2 pounds beef top round steak, cut into 1-inch cubes
2 tablespoons olive oil
1 can (15 ounces) tomato sauce
2 large onions, chopped
4 medium carrots, thinly sliced
1 large green pepper, cut into 1-inch pieces
1 cup canned pineapple chunks, drained
1/2 cup cider vinegar
1/4 cup packed brown sugar
1/4 cup light corn syrup
2 teaspoons chili powder
2 teaspoons paprika
1/2 teaspoon salt
Hot cooked rice, optional

Steps:

  • In a large skillet, brown beef in oil in batches; drain. Transfer to a 4- or 5-qt. slow cooker. , In a large bowl, combine the tomato sauce, onions, carrots, green pepper, pineapple, vinegar, brown sugar, corn syrup, chili powder, paprika and salt; pour over beef. , Cover and cook on low for 8-10 hours or until beef is tender. Serve with rice if desired. Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary.

I made this up when I wanted to combine beef and pineapple. We had it over cauliflower rice (shred raw cauliflower in food processor, steam for some minutes and use like rice), and it was really yummy. You can use regular rice, too, of course.

1 pound(s) sweet potatos
1 cup(s) coconut milk, unsweetened
1 - shallot
2 clove(s) garliv
1 teaspoon(s) ginger, fresh, minced
1 tablespoon(s) coconut oil or cooking oil
5 ounce(s) pineapple pieces, drained
1 - medium eggplant
2 tablespoon(s) soy sauce
1 tablespoon(s) honey
- salt, to taste
- pepper, to taste

Steps:

  • Chop shallot and mice ginger and garlic, drain pineapple juice and reserve.
  • In a large pot, heat coconut or other oil for frying and brown beef on all sides.
  • Lower heat, add shallot, ginger and garlic, fry some more, season with some salt and pepper, then add coconut milk. Deglaze and stir well, then cover and simmer for about 40 minutes on low heat.
  • Meanwhile cube sweet potatoes (1 inch cubes) and eggplant.
  • After about 40 minutes, add sweet potatoes, eggplant, soy sauce and honey.
  • Continue simmering for about 30 minutes, then add the pineapple pieces. If there's not enough liquid, add reserved pineapple juice as needed.
  • Simmer for 15 more minutes and taste test for salt and pepper. Serve hot over rice or cauliflower rice.

2 Tbsp. KRAFT Zesty Italian Dressing
3 cups bite-size fresh pineapple chunks
6 serrano chiles, stemmed, seeded and finely chopped
1 lb. beef stew meat
1 can (14-1/2 oz.) fat-free reduced-sodium beef broth
1/4 cup lite soy sauce
3 Tbsp. cornstarch
3 Tbsp. water
1/2 cup PLANTERS Dry Roasted Peanuts, chopped
1/4 cup chopped red peppers
2 cups hot cooked spaghetti

Steps:

  • Heat dressing in large skillet on medium-high heat. Add pineapple and chiles; cook 3 to 5 min. or until lightly browned, stirring occasionally. Add meat; cook and stir 5 min. or until browned.
  • Stir in broth and soy sauce. Bring to boil; cover. Simmer on low heat 1 hour or until meat is tender, stirring occasionally.
  • Mix cornstarch and water. Add to meat mixture along with nuts and peppers; mix well. Bring to boil; simmer 1 to 2 min. or until thickened, stirring constantly. Serve over spaghetti.

Ina Garten couldn't possibly have known when she started working on her latest cookbook how much we'd all need comfort food right now. She came up with the concept for Modern Comfort Food more than two years ago, figuring the book would arrive just before the presidential election and that we might be a bit stressed. "Little did I know that 2020 would bring so much more," she says. "Right now I think we just want really simple comforting foods that make us feel good." In many ways, the book seems meant to be. "It was the easiest one I've ever written. I tend to gravitate toward comfort food anyway, and I found that the book just flowed in a way I don't ever remember." Many of the recipes are the culmination of years of experimentation and taste memories. This beef stew was inspired by the takeout stews Ina and Jeffrey ate in their tent when they camped outside Paris in the spring and summer of 1971. "Over the years I learned a lot about what makes beef stew really delicious," she says. "A nice red wine, short ribs instead of chuck. It's a classic recipe, just done in a more modern way."

3 tablespoons good olive oil
4 ounces small-diced pancetta
3 pounds boneless short ribs, cut in 1 1/2-inch chunks (4 1/2 pounds on the bone)
Kosher salt and freshly ground black pepper
1/4 cup Cognac or brandy
1 cup hearty red wine, such as a Côtes du Rhône or Chianti, divided
2 cups chopped yellow onions (2 onions)
2 cups chopped fennel, trimmed and cored (1 large bulb)
2 tablespoons minced garlic (6 cloves)
1 (14.5-ounce) can diced tomatoes, including the juices
2 tablespoons tomato paste
2 cups beef broth, such as College Inn
1 pound carrots, scrubbed and cut 1/2 inch thick diagonally
1 pound Yukon Gold potatoes, scrubbed, 1-inch diced
10 ounces frozen peas

Steps:

  • Preheat the oven to 300˚ F.
  • Heat the oil in a large (11- to 12-inch) Dutch oven over medium heat. Add the pancetta and cook for 4 to 5 minutes, until browned. With a slotted spoon, transfer the pancetta to a plate lined with a paper towel and set aside.
  • Meanwhile, season the short ribs all over with 2 teaspoons salt and 1 teaspoon pepper. Brown half the meat in the Dutch oven over medium heat, turning occasionally, for 5 to 7 minutes, until browned on all sides. Transfer the meat to a bowl and brown the second batch. (Don't cook them all in one batch or they won't brown!) Transfer the second batch to the bowl and set aside.
  • Off the heat, add the Cognac and 1/3 cup of the wine to the pot, scraping up any browned bits, then simmer over medium heat for one minute. Add the onions and fennel and sauté, stirring occasionally, for 7 to 8 minutes, until the vegetables are tender. Add the garlic and cook for one minute.
  • Stir the tomatoes and tomato paste into the vegetables. Add the remaining 2/3 cup of wine, the beef broth, the seared meat (and juices), 2 teaspoons salt and 1 teaspoon pepper. Bring to a simmer, cover and bake for 1 1/4 hours, checking occasionally to be sure the liquid is simmering.
  • Degrease the stew, if necessary. Stir in the carrots and potatoes, cover and bake for one hour longer, until the vegetables and meat are very tender when tested with a fork. Just before serving, stir in the peas and pancetta, taste for seasonings and serve hot in large, shallow bowls.

400g rump steak, thinly sliced
3tbsp soy sauce
2tbsp soft brown sugar
1tbsp chilli sauce
1tbsp rice wine vinegar
2tsp vegetable oil
thumb-sized piece ginger, cut into fine matchsticks
4 spring onions, cut into 3cm lengths
200g pineapple, cut into chunks
handful coriander leaves, to serve
rice and greens, to serve (optional)

Steps:

  • Mix the steak, soy sauce, sugar, chilli sauce and vinegar together, and set aside for 10 mins.
  • Heat a wok with 1 tsp of the oil. Lift the steak from the marinade and sear, in batches, then remove. Add a bit more oil and fry the ginger until golden. Add the spring onions and pineapple, and return the steak to the pan. Stir to heat through for 1 min, then add any remaining marinade. Keep stirring until the marinade becomes thick and everything is hot. Serve sprinkled with coriander, and with rice and greens, if you like.

1 1/2 teaspoon seasoning salt
1 teaspoon paprika
1 teaspoon ground ginger
1 1/2 lbs stew meat
3 Tablespoons olive oil
2 cloves of garlic
1 (20 ounce) can of pineapple chunks with juice
2 beef bouillon cubes
1/4 cup white vinegar
2 medium onions, chopped
1 (10 ounce) can mild Rotel tomatoes
3 Tablespoons brown sugar
2 Tablespoons cornstarch
1/4 cup water
2 Tablespoons soy sauce

Steps:

  • In a gallon size ziploc bag, add season salt, paprika, and ground ginger. Shake bag to mix. Add stew meat to seasoning, close bag and shake until all pieces are lightly covered. In a large skillet, add olive oil. Heat pan over medium heat. Once pan is hot, add stew meat. This may require a few batches (it took me 3 batches to do all of the meat). Sear the beef on each side. DO NOT FULLY COOK. Just get a nice sear on it to seal in the flavor. Once meat has a nice color, transfer to crock pot. Repeat with remaining batches. Add to crock pot, garlic, pineapple with juice, bouillon cubes, vinegar, onions and Rotel.. Cook on low for 4 - 6 hours (depending on your crock pot), until beef is cooked through and tender. In a small bowl combine brown sugar, cornstarch, water and soy sauce. Pour this over the beef, stir and cook on high for 30 minutes - 1 hour, or until mixture thickens. Serve over rice or mashed potatoes.

In a large nonstick skillet or wok, stir-fry beef in 1 teaspoon oil for 2-3 minutes or until no longer pink. Remove with a slotted spoon and keep warm., Stir-fry carrots and onion in remaining oil for 4 minutes. Add green pepper and snow peas; stir-fry 2-3 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add beef and pineapple; heat through. Serve with rice.
