- In a bowl, whisk together the coconut milk, red curry paste, orange zest, and orange juice and reserve 1/2 cup of the mixture in a separate container (I SAVED 1 CUP AS THIS MADE A LOT OF MARINADE AND I USED MORE GREENS).
- In a ziplock bag, toss together the chicken breast chunks and half of the marinade from the bowl. Toss the fruit and the remaining marinade in another ziplock bag. Let the food marinate at room temperature for 15 to 30 minutes.
- Prepare a charcoal fire or heat a gas grill to medium-high, and oil the grates. Thread the chicken and fruit pieces onto separate skewers.
- Grill the skewered chicken for 3 to 4 minutes per side, turning once, or until the chicken is cooked through. Grill the fruit skewers for 2 minutes per side, turning once, or until you have visible grill marks. Remove the meat and fruit from the skewers and serve them over salad greens drizzled with the reserved marinade.

Steps:
- Peel the papaya, cut them in half, and scoop out and discard the seeds.
- Cut the flesh into ½ inch cubes and place in a bowl.
- Peel the mango.
- Stand the fruit, stem end up with a narrow side toward you.
- Position a sharp knife about 1 inch from the stem on one side and cut down the length of the fruit, just missing the large pit.
- Repeat on the other side of the pit.
- Cut the flesh into ½ inch cubes.
- Add to the bowl.
- Lay the pineapple on its side and cut shallow furrows in the flesh to remove the eyes.
- Cut the pineapple lengthwise into quarters, cut away tough core, and cut the flesh into ½ inch cubes.
- Add to the bowl.
- Pour the lime juice over the fruit; sprinkle with the mint, and turn gently to coat, then serve.
- The salad may be covered and refrigerated for up to 4 hours before serving.

Never in a million years would I have made this recipe had I not sampled it first -- I was surprised at the ingredient list, but the combination of flavors is delicious!!! - Peel and cut mango into cubes, discard seed.
- Dice pineapple, saved juice.
- All other ingredients can be diced in the food processor. Careful not to over "pulse" to too fine a texture.
- Combine all ingredients and let sit for one hour or more before serving.
- Serve with tortilla chips.

PINEAPPLE AND MANGO SPICY SALAD
OK, this was a bit of an invention yesterday. I had a very ripe mango and a very ripe half pineapple I didn't know what do do with. I wasn't in the mood for a normal fruit salad, so I thought I'd spice things up a little bit. This is what I created, and I served it yesterday with simple grilled salmon and new potatoes. Today, the leftovers have been used in a lunchtime salad. The flavours meld together more the longer you can let it stand (covered, in the fridge). I had some good-quality packet shredded coconut to hand, but it would be better with fresh, if you can get it.
