HALUSHKI RECIPE (TRADITIONAL UKRAINIAN DUMPLINGS)
This traditional Ukrainian halushki recipe consists of tender dumplings tossed with crispy bacon and sautéed mushrooms and onions. The epitome of Eastern European comfort food!

Steps:
- Prepare ingredients for the recipe.
- Place the flour and salt in a large bowl. Make a little well in the middle. Place whisked eggs, water, and melted butter into it. Using a fork, work the ingredients together to form the dough. Finish up combining the ingredients by hand until you get a smooth, even texture.
- Divide the dough into eight even pieces. On a floured surface, roll each piece into a long string. Dice each string into small pieces.
- At this point, you can either freeze the raw dough for later use or move onto the next step to cook them.
- Bring a pot of salted water to a boil. Toss in the raw dumplings and boil them until they float to the top.
- Gather the topping ingredients.
- Dice mushrooms and sauté them in a buttered skillet for about 5 minutes. Dice the onions and add them to the skillet, cooking them until softened. Season with salt and pepper.
- Stir in bacon pieces, sauté for 5 minutes.
- Place dumplings into a nonstick skillet and add in sautéed mixture and butter. Cook until they turn golden brown.
- Serve immediately and enjoy!

SLOVAK HALUSKY DUMPLINGS
Steps:
- Gather the ingredients.
- Cook bacon cubes in a large skillet over medium-high heat, until browned. If using onion, add it to skillet and fry mixture until bacon is well cooked and onions are transparent, or about 5 to 7 minutes. Set aside.
- Bring a large pot of salted water to a boil. Meanwhile, add chopped potatoes in a food processor and process until completely puréed.
- Add salt and flour into potato mixture a little at a time, processing after each addition. The batter is done when a spoon will stick straight up in the dough.
- Place a third of the thick batter onto a cutting board. Using a knife, scrape about 15 small bits of dough into boiling water.
- When they all float to the top, remove with a slotted spoon and place in a large colander to drain. Repeat process with all remaining batter on board, and remaining two thirds in food processor.
- Once all dumplings are cooked, add into large skillet with bacon and combine well. Serve immediately and garnish with chives, if using.

HALUSHKI AND DUMPLINGS
I got this from a German friend of mine about 10 years ago. It's different from the others posted as it uses dumplings instead of noodles and adds some smoked ham for a more protein rich meal. Very tasty! (time does not include chill time for dumpling dough)

- Mix flour, eggs and milk and season with salt & pepper; mix by hand until incorporated, making sure not to over mix.
- Place dough in refrigerator covered and let rest for 1 hour.
- Bring a large pot of salted water to a boil, cut penny sized dumplings into the water by hand and let boil for 5 minutes.
- Strain dumplings and set aside. Melt butter in a large skillet, add onions and cook until translucent, add cabbage and paprika and cook until tender. Toss with dumplings and smoked ham.

HALUSHKI WITH PAP'S DUMPLINGS

- Combine the flour, eggs, milk and some salt and pepper in a medium bowl. Mix by hand until incorporated, making sure not to overmix. Place in the refrigerator, covered, and let rest for 1 hour.

SLOVAK HALUSHKI WITH POTATO DUMPLINGS
This is an old family recipe and we use potato dumplings rather than noodles of other versions, It is a Great Lentin dish or just an all around comfort food.

- In large pot, boil 12 cups of lightly salted water. Cut bacon into very small pieces and put into large stockpot on medium heat. Cut cabbage in half and shred. Put into the stockpot with the bacon.Cut up onion into chunks and place in, also.Add Paprika,Season Salt,and black pepper. Stir often to prevent sticking or burning. Peel potatoes and shred into large bowl. Add flour aall little at a time, mixing at the same time. When all mixed, add egg. Mix thoroughly. Form into big ball and put onto cutting board. With knife, cut thin strips and drop into boiling water. When dumplings rise to the top, they are done. Continue doing this until all of ball is cut into dumplings and boiled. As they are cooked,set aside until cabbage and bacon is cooked. When Cabbage is tender and bacon is done, add dumplings, stir, and Serve!

TRADITIONAL SLOVAK HALUSKI
This has been in my family for generations coming from Czechoslovakia. Traditionally, it is mixed with goat cheese from Czechoslovakia but since it's not available here in the States, we use brick cheese or feta. We eat this as a main meal but can be served as a side. Serve as is or add kielbasa on the side or slice up kielbasa and mix it in with haluski! Serve with warm crusty bread.

- Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When bacon is cool, crumble and set aside.
- Place potatoes into a food processor and process until pureed, 2 to 3 minutes. Transfer to a bowl and stir in flour, eggs, baking powder, and salt to make a sticky dough. Set dough aside.
- Fill a large pot about half full of lightly salted water and bring to a boil. Ladle large spoonfuls of the sticky dough to a small cutting board and use a knife to chop the dough into tablespoon-size pieces; as you cut off a piece, drop it into the boiling water. Let the dumplings boil over medium heat until they float, 2 to 3 minutes. Remove dumplings with a slotted spoon to a large serving bowl.
- Sprinkle bacon crumbles and a handful of shredded brick cheese over each batch of dumplings; continue to make, boil, and transfer dumplings to the bowl, sprinkling each batch with bacon and brick cheese. When all dumplings are made, gently stir the haluski to mix all ingredients.

- boil, peel, and grate a large starchy potatoe.
- Combine with flour, egg, and salt and pepper to taste.
- Drop by 1/2 teaspoon into a large pot of boiling water.
- Dumplings are done when they float.
- Remove from pot and drain well.
- Empty water from pot and return dumplings to it.
- Sprinkle dumplings with dill weed then combine with cottage cheese (I prefer small curd but either works).
- Re-warm dish to eating temperature (cottage cheese will reduce temperature) and serve.
- Alternatively combine with boiled cabbage instead of cottage cheese (also very tasty).
HALUSHKY (POTATO DUMPLINGS) UKRAINE / RUSSIA
The is from "The Best of Ukrainian Cuisine". I haven't tried it yet. It differs from the halusky recipe in that it doesn't use farina. Times are guesstimates. If you don't have a meat grinder, you can grate the potatoes instead.

- Be sure to wash the potatoes before doing anything with them.
- Take the one uncooked, peeled potato. Grind in a meatgrinder.
- Cook the other potatoes in salted water. Drain, cool, peel and grind them also in the meat grinder.
- Combine cooked potatoes with fresh potato and egg.
- Brown finely chopped onion in oil. Combine with flour and stir. Season with salt and red pepper. Mix with the potatoes.
- Bring at least a quart of salted water to a simmmer. Drop in spoonfulls of the batter. Cook at a slow boil for 8-10 minutes. Remove with a slotted spoon to a colander. Do not overcrowd the cooking water.
- To serve, put on a plate and drizzle with butter. Pass with sour cream. It can also be served with fried mushrooms to go with meat dishes.
AMERICANIZED SLOVAK HALUSKI
I added a twist to our family traditional Slovak meal. This can be served as a side but we usually eat it as the main course. Usually, it's just potato dumplings with cheese and bacon but Americanized. Traditional Haluski has goat/sheep cheese from Czechoslovakia that is not available here in the States, so can be mixed with brick cheese or feta.

- For potato dumplings (Haluski):.
- In a medium bowl, mix flour, eggs, potato puree, baking powder, and salt together throughly, mixing it into a sticky dough. Set aside.
- Take a large pot, fill it a little over half full with water.
- Add a dash of salt to the water. Boil water on high heat.
- On medium heat in a skillet, fry up the bacon until crisp; remove bacon from the pan and allow it to drain on paper towels.
- Cool bacon and crumble.
- Keep bacon fat in the skillet for caramelizing onions and frying up dumplings.
- In the same skillet, caramelize chopped onions on low heat. This should take about 30 to 45 minutes, occasionally stirring. When they are done, drain onions in a strainer over a small glass bowl reserving bacon fat and the set aside. Keep the same skillet to fry the dumplings.
- In the meantime, on a small cutting board, ladle Haluski dough and with a knife, cut about 1 teaspoon sized pieces while holding the board over the boiling water; drop the dough pieces into the water. You might want to do this in batches; a ladle sized amount of dough pieces at a time.
- Let each small batch boil until dumplings are throughly cooked and floating to the top of the boiling water. (They sink when first dropped in). Repeat with another batch of dough until you've used it all.
- Strain dumplings out of the water and add them to a medium bowl to drain for a moment.
- Take each batch and add them to the skillet. Add a little bacon fat over the dumplings and fry on both sides on medium heat until brown.
- Repeat with the remaining batches of dough as they finish boiling.
- Place dumplings into a large serving bowl.
- Sprinkle bacon crumbles, two slices of cheese, a Tablespoon of caramelized onions at a time for each layer.
- Repeat the layering process as you finish cooking additional batches of dumplings - frying in the pan, layering into the large serving dish with bacon, onions and cheese until full batch is done (approximately four layers).
- When complete, take a large spoon and throughly mix Haluski with all of the other layers to incorporate all the ingredients thoroughly.
- Serve as is or add Kielbasa on the side, or slice up Kielbasa and mix it in with Haluski!
- Garnish with sprinkles of freshly chopped chives on top, add a dollop of sour cream to each serving and serve with a nice warm crusty bread!

- PREPARE POTATO DUMPLINGS:.
- In a large bowl, add mashed potatoes, eggs and blend thoroughly.
- Add enough flour with a little salt to knead into a soft pliable dough that will not stick.
- Make into rolls and slice in about 1 inch pieces.
- Drop dumpling slices into boiling water and boil about 12 minutes. To test for doneness, break one open with fork after you take out of boiling water.
- Drain in small hole colander. (You can rinse if you prefer. I don't.).
- SAUTE CABBAGE AND ONIONS:.
- While boiling the dumplings, sautee (in large fry pan )butter, cabbage and onions until golden brown.
- Add drained dumplings to fry pan and fry a little longer. Mix it all well while frying but don't overdo so dumplings stay together.
