1 package (8 ounces) cream cheese, softened
1 can (8 ounces) crushed pineapple, well drained
2-1/2 cups sweetened shredded coconut

Steps:

  • In a small bowl, beat cream cheese and pineapple until combined. Cover and refrigerate for 30 minutes. , Roll into 1-in. balls; roll in coconut. Refrigerate for 6 hours or overnight.

1 cup pecans or walnuts
1 cup unbleached all-purpose flour
1/4 teaspoon salt
4 ounces (1 stick) unsalted butter
1 1/4 ounces granulated sugar
3/4 teaspoon vanilla extract
3/4 cup confectioners' sugar

Steps:

  • Preheat the oven 325 degrees F. Line two large baking sheets with parchment paper.
  • Place the nuts in the bowl of a food processor, and process until finely ground or the texture of coarse cornmeal, 10 to 15 seconds. Transfer to a large bowl, and stir in the flour and salt. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and granulated sugar until light and fluffy, 3 to 6 minutes. Beat in the vanilla, then reduce the speed to low and slowly mix in the flour mixture until combined, about 30 seconds. Roll the dough into balls (about 24 dough balls) and place about 1 1/2-inches apart on the prepared baking sheets. Bake until lightly golden and the bottoms begin to brown, 18 minutes.
  • Cool the cookies on the baking sheet for 20 minutes. Roll the cookies in the confectioners' sugar just before serving.

398 mL canned crushed pineapple, (very well drained)
8 ounces cream cheese, (softened)
2 cups unsweetened fine desiccated coconut
1/2 cup graham crumbs
3 ounce packet pineapple jello

Steps:

  • Add the room temperature cream cheese to a large bowl. I like to use a mixer to beat the cream cheese. This will help to loosen it up and avoid any lumps of cream cheese in the finished product.
  • Next, add in the pineapple, one cup of the coconut, the graham crumbs, and the packet of pineapple jello. Just toss the powder into the bowl with the other ingredients. You do not need to prepare the jello first.
  • Mix the ingredients well until thoroughly combined.
  • Place bowl in fridge for one hour.
  • Once ready, portion mixture into tablespoons and roll into balls. Roll ball into remaining coconut.
  • Place finished Pineapple Christmas Balls into a food-safe container. Keep refrigerated.

1 cup plus 2 tablespoons unsalted butter, softened
1/2 cup plus 2 cups confectioners' sugar, divided
1-1/2 teaspoons almond extract
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup unsalted cashews
1 cup macadamia nuts
1 cup pecan halves

Steps:

  • Preheat oven to 375°. Cream butter and 1/2 cup confectioners' sugar until light and fluffy. Beat in extract. In another bowl, whisk flour, salt and cinnamon; gradually beat into creamed mixture. Pulse nuts in a food processor until finely ground. Mix nuts into dough., Shape into 1-in. balls. Place 1 in. apart on parchment-lined baking sheets. Bake until golden brown, 8-10 minutes. Cool on pans 10 minutes., Place remaining confectioners' sugar in a small bowl. Roll slightly cooled cookies in sugar; return cookies to wire racks to cool completely. Roll cookies in sugar again just before serving.

1 cup butter
½ cup white sugar
1 tablespoon vanilla extract
2 cups sifted all-purpose flour
¾ teaspoon salt
1 cup chopped pecans
¾ cup sifted confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C.) Lightly butter 2 baking sheets, or line with parchment paper.
  • Cream the butter, sugar, and vanilla until light and fluffy. Sift together the flour and salt; mix into the butter mixture. Stir in the pecans. Dust your hands with a little of the confectioners' sugar and roll the dough into 1 inch balls.
  • Place 2 inches apart on the baking sheets and bake for 25 minutes or just until brown. Put on racks to cool for 15 minutes, then roll in the confectioners sugar.

Steps:

  • When draining the pineapple, use a fine strainer to push as much juice out as possible. A reviewer has stated this makes the mixture a bit more firm and easier to work with.
  • In a small bowl, beat cream cheese and pineapple.
  • Mix well.
  • Cover and refrigerate for 30 minutes.
  • Roll mixture into 1-inch balls.
  • Roll in coconut.
  • Refrigerate for 6 hours or overnight.

8 cups Goldfish fudge brownie grahams (about 24 ounces), divided
1 cup butter, softened
1 cup Nutella
1/2 cup Biscoff creamy cookie spread
3 cups plus 2 tablespoons confectioners' sugar, divided
8 pretzel rods, halved

Steps:

  • Pulse 1 cup grahams in a food processor until fine crumbs form. In a large bowl, beat butter, Nutella, cookie spread and 3 cups confectioners' sugar until smooth; stir in crumbs., Mold 1/4 cup dough around a pretzel rod in a cone shape to within 1 in. of top; place on a waxed paper-lined baking sheet. Starting at the bottom, insert tail ends of Goldfish grahams, flat side up, into dough to resemble a pine cone, trimming tails of fish as needed near the top. Using kitchen scissors, cut off tip of pretzel; place a small amount of dough on top of pretzel. Repeat with remaining dough and pretzels., Dust pine cones with remaining confectioners' sugar. Store in an airtight container in the refrigerator.
