- Combine the cream cheese, mayonnaise, yogurt, shredded cheddar, pimientos, garlic powder, onion powder, and paprika in a mixing bowl and stir until mixed. Add the shredded chicken and stir with a fork until well combined. Sprinkle on salt and black pepper, to taste.

- Place the finely shredded chicken (see notes below) in a large bowl with the remaining ingredients. Stir until very well combined.
- Taste and add more salt or pepper, if desired.
- I like to chill mine for at least 30 minutes prior to serving. Serve with fresh cut veggies, crackers, or on sandwiches! However you please! Enjoy!

Steps:
- Place chicken breasts in large 11x14 , greased baking dish, and sprinkle with seasoned salt, and pepper.
- Melt margarine in large skillet and saute celery, onion, and bell pepper.
- Add pimentos, rice, soups, and milk, and water chestnuts, and mix well.
- Pour mixture over chicken breasts.
- Cook chicken covered at 325 degrees for 1 hour.
- Uncover and cook another 10 minutes.
- Remove from oven and sprinkle cheese over top of casserole, and bake for 5 minutes.

- Place a rack at the highest setting in the oven. Place the pepper halves on a baking sheet and place them directly under the broiler. Broil until the skin has blackened. Place the pepper in a bowl and cover with plastic wrap. Allow to sit for fifteen minutes. Remove from the bowl and rub off the blackened skin.
- Place the cheddar cheese, cream cheese, Worcestershire sauce, and cayenne in a bowl. Dice the roasted pepper and place it into the bowl as well. Add two tablespoons of the mayonnaise and stir to combine. If you would like for it to have a looser texture, add the remaining two tablespoons of mayonnaise.
- Stir the chicken into the pimento cheese. Serve immediately or store in the refrigerator until ready to serve.
