EASY RUMAKI WITH PINEAPPLE



Easy Rumaki with Pineapple image

This combines the crunchiness of bacon and water chestnuts with the wonderful flavors of pineapple. We make it right before watching football games, but it doesn't last long.

24 (1 inch) cubes fresh pineapple
24 water chestnut slices
8 thick-cut bacon slices, cut crosswise into 3 pieces
24 toothpicks
½ cup low-fat sesame-ginger salad dressing
1 tablespoon chopped green onion, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line the bottom section of a broiler pan with aluminum foil, top with the broiler rack, and spray rack with cooking spray.
  • Place a water chestnut slice atop each pineapple cube; wrap each with 1 bacon slice, securing with a toothpick. Arrange wrapped pineapple on the prepared broiler rack.
  • Bake in the preheated oven for 7 minutes; turn and continue baking until bacon is almost crisp, about 8 more minutes. Brush rumaki with sesame-ginger dressing and continue baking until bacon is crisp, about 5 more minutes. Garnish rumaki with green onion.

1/2 cup thick teriyaki sauce
1 tablespoon minced fresh ginger
1 tablespoon sugar
1/2 teaspoon crushed red pepper flakes
1 dash kosher salt
3 cloves garlic, minced
2 green onions, sliced
Juice of 1/2 lemon
1 fresh pineapple
2 pounds jumbo shrimp, peeled and deveined
1 pound bacon, package sliced in half

Steps:

  • Preheat the oven to 400 degrees F. Set a roasting rack in a large baking pan.
  • To make the marinade, pour the teriyaki sauce in a bowl and then throw in the ginger, sugar, crushed red pepper, salt, garlic, green onions and lemon juice. Stir it around and set it aside.
  • Next, cut the pineapple into chunks by lopping off the top, slicing off the rind, cutting the pineapple into wedges, slicing off the hard inner core and then cutting the slices into chunks. Store half the chunks in the fridge for snacking.
  • Place a chunk of pineapple on top of a shrimp and then wrap the whole thing in one of the half-slices of bacon. Stick a skewer through the whole thing so that it holds the pineapple, shrimp and bacon securely, and lay it on the rack in the pan. Continue with the remaining ingredients. Brush each skewer generously with some of the marinade.
  • Roast the skewers for 10 minutes. Remove them from the oven and brush with a second coat of marinade. Return the pan to the oven and roast until the bacon is sizzling and the shrimp is cooked, about 15 minutes.
  • Serve them hot or at room temperature. Divine!

Steps:

  • Combine sugar and nutmeg in a small serving bowl and place it in the centre of a serving plate or small tray.

1 large egg
1/4 cup dry bread crumbs
1/8 teaspoon pepper
1/2 pound bulk pork sausage
1/2 pound ground beef
GLAZE:
1/4 cup packed brown sugar
1/4 cup ketchup
1/4 cup white vinegar
1/4 cup water
2 tablespoons Dijon-mayonnaise blend

Steps:

  • Drain pineapple, reserving juice. Place pineapple and 2 tablespoons juice in a large bowl (set the remaining juice aside for glaze). Add the egg, bread crumbs and pepper to pineapple. Crumble sausage and beef over mixture and mix lightly but thoroughly. Shape into 1-in. balls. , Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 450° for 12-15 minutes or until a thermometer reads 160°., Meanwhile, in a large skillet, combine glaze ingredients and reserved pineapple juice. Add meatballs. Steps:

  • Preheat oven to 375 degrees.
  • Cut the length of the bacon in half. Open and drain the pineapple. Wrap each chunk of pineapple with a piece of bacon and use a toothpick to keep it wrapped.
  • Place the wrap on a metal baking tray with the pineapple facing up. Sprinkle brown sugar over the top.

2 cups raw pecan halves
2 (8-ounce) packages reduced fat cream cheese (softened to room temperature)
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
Pinch cayenne pepper
1 (8-ounce) can crushed pineapple
1 small red bell pepper (finely chopped (about 1 cup))
1/4 cup minced green onions (plus additional for garnish)
Crackers ((our family loves Triscuits or Ritz))
Toasted baguette slices

Steps:

  • Toast the pecans: preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake until toasted and fragrant, about 8 to 10 minutes, stirring once halfway through. DO NOT WALK AWAY. Nuts love to burn at the last second. Let cool, then chop go for a medium chop, a little bit finer than rough chopped (but they certainly don't need to be microscopic pieces).
  • In a large mixing bowl, beat the cream cheese with the garlic powder, salt, and cayenne until smooth and combined.
  • By hand, stir in the pineapple, bell pepper, and green onion.
  • Add half of the chopped pecans.
  • Lay a large sheet of plastic wrap on the counter. Scrape the cheese pineapple mixture into the center in as globe-like of a mound as you can. It will not be a perfect sphere at this point.
  • Wrap the edges of the plastic around it to seal and encourage it to form a round ball. Place the wrapped cream cheese in a bowl and refrigerate for at least 1 hour or overnight.
  • When ready to serve, remove the chilled cheese ball from the refrigerator. Place the chopped pecans on a plate. (I find it's easiest to use a plate with edges that curve up a little. A pie dish works well too.) Unwrap the cheese ball and place it on the plate with the pecans, coating well. The cheese ball won't roll like a real ball. Gently lift and turn it, patting the pecans all over the outside. Carefully transfer it to a serving plate. Serve with crackers or baguette slices and a sprinkle of additional green onion for garnish.
