Nonstick cooking spray, for the baking dish
4 cups mixed berries (See Cook's Note)
1/4 cup sugar
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
One 15.25-ounce box vanilla cake mix
8 tablespoons unsalted butter, cut into cubes
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-inch square baking dish with nonstick cooking spray.
  • Combine the berries, sugar, cornstarch, lemon juice and vanilla in a medium bowl. Toss to coat the berries. Pour the mixture into the greased baking dish, then spread the cake mix over the top in an even layer. Scatter the butter cubes over the top. Cover the baking dish with aluminum foil and bake until the top is puffed and golden and the fruit is bubbling, about 40 minutes. Remove the foil and continue baking for 5 minutes more.
  • Let the cake cool slightly before scooping and serving with vanilla ice cream.

Whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cherry-pineapple dump cake: Dump the cherry pie filling and crushed pineapple into a 9-by-13-inch baking dish. Stir together. Sprinkle the cake mix over the top of the fruit. Slice the butter into tablespoons and distribute evenly over the surface of the cake mix.
  • For the peach dump cake: Dump the peaches into a 9-by-13-inch baking dish. Sprinkle the cake mix over the top of the fruit. Slice the butter into tablespoons and distribute evenly over the surface of the cake mix.
  • Bake until the tops are brown and bubbly, 45 minutes to 1 hour. Serve with whipped cream.

PINEAPPLE BLUEBERRY DUMP CAKE

  • Preheat the oven to 350 degrees F.
  • Pour the blueberry pie filling into a 9-by-13-inch baking dish and spread evenly to cover the bottom. Top with the fresh blueberries. Pour the crushed pineapple and its juices over the blueberries and spread to coat. Top evenly with the cake mix. 4 c huckleberries, if frozen partially thaw
2 Tbsp a.p. flour - to coat berries
1 pkg white or yellow cake mix (full size box)
20 oz 7 up

Steps:

  • 1. Moisten berries if necessary. Place in plastic bag with flour and shake gently to coat.
  • 2. Place berries in the bottom of a 10 inch round cook pot with a good fitting, oven proof lid.
  • 3. Add 1 box cake mix on top of berries. Spread evenly. Break up any lumps with a fork, but DO NOT STIR.
  • 4. Gently pour 7Up on top of cake mix. DO NOT STIR!
  • 5. Cover pot with lid. Bake at 350* for 30 minutes. Remove cover and bake approx. another 25-30 minutes.

1 box yellow cake mix
1/3 cup finely chopped walnuts
1/3 cup rolled oats
1 stick (8 tablespoons) unsalted butter, melted
Ice cream or whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with cooking spray or butter.
  • Put the berries in the prepared baking dish. Evenly distribute the cake mix over the berries. Sprinkle with the walnuts and oats. Evenly drizzle the butter over the entire dish.
  • Bake until firm and golden brown, about 55 minutes. Let sit 5 minutes. Serve with ice cream or whipped cream.

If you've ever spent a whole day picking enough berries for just one pie, I don't need to tell you that these berries deserve your most perfect pie crust! No huckleberries? Well, blueberries will work, just add an extra teaspoon of corn starch and please, use fresh ones!

1 tablespoon cornstarch or 1 tablespoon flour
1/2 cup sugar

Steps:

  • Line the pie plate with the pastry, fill with the huckleberries, dredged with corn starch.
  • Sprinkle with the sugar and a pinch of salt.
  • Moisten the rim of the lower crust with cold water and place the upper crust on top.
  • Be sure to perforate the upper crust so that the steam may escape.
  • Pinch the edges of the two crusts together and flute.

5 cups northwest wild blue huckleberries
1 1/2 cups sugar
5 tablespoons cornstarch
4 tablespoons tapioca
1 teaspoon grated lemon rind (fresh)
3 tablespoons butter

Steps:

  • Mix the above ingredients together with a spoon so that everything is well distributed;
  • pour into the bottom pie shell as it sets in the pie plate.
  • Dot the top of the mixture with 2 or 3 dabs of butter.
  • Top off with the second pie shell.
  • Once it is correctly positioned you should have a 1" overlap on the top crust so that it can be crimped with the bottom crust.
  • Crimp or pinch the two crusts together and make a decorative edge to seal the two piecrusts.
  • The pie can be refrigerated until you are ready to bake or baked immediately.
  • To bake, preheat your oven to 450 degrees.
  • Place the pie on the middle shelf of your oven and bake for 15 minutes then turn the temperature down to 350 degrees and continue baking for 30-40 minutes or until the filling starts to bubble over.
  • Once the pie looks done and the crust is a light golden brown, it should be done.
  • Take it out and let the pie cool on a cooling rack until it is ready to serve.

The garden huckleberry (Solanum melanocerasum) is not a true relative of the wild huckleberry or blueberry, but is instead a member of the same plant family as potatoes, tomatoes, eggplants and peppers. Like other nightshade relatives, the garden huckleberry's foliage should never be eaten. The fully ripe berries, however, are not only edible, but also incredibly delectable. 4 cups garden huckleberry
1 1/2 cups sugar
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 tablespoon butter
1 lemon, juice of
2 tablespoons cornstarch
2 pie crusts (either storebought or your own recipe)

Steps:

  • Preheat oven to 375°F.
  • Stem, wash and drain huckleberries.
  • Place berries in a heavy pot, cover with cold water and bring to a slow boil.
  • Cook until soft.
  • Drain; mash berries with a potato masher to break their skins.
  • Add sugar, nutmeg, salt, butter, lemon juice and cornstarch.
  • Cook for about five minutes, stirring constantly, until the mixture thickens.
  • Place pastry for bottom crust in pie pan.
  • Pour in the berry mixture and dot with butter.
  • Cover with top crust, crimping crust edges to seal and piercing top crust all over with a fork to allow steam to escape.
  • Bake for 45 minutes or until the crust is a light brown.
  • Cool.

2 cups huckleberries (fresh or frozen, unthawed(I used blueberries) or 2 cups blueberries (fresh or frozen, unthawed(I used blueberries)

1 teaspoon ground cinnamon

Steps:

  • Beat margarine and cream cheese at medium speed of an electric mixer until creamy; gradually 1 cup sugar, beating well. Add egg, and beat well.
  • Combine flour, baking powder, and salt; stir into margarine mixture. Stir in vanilla, then fold in berries.
  • Pour batter into a 9-inch round cake pan coated with cooking spray (I also lined bottom with parchment).
  • Combine 2 tablespoons sugar and cinnamon; sprinkle over batter.
  • Bake at 350F for 1 hour; cool on a wire rack.
