PINEAPPLE, BANANA AND COCONUT SMOOTHIE
I made this smoothie, trying to copy a store-bought kind and this is so much better! The fresh pineapple gives it such a light, fresh flavour- it's just not the same with canned pineapple. If any of this smoothie makes it to the fridge, you may like to water it down with some pineapple juice as the coconut milk thickens as it cools.

- Press through a sieve, getting as much pulp through as possible to thicken the smoothie.

Made this frozen punch for Mothers day would be great for those summer BBQs. This can be made days before and placed in a punch bowl, which makes it easy for cooking and serving a family get together.

Steps:
- Place milk and pineapple chunks in blender and blend to mix the milk into the pineapples. This will have a slight chunky texture.
- Place in a very large bowl or pot with all the rest of the ingredients except for the optional seltzer.
- Mix and pour into 3 gallon freezer ziplock storage bags. Freeze overnight.
- Place into a punch bowl the icy mixture. You can add the optional seltzer if it`s to strong or to sweet for you. I kept it on the side for my guests to have an option to add if they want.

A delicious glass of tropical sunshine! The oats and flax seed add a nice thickness as well as added nutrition. Oats have a higher level of soluble fiber than other grains. Some other benefits of adding oats to your smoothie is the fact that they lower cholesterol, and are soothing to the digestive process. I like to blend the oats and flax in my liquid first, just to make sure they are pureed well. Then add your fruit!

This is our favorite banana loaf.A moist tender loaf with bits of crushed pineapple throughout. This recipe was found in a Robin Hood booklet many years ago. I have been making this loaf for many years. yield is 2 loaves.

- Combine first 5 ingredients.
- Beat remaining ingredients together in a large bowl until blended.
- Add dry ingredients stirring until thoroughly combined.
- Spread in two greased 81/2x41/2 loaf pans dividing evenly.
- Bake at 350°F for 60-70 minutes or until toothpick inserted in centre comes out clean.
- Cool 15 minutes in pan then remove to rack to cool completely.
