefruit and 2 oranges; reserve the juices. Toss the segments with 1 cup pineapple chunks, 1/4 cup mint leaves, 1 tablespoon agave and 1 teaspoon grated peeled ginger. In another bowl, beat 1 cup cottage cheese with the reserved citrus juice until creamy. Serve the cottage cheese with the fruit salad around it. Top with toasted coconut and mint leaves.

1 (20 ounce) can pineapple chunks, juice reserved
2 apples, peeled and cored
1 (21 ounce) can peach pie filling
2 bananas, peeled and diced
3 kiwis
1 pint strawberries

Steps:

  • In a small bowl, toss the chopped apples in reserved pineapple juice. Allow to sit for 5 to 10 minutes.
  • In a large salad bowl, combine the peach pie filling and pineapple chunks.
  • Remove apples from pineapple juice and add to pie filling and pineapple mixture. Add chopped bananas to reserved pineapple juice and let sit for 5 to 10 minutes.
  • Peel and slice kiwi and 1/2 of strawberries. Chop the other 1/2 of strawberries and set aside.
  • Remove bananas from pineapple juice and add to pie filling mixture. Add chopped strawberries; toss together.
  • Arrange kiwi slices around the edge of the serving bowl and alternate with strawberry slices. Chill and serve.

1 can (20 ounces) unsweetened pineapple chunks
1/4 cup reduced-fat margarine
2 tablespoons lemon juice
1 tablespoon cornstarch
2 tablespoons water
Artificial sweetener equivalent to 2 tablespoons sugar
3 cups chopped apples
2 cups green grapes
2 teaspoon poppy seeds
3/4 cup chopped pecans, toasted

Steps:

  • Drain pineapple juice into a saucepan. Add margarine and lemon juice; cook over medium heat until margarine is melted. In a small bowl, combine cornstarch and water until smooth; stir into juice mixture. Bring to a boil; boil and stir for 2 minutes. Reduce heat; add sweetener. Cool to room temperature, about 30 minutes. In a large bowl, combine pineapple, apples, grapes and poppy seeds. Add the dressing; toss to coat Cover and chill for at least 1 hour. Steps:

  • Drain pineapple, reserving juice.
