- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In a small bowl, whisk flour and baking powder; gradually add to creamed mixture, mixing well. Fold in coconut and walnuts., Press two-thirds of dough onto the bottom of a greased 13x9-in. baking pan. Spread with preserves; crumble remaining dough over preserves. Bake 30-35 minutes or until golden brown. Cool completely in pan on a wire rack. Cut into bars.

FRUITY TROPICAL BARS
A delicious combination of apricot, pineapple, and coconut give these bars a tropical flare...they can be made and served any time of the year...Enjoy! Photos are mine.

Steps:
- 1. Preheat oven to 350 degree F. You will be using a 9 x 13 pan, either sprayed with cooking spray, or lined with foil. Leave edges of foil overhang for removing bars after cooled...totally optional. I didn't use foil this time..
- 2. I used my food processor throughout this whole recipe. You can of course make it with a hand held mixer. For crust: in the bowl of your food processor, pulse to combine flour, powdered sugar and baking powder.
- 3. Now add the butter chunks and pulse till crumbly.
- 4. Pour into prepared pan, and pat crust into place, evenly with finger tips.
- 5. Bake for 15 minutes. Set aside to cool, while making filling.
- 6. Pour orange juice over chopped apricots, mix and set aside.
- 7. In my cleaned processor bowl; I added the eggs and pulsed till lightly mixed. Add the sugar and pulse for about a minute. Blend in the vanilla.
- 8. In small bowl, mix together the flour, soda, coconut and salt. Now, mix this into the egg mixture, pulsing just until blended.
- 9. Add the pineapple and apricot mixture and stir just until thoroughly blended.
- 10. Now pour this over the crust and spread out evenly.
- 11. Bake for 30 to 35 minutes or until edges are golden and middle is set. Let cool thoroughly on cooling rack. You can then remove from pan and cut into square if using foil. Then drizzle with frosting. Or,you can leave in pan and frost.
- 12. Drizzle: Add melted butter, orange zest, extract - (if using) and one tablespoon of the orange juice to the powdered sugar. Stir to combine and add small amounts of remaining juice till desired consistence occurs. Drizzle over cooled bars and enjoy!!

- Preheat oven to 350 degrees F (175 degrees C).
- Cream flour, butter and brown sugar. Add eggs and vanilla; mix well. Press into a 9x13 inch pan.
- Bake for 20 minutes. Take out and spread preserves evenly then sprinkle with nuts. Score into bars, but leave in pan.
- Return to oven at 250 degrees F (120 degrees C) for up to 15 minutes. Cool on rack.

- Preheat oven to 400 degrees.
- 8 inched square cake pan, ungreased.
- Base: In a medium bowl, mix together flour, baking powder, and salt.
- In a large bowl beat butter and sugar until smooth and creamy. Beat in egg and vanilla until incorporated. Blend in flour mixture, just until a dough forms. Spread dough evenly in pan. Bake in preheated oven for 6 to 7 minutes, until lightly browned.
- Topping: Arrange apricots evenly over top of base. Sprinkle with sugar and cinnamon.
- Bake 10 to 12 minutes longer or until golden brown.Place pan on a wire rack to cool completely, then cut into squares.

APRICOT-PINEAPPLE DREAM
My aunt gave me this recipe ten years ago, when we were celebrating Christmas at her house. I have made it every year since then, and now my family considers it one of our traditions. The secret ingredient is baby food. This looks so pretty on the table. The color is fabulous. It's also great for Thanksgiving.

- Mix orange-flavored gelatin with pineapple in a small saucepan. Cook over low heat until gelatin is completely dissolved. Remove from heat and stir in sugar. Cool completely.
- In a medium mixing bowl, using a mixer on medium speed, beat gelatin mixture, baby food, cream cheese and whipped topping. Blend well. Stir in nuts. Spoon into serving bowl, cover, and refrigerate at least four hours.

I had all these apricots and cans of pineapple and since I was in the mood for making jelly and jam, I looked around the net and found this recipe. It is amazingly wonderful. My son-in-law fell in love with it.

Steps:
- Wash four 1/2 pint jars, lids and bands in hot soapy water, rinse well with warm water.
- Submerge in boiled water, off heat, until ready to use.
- Mix pineapple with syrup, apricots, and sugar in large pan.
- Bring to boil, stirring occasionally, reduce heat and simmer 10 minutes.
- Stir in gelatin and simmer 10 minutes longer, stirring occasionally.
- Skim off an foam with metal spoon.
- Ladle quickly into prepared jars, filling to within 1/8 inch of top.
- Wipe jar rims and threads with wet cloth.
- Cover jars with lids and screw bands on tightly.
- For water bath, place jars in boiling water for 10 minutes. Water should be 1-2 inches above jars.
- Allow to cool and check lids. They should be concave and not pop up when pressed in the center.
- Refrigerate after cooling if not using the water bath.

- 1. Cook apricots and raisins in a saucepan of water for 10 minutes. Drain.
- 2. In a bowl, cream butter, eggs, and sugar. Add lemon juice.
- 3. In a separate bowl, sift flour and baking powder. Add to creamed butter mixture.
